2015 vintage - served on draft, in a small wide glass

clear, dark amber in color, not really any head. very boozy aroma - fairly fruity. taste is fairly sweet, but doesn't quite have as much complexity as I hoped. medium bodied, a bit sticky, Overall, I was hoping for more dark malt flavor - quite a bit lighter than I expected.

2015 vintage poured from bottle into a chalice glass

Appearance – The beer pours a deep orange-copper color with a thick off white head. The head has a fantastic level of retention, very slowly fading over time to leave a bit of spider web lace on the sides of the chalice.

Smell – The aroma is of a dark fruit smell of cherry, plum, and raisin along with a whole lot of a caramel and molasses sugar smell. Along with these smells comes some great aromas of a spicy smell with the spice being a mix of clove and coriander and with some yeast bringing some banana and a little bit of grass along with it. Other aromas of vanilla and some lighter fruits of apple and pear are also there as well and mix with the rest and a bit of oakiness and booziness to produce a fruity and warming sorta wine like smell overall.

Taste – The taste begins with a with a nice fruity taste mainly of lighter fruits with a good deal of apple, pear, and peach, but containing some darker fruit flavors of plum and cherry as well. There are nice hints of vanilla and caramel sweetness which persist and complement the fruity tastes very well. These tastes remain throughout the brew, increasing in the middle of the taste and fading just ever so slightly at the end. Toward the middle of the taste some light yeasty and spice flavors of clove and coriander as well as a little bit of banana develop on the tongue. An oaky French wine taste develops on the tongue as the flavors progress further, matching the fruity and spice flavors very nicely. In the end, the booziness increases a bit and with the nice fruity and wine like characteristics of the brew, it leaves one with a sweeter and crisp flavor to linger on the tongue.

Mouthfeel – The body of the beer is slightly light for a quad of 10.8 % with a carbonation level that is on the slightly higher side. The thin body was fantastic for the fruity and wine like characteristics of the brew with the higher carbonation giving a nice effervescent feel. Overall very well done.

Overall – This beer really rocks!!!! I am not sure I would consider it a quad, as its flavor (at least to me) was a bit more on the triple side of things with some hints of quad mixed within. Any which way you slice it however, this was a very nice brew and a very dangerously easy drinking brew overall.

Poured into snifter from wax sealed bomber. Clear golden amber, topped with thin head with little to no retention. Aroma is red wine and brett. Taste is buttery, quickly fading to tart fruit and spice. Body is very light, not what I would expect from a quad. Admittedly, I am not a sours fan. After initially kicking myself for not reading the barrels used in aging...I am pleasantly surprised with this bottle. Would I spend the money again on a wine barrel aged beer, not on your life. I however was able to drink the bottle, and not dump it down the drain.

Pours a finger of head that quickly disappeared on a hazy straw body.
The aroma is lots of ripe fruit: plum, apricot and spices.
The taste is malt background with lots of fruit sweetness to the end.
The texture is softer.
It's really nice and fruity.

Looks great, if a little hazy. Brilliant lazy copper.

Aromas of peach, pineapple, pomegranate molasses, and olives.

This beer tastes like a Kalamata olive with the pit still in it. Tannic, vingegaric, intense, overbearing, and not pleasant. Oily in a rancid way, if only to characterize everything I just said.

Feels a bit slimy, almost like an overly diacetyl vibe, and just ends up tasting really like a Kalamata olive.

Would rather use it as a salad dressing than something to directly imbibe. My teeth sort of hurt, like I just unwittingly bit down on some hidden olive pits.

Poured from a waxed 22 oz. bottle into a chalice. 2015 Bottle.

Appearance: Pours a deep amber orange with a moderate amount of bubbles. About a finger of off white head that quickly fades away.

Smell: A yeasty, fruity, and sweet Belgian Quad style aroma with good hints of fruit, red wine, and whiskey. Belgian yeast with good hints of clove and pepper spicing. Sweet hints of Belgian candied sugar and molasses. Barrel hints of red wine and rye whiskey along with some vanilla and oak. Big fruit hints of pomegranate and banana along with other fruit hints of raisin, fig, cherry, dates, berries, apple, pear, and orange. Malt hints of biscuit, caramel, and cracker. Light earthy hops. A really good complex aroma.

Taste: Like it smells, a yeasty, fruity, and sweet Belgian style taste with good notes of fruit, red wine, and rye whiskey. Upfront Belgian yeast with notes of pepper and clove. Sweet taste of molasses and Belgian candied sugar. Nice barrel notes of red wine, rye whiskey, oak, and vanilla. Fruit notes of pomegranate and banana along with some cherry, fig, raison, apple, pear, dates, berry, and orange. Malt notes of caramel and biscuit. Subtle earthy hops. A very good taste.

Mouthfeel: Medium bodied with a moderate amount of carbonation. Creamy, juicy, and fairly slick. Alcohol is hidden very well.

Overall: A really good spin on a Belgian style Quad. Good mix of fruit notes with a nice barrel presence of wine and whiskey.

22 ounce bottle into chalice, best before 5/8/2016. Pours slightly hazy/cloudy deep orange/copper color with a small dense off white head with solid retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big raisin, plum, fig, apricot, pear, apple, cherry, red grape, light banana, clove, pepper, vanilla, oak, light whiskey, honey, caramel, light toffee, and yeast/oak earthiness. Damn nice aromas with great complexity and balance of fruity/spicy yeast, oak barrel, and moderate candi sugar malt notes; with great strength. Taste of big raisin, plum, fig, apricot, pear, apple, cherry, red grape, light banana, clove, pepper, vanilla, oak, light whiskey, honey, caramel, light toffee, and yeast/oak earthiness. Fair amount of yeast/oak spiciness on the finish; with lingering notes of raisin, plum, fig, apricot, pear, apple, cherry, red grape, clove, pepper, oak, honey, caramel, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/spicy yeast, oak barrel, and moderate candi sugar malt flavors; with a great malt/oak/yeast spiciness balance and zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a very smooth and lightly slick/sticky mouthfeel that is nice. Alcohol is very well hidden with only a light-moderate warmth lingering after the finish. Overall this is an awesome partial barrel aged pale quadrupel style. All around great complexity, robustness, and balance of fruity/spicy yeast. oak barrel, and moderate candi sugar malt flavors; and vary smooth to sip on for the big ABV. A highly enjoyable offering.

Light Amber color, white head fades fast. Smells sweet Belgian yeast. The taste is defenately Belgian, it's sweet. It's very thin but the flavors do coat my mouth well.

Copper color with a haziness from the barrel aging. There's a fingernail of off white surrounding the rim and covering the majority of the top of the beer. Aroma is a complicated blend of pomegranate, oak, whiskey, and pinot noir. I was feeling good about guessing pinot noir as I did double check the Deschutes website. I'm not a wine guy and my guess is that had it been madeira or malbec I would have been hosed. The flavor is much more subtle than anticipated. The pomegranate gives the body a very light, crisp feel. It's remarkably smooth for the strength. The pinot noir notes are detectable. I get some warming sweetness from the whiskey barrels and oak provides dryness. Bravo!

Smells of bread dough and yeast with hints of whiskey. Thick creamy mouth-feel, taste is dominated by yeasty characteristics turns freakishly sweet through the mid-palate with some licorice notes. Not bad, but borderline over the top with the yeast flavors.

Solid attempt at the classic Belgian style. In my opinion, very few American brewers ever learn to master this style. This is by no means as good as the Belgian originals, but still worth the effort. To date, the best American made Quads I have had are from Boulevard and Ommegang. Unibroue (Canada) is also solid with this and similar styles.

A - Poured from bomber bottle into a nonic pint glass. Light copper color with a one inch white-tan head that quickly dissipates.

S - banana, clove, malt aromas, sour fruit, toffee, some oak as expected

T - caramel, toffee malt flavor with fruit tang/sour, warming alcohol sensation

M- Medium bodied, high carbonation

O - The fruit notes open up more as the Quad warmed; I wanted more Pom flavor and more from the aging barrels, but a good exploration of an enhanced quad. I'm curious about "not the Stoic" that seems to almost be more popular.

Interesting white wine and oak notes abound. I don't get a lot of rye whiskey but maybe that's the tartness and bite.

Little quad character in look or taste. More of an orange scented ale with Belgian yeast and white wine.

I liked NOT the Stoic a bunch more. Bought more of NOT, but won't get anymore of this

On tap at Albertsons. Pours out a medium golden with red tinge. Aroma is pit fruit, prunes. Taste comes on strong with fruit sweetness, sugar and a copious amount of alcohol warmth. Body seems a bit light, but flavor makes up for that shortcoming.

Honey colored, which Ive heard bothers some people, but looks tempting. White head with big bubbles doesn't last long, and that turns out to be the only thing that disappointed me. Aromas of honey, cherries, vanilla, grapes dominate the nose with a hint of spice. I taste peaches, honey, grapes, vanilla, oak, caramel, cloves, and just a hint of whiskey. Mesium-full body, but goes down dangerously easily.
If you want this beer to be just like the big-name Belgian quads (e.g. Abt 12) you'll be disappointed. If you're willing to let it just be itself, I think this is a phenomenal beer.

Poured into a snifter this beer is a semi clear slight amber orange with a foamy white inch thick quickly dissipating head. Smell of pomegranate, apple, cherry, caramel, white grape juice, and some sweet malt. Taste is oak, cherry, pomeganate, vanilla, dried fruit, figs, orange, bit of whiskey, caramel, sweet malt, apple, honey, grape juice, spice at the end with some nice warming alcohol. It has a moderate to full mouth feel with a medium body. Very complex and very well balanced with a nice overall sweet fruity taste backed up by heavier oak and malt characteristic. Best by date is 05/08/16, I'm having this one fresh (08/05/15) and then trying one aged on that date.

A: Caramel, light brown in color. Very cloudy, almost turbid.
S: Caramel, sweetness, dark fruit, some vanilla oak coming through
T: Caramel again upfront, sweet in the middle mouth with a bit of tropical and dark fruits
M: Medium mouthfeel, low carbonation. Coats the mouth and lingers for quite awhile
O: Solid quad, didn't blow me away but was very enjoyable.

22 ounce bottle poured into a Deschutes snifter

A: Dark orange, amber color with a white head that disappeared pretty fast, not a lot of carbonation, some lacing, very clear, doesn't look like other quads I've tried.

A: Definitely getting some oak from the barrels, sweet, like citrus sweet, some rye, doesn't smell like a quad, it's missing that Belgian yeast characteristic.

T: Slight Belgian yeast, leans more on the sweet caramel, fruit side, oak comes through pretty strong, rye, some bitterness in the middle, it has a peach, apricot sweetness, slight spice, clove, finishes dry.

M: A little light, more than what I was expecting.

O: Not impressed, never had a quad like this, it's light in color, it's missing big Belgian yeast characteristics I have had in other quads, missing dark fruit notes, no spicy notes. It's more on the light sweet side, not so much dark sweet side, I've had Not the Stoic, enjoyed that more. Probably won't pick up another bottle.

As the perversion of this recipe continues to sway in and out of the beer drinker's psyche, the latest version of The Stoic lands in the Deschutes brewer's lap with a thump of sweetness and a moderate fruit/spice blend.

Lighter than expected, the honey amber and peachy orange hues casts a short and creamy head to entice the nose with candied sweetness, apricot, nectarine, orange and date, with a tinge of clove. And once the beer layers upon the tongue, its simple sweetness is realized; slight of caramel, honey and maple.

Proceeding upon the middle palate, the full sweetness is realized in its candied, cola and toasty grain form. As elements of grilled fruitcake arise, its spicy rebuttal rises to meet the sweetness and fruitiness with white pepper, clove and vanilla all it's own.

Yielding to the beer's sweeter and more succulent side, a sweet tooth must be had to find great favor as the full bodied taste and long sweetness is labored on the finish. Warming but never hot, the beer trends port-like and hinting of mead and cola while an aftertaste of dried fruit and honey biscuit remain.

Very sweet candy like taste, doesn't take like a Quad. Very fruity... Grapes, plums, cherry, and pomegranate. Clove from the aroma comes through on the tongue. Candied sugar. Probably from the Belgian yeast. Wine notes are more subdued them in the aroma but the whiskey comes through more, but very dry finish.. Caramel, toffee, and oak in the hinted background. Thumbs up for sure!!!

Served in a pint glass (I'm not complaining, that's more beer).

Arrives with a quarter finger of oatmeal-colored head that quickly dissipates. Carbonation is visible and constant through a transparent, copper-colored body. 4.25

Floral, date and plum heavy, caramelly and sweet. Thick with a syrupy aroma. 4.25

Flavor is a continuation of the nose but with a surprising hop presence and a taste of jelly and bread. It's flavors are fruity, granola-like and caramelly with a touch of spice. There seem to be some barrel-qualities (oak and rye mostly) but they're light. 4

The floral presence is pronounced as is the malt and some sort of subtly spicy ingredient. If this beer is high ABV it's not drinking as such. 4

It's got a unique quad flavor that's pretty damn enjoyable although it takes some adjusting to.

Pours a clear orangish-amber color. Very small cream color head disappears almost instantly. No lacing whatsoever. I've never seen a Quad this light in color.

Aroma is quite vinous. Grapes and plums. Belgian esters. Clove, pear, caramel. Hints of whiskey around the edges.

Taste is fruity, sweet, and mildly boozy. Grapes, plums, cherry, and pomegranate. Clove from the aroma comes through on the tongue. Candied sugar. Belgian yeast. Wine notes are more subdued them in the aroma but the whiskey comes through more. Caramel, toffee, and oak.

Medium body with medium carbonation. A bit cloying on the tongue. Booziness lingers. Just a bit of tartness transitioning to dryness on the back end.

This has a best after date of May 2016. I think the age will definitely help. The booziness needs to be tamed a bit and some of the flavors are a bit sharp.

22 oz bomber, poured into an oversized wine glass at ~50 degrees F.

Appearance: Pours a brilliant, clear amber, forming no head, with no bubbles anywhere to be seen and thus, no lacing. At all.

Smell: Candi sugar and caramel, twined around a mixture of subtle fruits, dark and vinous.

Taste: Opens with sugars and caramel, with a supporting chorus of raisin and cherry, all of which remain strong through the entire tasting process. Some faint grape and berry whispers along the edges here and there, and there's a touch of herbs and spice as well. A mild tinge of hardwood, barely perceptible, meanders through the beer as well.

Mouthfeel: Slick, and on the lighter side of medium-bodied. This is also not as sticky as one might expect, given the style and the sweetness.

Overall: Not a bad example of the style - this is an 11% beer that completely disguises the ABV, and almost encourages quaffing quickly via the sweetness and the light body. That being said, I don't know that the various stages of barrel-aging mentioned on the label necessarily added much complexity not already found in other quad/BSDA examples. I don't regret this purchase by any stretch of the imagination, but at the same time, at this price point, I don't know that I would buy this beer again.

22 oz bomber poured into and oversized wine glass/goblet. Liquid comes out a bright blood orange with a lot of particles and sediment floating around in there. Glows a slightly lighter shade of the same color when held up to the light, but the light barley seeps through. Small fizzy white cap that goes away fairly quickly leaving just a ring around the edges of the glass. Not much in the way of lacing.

I initially didn't like the smell, but it grew on me quickly. Smells of vinous fruits, honey, oak, slight citrus and maybe a bit of a tart/acidic fruit like cranberry or pomegranate. A bit of sweet grain kicking around in the nose as well.

Taste is a step up, and slightly more representative of the style. Sweet maltiness comes out strong in the flavor, miixed in with the oak that has a strong presence and even a little bit of rye. Still theres's plenty of veinous fruits.

Mouthfeel is easily the best part of this beer. It's light bodied but it somehow works, because it still has a lingering flavor. Modest carbonation level the flavor cover all of your taste buds and it has a nice clean, semi-dry, bitter finish. Crazy drinkable, probably the most drinkable 11% beer I've had period.

Great beer overall. Maybe SLIGHTLY past it's prime, I slightly wish I had it this summer because it has a lot of refreshing qualities, but it's a good quad. I like it a lot. Thanks Geoff for the recommendation and trade, a solid brew that I'm really glad to say if've tried.

A: poured into a snifter to a clear and deep orange with a finger of dense white head that fades quickly to a small mat
S: smells of stone fruits, dark fruits, wine, oak, and caramel
T: taste is somewhat muted but notes of wine barrels, a little oak, some caramel, vanilla, pomegranate and some spicy yeast notes. swallow is a little alcohol, some phenols and spice, plus a lingering pomegranate and fruitiness. Rye whiskey becomes a little more apparent with each sip in a good way but the beer still has great complexity
M: fairly full in body with soft but present carbonation and a dry finish
O: This beer is one smooth sipper with great flavors that blend and play well together. It stood up well even though this one has a best before date instead of a best after date.
