Poured from 22 ounce bottle into a tulip, using standard vigor.

A - DDB pours a rich, somewhat ruddy orange, showing abundant carbonation.
The head is an inch high, tight and fluffy, and khaki-colored. It recedes in under a minute, and leaves little to no lacing on the glass.

S - Your typical offenders from Bavarian Wheat Yeast strains : Bubblegum, banana, and clove, as expected. Hints of Munich malt toastiness and molasses, as well as cinnamon and light citrus. When cold, the ABV is dangerously well-hidden, as it warms the alcohol becomes more apparent, but doesn't invade the sinuses either.

T - More bubblegum, spicebox, and a slight earthy note on the back end that must be the Spelt, seeing as it reminds me of a wheat-malt base, but with a richer underlying flavor. Hops are an afterthought here, which is good, since they aren't a prevalent part of the style. Again, the booze is well-hidden, aside from the warmth currently spreading through my belly and veins. Delicious.

M- Full, rich, and silky, DDB washes across the tongue like a wave of malty knuckle-sandwiches. The carbonation plays a tiny part in the mouthfeel, serving only to balance out the rich malt flavors and yeast esters with the perfect touch of carbonic acids. This beer is one slick customer in this department.

O - On one hand, I'm glad this isn't a year-round offering from Deschutes, because I'd be too far gone to do anything if it was, as this is the most easy to drink Doppel I think I've ever had. On the OTHER hand, I'm really sad it isn't a year-round beer, because I'd love to have the chance to snag it when in need of some beer psychotherapy. It's perfectly balanced, rich where it should be, and yielding as well. As a homebrewer, this beer makes me feel like I should brew something with Spelt as well... Deschutes scores yet another goal in my book, and at only $10 and some change, there's absolutely no reason to pass it up, given the chance to try it. DO EET! Cheers.

The latest in Deschutes Conflux series lands it at the foothill of Germanic roots. The classic double bockbier of Bavaria is met with the avant garde nature of Pacific Northwest imagination. Collaborating with longtime friends at the Distelhauser brewery of Germany, their mind boggling results are something of a double dopplebock!

Yet its hazy camel hues highlight the rustic and traditional spelt "dinkel" grains for a bready-sweet upstart that hinges on rye. As the succulence of light caramel and simple syrups take on maple proportions, its fruity center rounds into place.

Bold apple, grape, plum and maraschino cherry take center stage while an undertow of hefeweizen transpires. Classic papaya and clove simmer underneath the massive cobbler-esque dissertlike taste just as its boozy spice rises to balance the malt.

Its long and savory finish keeps the taste malt-forward, however the peppery alcohol links up with herbal and citrus-type bitterness for a bite that's something akin to vodka. Full bodied, the beer's syrupy malts seep deeply into the mouth's tissue and is reluctant to release- making this decadent beer much more of a sipping session rather than for quick or mass consumption.

Interestingly, the more meladoidin-laden taste of bock is replaced here by those curiously charming hefeweizen flavors for interest and provocation.

22 ounce bottle into tulip glass, best before 6/17/2015. Pours slightly hazy deep ruby red/copper color with a 1-2 finger dense light khaki head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big raisin, plum, apple, lemon, orange, banana, clove, bubblegum, caramel, brown sugar, brown bread, toast, light herbal, light nuttiness, and yeast/toasted earthiness. Damn nice aromas with good balance and complexity of dark/bready malt and fruity/spicy yeast notes; with good strength. Taste of big raisin, plum, apple, lemon, orange, banana, clove, bubblegum, caramel, brown sugar, brown bread, toast, light herbal, light nuttiness, and yeast/toasted earthiness. Fair amount of earthy yeast spiciness on the finish; with lingering notes of raisin, plum, apple, lemon, orange, banana, clove, bubblegum, caramel, brown sugar, brown bread, toast, light nuttiness, and yeast/toasted earthiness on the finish for a good bit. Damn nice complexity and robustness of dark/bready malt and fruity/spicy yeast flavors; with an awesome malt/yeast balance and zero cloying sweetness after the finish. Light-medium carbonation and medium-full bodied; with a very smooth and fairly creamy/bready mouthfeel that is nice. Alcohol is very well hidden with only a slight warming lingering after the finish. Overall this is a damn nice weizen bock style. All around great complexity, robustness, and balance of dark/bready malt and fruity/spicy yeast flavors; and very smooth to sip on for the big ABV. A very enjoyable offering.

The name suggests it's a doppel bock, but the use of dinkel/spelt malt suggests it a weizenbock. A video on Deschutes' website identifies this as a weizenbock, so I'm reviewing as such.

BOTTLE: Best by 06/17/15. 10.7% ABV. 1 pint 6 fl oz brown glass, with a generic green label and a branded maroon pry-off pressure cap.

Served cold into a pilsner glass and allowed to warm over the course of consumption. Side-poured with standard vigor as no carbonation issues are anticipated. Expectations are high; I loved the first beer in the conflux series.

No bubble show forms as it's poured.

HEAD: Two fingers wide. Pale khaki colour. Nice plump supple complexion and an even, smooth consistency, with good creaminess and thickness. Soft-looking. Full and thick. Retention is excellent for a 10.70% beer - around 6-8 minutes. Leaves no lacing as it recedes.

BODY: Dark deep auburn-brown. Surprisingly, it's translucent and transparent. No yeast particulate or hop sediment is visible. I expected a darker body with more opacity and a more robust appearance. This isn't a great body for a doppelbock or weizenbock.

Appears well-carbonated. It's a decent appearance overall.

AROMA: Bubblebum dominates, with some subsidiary yeast banana. Definitely a wheat beer, but it does have some brown bread malts, caramel, and light syrup. I can see where this protein heavy spelt malt would be more suited to bread baking than beer making. I don't find the clove or citrus promised on the label.

No alcohol, overt hop notes, or off-notes are detectable.

Bubblegum isn't a great note to dominate, especially in a weizenbock. But the malts are lovely and I'm curious to try it. A pleasant overall aroma of average strength.

TASTE: Ample bubblegum is present alongside some phenols, light caramel, brown bread malts, and leavening wheat. Unfortunately, the bubblegum overpowers the more traditional bready notes - yeast triumphing over malts. Odd in a weizenbock. And isn't the whole idea behind this brew to showcase the bready dinkel malt? Why overshadow it with a cheap yeasty characteristic? Some of the other caramel-like malts feel syrupy and out of place. It's surprisingly sweet for a weizenbock, and I find myself waiting for some spicy clove to help balance it out, but it never comes. The citrus mentioned on the label never appears, but I think that a good thing. I do get a hint of plum, which feels out of place here - more Belgian than German. Caramel candied apples come to mind as I drink; I usually hate apple in beer.

Imbalanced in the sense that the bubblegum overpowers the rest of the flavour profile. Average depth, duration, and intensity of flavour. It's not a real complex or subtle brew. Lacks the delicacy and intricacy of superior beers in the style.

I'm not sure I like this one. The bubblegum is just too distracting, and I wish it were more malt-forward.

TEXTURE: Syrupy, thick, smooth, and wet. Overcarbonated. Luckily, it avoids the astringency usually associated with dinkelbiere. It's a full-bodied heavy feel for a weizenbock, and the syrupy feel doesn't work for it. It's nicely soft, though.

An okay companion to the taste. Doesn't feel custom-tailored to it. This mouthfeel doesn't elevate the beer.

OVERALL: I always applaud experimentation and the resurrection of lost or obscure beer styles, but this brew has a strange obsession with bubblegum, to the detriment of not only its balance, but its purported focus as well. Why brew with obscure spelt malt and then cover it up with phenolic yeasty bubblegum notes?

To its credit, though, it's quite drinkable for 10.70%, and it's definitely a meal in a glass. But the bubblegum is fatiguing, and I quickly tire of it. I wouldn't buy this again and it doesn't even come close to the quality of Conflux #1. I wouldn't recommend it to friends or trade partners.

Poured from a 22 oz. bottle into a Surly Darkness chalice. Label says best by 06/17/15.

Appearance: Pours a dark and hazy brownish amber with a lot of bubbles. About one finger of off white head which fades away rather quickly.

Smell: A bready, fruity, and spicy malt forward aroma with hints of dried fruit and spices. Toasted malts with hints of biscuit, wheat, grains, straw, caramel, and the Spelt yeast. Light hints of chocolate roast and smoke. Spice hints of clove and slight cinnamon. Big hints of bubblegum. Fruit esters of banana, apple, pear, and citrus orange. Sweet hints of molasses sugar. Hops are pretty subtle. A very solid smell.

Taste: Like the smell, a toasty, fruity, and spicy German style taste with notes of fruit and spice. Toasted malts with bready notes of wheat, biscuit, grains, straw, caramel, and Spelt yeast along with some light notes of chocolate and smoke. Spicy notes of clove and cinnamon. Big taste of fruit with notes of bananas, apple, pear, orange, and lemon. Good notes of bubblegum. Sweet taste of molasses. Light background presence of earthy hops. A very solid taste.

Mouthfeel: Full bodied with a moderate amount of carbonation. Creamy, silky, and juicy. Alcohol heat is felt but it isn’t excessive.

Overall: A very good twist on a German wheat bock. Good mix of fruit esters and spices.

22oz (best by 6/17/2015) into a tulip. Pours a hazy amber w/ a thin off-white head.

Aroma is fruity, malt, sweet, bready. A touch floral. Kind of like a sweet Marzen.

Taste follows nose. Strongly sweet, fruity, bready. Just shy of syrupy. Some bittering hops to balance things out, barely.

Mouthfeel is thick and chewy. Tons of caramel and crystal malt here. Carbonation isn't sufficient to cut the heavy malt.

Overall a big strong malt bomb of a beer. Enjoyable enough, but probably not something I would seek out again.

The body looks copperish and slightly hazy and has a decent, thin yet creamy head. Bubblegum and banana aromas dominate the smell. Sweet and rich flavors, infused with a booze and date fruitiness. Heavy bodied; coarse and semi-dry finish.

What to make of a beer with a label of doppelbock yet calls it an ale, and that explains dinkel (or spelt) is used (so why not call this a weizenbock), but then it's supposedly an ale!? Well, it does profile the banana and clove characteristics mentioned on the label. It is big and boozy like a very thick doppelbock. Still, a bit too treacly and syrupy. An interesting take on a double ale/lager, but not something I would readily go back to.

Additional notes: the Deschutes web site calls this an imperial spelt beer and notes that a 'Traditional German Ale Yeast' was used.

A hint of old ripe fruit on the nose joined by rich, dark bread.
Slightly hazed deep amber under a 2” finely bubbled lightly tan tinted foam cap. The head quickly descends but rouses easily, produces fine lace and leaves a suggestion of legs.
An extremely creamy rich texture carries an interesting array of malt flavors through the mouth with a distinctive spelt spicyness, grainy malt, bread, and a faint suspicion of bacon.
Medium to medium full body suggests liquid bread.
