Notes / Commercial Description:
This is the result of blending different lambics of different ages. The second fermentation takes place inside the bottles and therefore they are stored for minimum six months in constant temperature kept cellars.

Appearance: Cloudy dark yellow with a flimsy fishnet of a head. Not lookin' good.

Smell: The expected barnyard Brettanomyces character is front and center. Pine, lemon zest, and apricots add some complexity.

Taste: Delicious umami, but the acetic sourness is the most obvious flavor, to the point where it almost throws things off balance. Some of the apricot from the smell is present, as is a fresh, wheaty flavor.

Mouthfeel: Smooth and medium-light, with high carbonation. In spite of the sourness, the finish isn't puckering.

Overall: Quite enjoyable, although the appearance was a tad off-putting. Flavorful and fun, but with slightly too much sourness--other flavors could have come out, creating a rounder taste.

Pours golden amber with a large white head that thins out fairly quickly. No lacing.

Very nice grassy aroma. Musty basement, citrus, wet hay, woody, and typical farmy aroma but not so aggressive. Tart with a subtle sweetness in the background

Sour upfront finishing with funk and some sweetness. The sourness is a bit one-dimensional and not quite as dry as I'd like. Still refreshing. The beer might be a bit too young.

Biting but not too highly carbonated. Some bitterness and sweetness sticks around in the finish.

A nice gueuze, but a bit one dimensional and not quite dry and carbonated enough.

375ml bottled January 2013

Appearance: Pours a bright light golden orange color with 2 fingers of a slightly off white head. Body is lightly hazy with moderate carbonation streaming throughout the glass.

Smell: White grape, sour apple, herbal, wood, cheesy funk, hint of vinegar.

Taste: Sour lemon, white grape, strong lactic character, mild oak, bretty funk. The funky characteristics come out more as the beer warms

Mouthfeel: Light bodied with a soft mouthfeel. Medium fine carbonation. Finishes relatively dry but with a very slight residual sweetness.

Overall: This is a really good, under appreciated gueuze. 3F and Cantillon get a lot of hype (deservedly so), but this one is right up there with them.

This was a fairly young bottle. I'd be really interested to see what it does with some age.

This is my perfect Gueuze. The yeast profile in this is beer great. Its funky. Its like sheep and hay in a bottle. Its smells like the farmland of Belgium. It takes you there with your nose and tongue. its perfectly lactic and sour; great light fruit flavors; sour apple, white grapes...similar to a fine white wine or champagne. Its a perfect palette cleanser with something rich (beef tenderloin, hooks 15 year cheddar, and this are my deathbed meal) or just great to drink with anything. anytime. in excess...if I could...mmm. if not this, then Giradin 1882 or boon marriage parfait...mmm

Pours a golden orange with a nice, but brief, white head.

Smells of smoked lemons, citrus peels, spicy peppery earthy notes, serious sourness, and a hint of vinegar.

Dry tannic sour taste. Lemons, peppercorns, peach, lots of wood character.

Nice mouthfeel with a good carbonation, leaves an extremely dry and puckering aftertaste.

A delicious and very complex geuze, not the best I've ever had but certainly one of the most interesting and complex.
