Pretty sunset yellow-orange color with a quarter-inch head, copious bubbles and lots of floating yeasty bits. Bready malt, phenol, spice and a bit of tropical fruit on the nose. Mouthfeel is very nice, prickly and plush at the same time, but the phenol overpowers everything.

I wish I hadn't read the Alstrom Brothers review before I tasted this. "Hugely phenolic" is right, to the point of being reminiscent of old Band-aids. Not my thing.

From the corked, caged 2016 750 ml. bottle. Sampled on December 31, 2016.

Hazy orange-amber pour under a lasting white head with bits of sediment floating about.

The aroma has quite a bouquet of yeast, white bread, toast, herbs, and spices and perhaps a little juicy fruit. No alcohol bite for 9.5%.

The body is medium or better.

The taste brings out a more abundant spicy and peppery character with the fruitiness hidden just a little but still there. The finish is spicy. No alcohol in the flavor either. It was quite good but there are others out there that represent this style better.

750 ML cage and cork bottle. $ 11.99. Poured into Chimay Goblet and Dogfish Head's signature glass.

A slightly hazy golden/copper color. Major carbonation, gyser streaming bubbles create a very healthy, white foamy covering. This brew looks Alive, and it should. The foam is much like a good Latte, thick, creamy but more stable.

The aroma is very bold and funky, sour apples and cherries from the yeast, candy, golden wheat, sweet, tangy malt.

I'm going to go with mouthfeel first : Lively and Lush. This is why I love the golden Belgian styles, the mouthfeel is unbeatable! So much life! Crispy bite with a looong, lush, smooth finish. Slightly grainy and hoppy-bitter at the very end.

The flavor is really something to behold. Full of earthy, grainy flavor's. Dry, bitter hop with a very fruity/sour yeast that is very deep in complexity. Dry wheat, and earthy grains in the very crisp malt. I love the earthy, bitter and grainy tones from the Saison style. A very rustic but coloful flavor. The 9.5 %abv only adds a nice warming depth and further charecter. Pretty strong for a Saison, but ut is a "holiday" saison! So bring it on. I just love the sour/fruity/bitter hop finish, it all rolls into one and lingers for a long time. Just exceptional.

One thing about these amazing, classic Belgian style's is the "life span" of the activity after you pour it. The duration of quality in the glass just goes on and on. You can sip and relax and not worry about it getting flat or boring. It holds true to time, changing, improving as the liquid warms. The secondary bottle fermentation is key. The supet-lively yeast strains are just brilliant. The physical effects, the head buzz from the alcohol and marvelous brewing techniques are a thing a beauty.

Dupont is currently my top brewery.

I love Dupont's saison, and when I saw this I was excited. But after drinking it I was disappointed. It was not aromatic, hoppy or full of body. I was left with nasty taste from the alcohol.

Great looking pour with a nice pillow of white capping the hazy golden liquid. Aromas are many with citrus rind and some clove taking the forefront. Favor is different, with some sour notes and white wine coming through. it's that wine/champagne flavor that gets me down. Otherwise nice and malty, though pretty dry and slightly bitter finish.

375 mL corked and caged bottle purchased at the LCBO; best before Aug 2021 and served slightly chilled.

This highly effervescent brew pours a hazy medium gold colour, with more than two fingers of billowing, puffy white foam erupting from the surface. It fades off agonisingly slowly - even at the ten minute mark it's still a lumpy, frothy, gorgeous mess of foamy head and thick lacing. Grassy hay, herbal hops and vinous white grape notes are probably the most noticeable facets of the aroma, though there's also a quiet, grainy pale malt backbone; the yeast also imparts a range of orchard fruit and spicy qualities. I'm picking up some apple and pear, as well as clove, pepper, coriander and a faint hint of banana. Skunky at first, but it becomes unnoticeable after the glass has a few minutes to breathe.

A true classic; slightly funky. Clean, grainy, bready pale malts serve as a backdrop for the delicious flavours of juicy apple, pear, apricot and banana that follow. A few champagne-esque white grape notes, citrusy lemon and some candi sugar sweetness, with grassy hay and tons of spicy, phenolic yeast character in the latter half. Clove, pepper and coriander all come to mind, as the profile wraps itself up with a warming, yeasty, fruity finish that leaves the palate feeling off-dry. Medium-full in body, with lively carbonation that foams up in the mouth, leading to a light, fizzy, crisp mouthfeel that is surprisingly refreshing for its abv. One of the best, new (to me) strong Belgian ales I've tried in quite a while.

Final Grade: 4.34, an outstanding A grade. Avec Les Bons Vœux is an exquisitely satisfying sipper for the winter months that I must recommend highly to all BAs. Fairly reminiscent of Saison Dupont I'd say, but also considerably spicier, with much more alcohol warming - they're both excellent, but I think I like this one a bit more, to be honest. A fantastic brew that I will absolutely seek out and purchase again, even at the relatively steep price of $7 a bottle.

Picked up a 750 ml bottle from TW Arrowhead in mid-September for $10.99. Bottled in 2015 on Julian date 260.

Beer poured orange with a beautiful white head that has some very good hang time.

Nose has a barnyard funk base with hints of light fruits.

Taste is light citrus and funk, with some white pepper and some coriander spice in the finish.

Mouthfeel is awesome, so light and refreshing despite the high abv.

Overall this is an excellent saison that i would recommend to those who enjoy this style!

Bottle at home. Hazy orange pour with a tall white head with excellent retention. Floral aroma, with additional notes of honey, light tropical fruit, bananas, peaches, caramel, flowers. The taste follows the same notes, well-balanced between bitter and sweet, a hint of salt and farmhouse funk. Medium body, medium to high carbonation and a bitter-sweet aftertaste.

Pours a light golden color with a slight chill haze and a huge three finger head. Head lasts and lasts.

Smell is yeasts, grassyness and typical saison spice. There are also some light malts present that come in nicely on the end.

Flavor is close to the nose and typical of the style. I find the yeast and peppery flavors the most dominant,but that malt is there on the end.

Feel is lightish with high prickly carbonation. Finish is dry.

Not a bad example of the style, but I wouldn't call it a favorite. I've had this a few times now, and I jist feel there are better saisons available.

From the LCBO, nose is very skunky, which from what I've read seems to be a common issue with this batch. Flavourful brew that has nice fruity yeast esters, hints of bubble gum and a grassy hop finish, but whose skunkiness seems to overload the nose and palette. An unfortunate outcome from what would likely have been a delicious brew.

375ml green corked and caged bottle. This is still pretty darn young, with a bb date of 2021. Served cold in a nonic pint glass. I picked up another one of these that I'll let age in a cool dark place for a few months at least before trying for comparison's sake.

Classic saison look. Hazy golden colour. Big, billowing head of three-plus inches with good retention and lacing.

Sweet bready yeast. A bit of skunk aroma. Uh oh.

Flavour follows the nose with a lot of spicy white pepper yeast esters. Classic vinous saison malt profile with lovely hints of white wine, pear, green apple, etc. But it's difficult to get past the slight skunkiness, however subdued, and to separate it out from the similar spicy flavours that really ought to be present. Yet another example of why green bottles are a stupid waste.

Mouthfeel is classic saison. Lots of effervescent carbonation. Dry finish, but there's a lingering spicy yeast aftertaste too.

This is a great old-school Belgian saison, but it might not be worth the Christmas hype or the premium price. As with the regular Saison Dupont, the green bottles are a bit of a problem.

I am not sure whether I have opened this early as the expiration is 2021 but this was somewhat disappointing. A saison to be sure but too much carbonation and champagne like flavour and an odd after taste left me wanting something else. Worth a try but not one of my favourites.

375 ml green cork and cage bottle served into a chalice. Purchased from the LCBO for $7 CDN. Best before August 2021, so this might be a little early to crack this, but lets give a shot anyway.

Appearance - Pours an extremely hazy rich golden colored beer. Straw highlights and a thin layer of foam on top that dissipates quickly leaving a tiny frothy wisp of foam.

Smell - Slightly skunked (unlikely) or maybe that's just barnyard funk. There's also a champagne element, white wine and some earthiness. The yeast smell is very well hidden. Complex and hard to wrap your head around everything going on here.

Taste - Earthy to the point where the only beer that outdoes this is Orval.Middling bitterness and a subtle taste of honey. Candi sugar and the Belgian yeast shows up significantly more. White pepper and orchard fruits maybe. Every sip seems different.

Mouthfeel - Magical. Little bubbles explode on your tongue like rice krispies popping. Well carbonated and super dry finish. Outrageously smooth and booze is imperceptible except for a slow burn at the back of throat warning you this isn't for lightweights.

Overall - While Brasserie Dupont is synonymous with its well regarded saison, Avec Les Bons Voeux is just... something else. Nearly impossible (for amateurs like myself) to describe, sensational mouthfeel and a classic Belgian saison aroma and taste but amped up in complexity, this is a beer that every Beer Advocate has to try. Must pick up another couple bottles for aging purposes.

L - good white head but too much particles in suspension

S - Green apple and cork

T - All about phenol, spicy but not as peppery as I thought it'd be, balanced but the green apple taste kind of disturb me, deep taste nonetheless, it might go well with a heavy meal

F - Good carbonation, velvety mouthfeel

O - An okay beer but not that great, it's supposed to be aged but a year and a half is it too soon? I's a bit better when you let it open for a while so some more aging might do the trick. Also don't drink it on its own but with a heavy meal

Really great saison for the style, a benchmark to be measured against as the Dupont brewery goes. One of the best examples of a high alcohol Saison possible.

i would pick this beer if i must drink same beer for whole life. hazy yellow color with strong head retention. aroma is lemon, pepper and barnyard from yeasts. slight phenolic esters are detectable. taste is slightly sour, then slightly bitter. medium bodied. acidic feeling with lively carbonation. dangerously drinkable and superb refresher.

Pours a deep honey color, moderate that dissipates quickly. Aroma is classic for the style - loam, pale malt, peppercorn and Belgian yeast. Flavor is much of the same, with some added layers of orange peel / lemon juice, and good bit of spicey phenol on the backend. I felt the flavors blended very well, it has a classical Belgian profile with some nice punches of flavor without being too heavy or dragged down by the herb / spice notes at the end. Certainly makes a tad better for winter time indulgence.

Pours a gorgeous sunset hazy orange. Super fine carbonation with 1-2 fingers of fluffy carbonation that dissipated quickly.

Aroma is of generic citrus, Belgian yeast, and a bit of wet hay. Not very impressing.

Taste makes up for the rather boring smell. Underlying the sip is a champagne-like carbonation that I love. Citrus, spicy/ complex Belgian yeast, a touch of clove, and a bit of alcohol warmth. Enough sweetness through the middle of the sip to compliment the flavors, yet It dries out perfectly near the finish.

Overall, this is a phenomenal beer. Light and refreshing yet complex and refined. I see this pairing well with a variety of different food pairings. A nice overly ripe french cheese and spicy salami board would work perfect. It gets a 90.5/100.

I like the way Dupont focusses on perfecting the saison and distributes only a few ales to the U.S... and they are all good.
Avec Les Bons Voeux is an oft-reviewed ale and my notes/memory tell me this is my 6th bottle... 5 during the holidays.
So, I update/edit my review now, appropriately, on New Years Eve.

A pretty head with a straw body and orange tinge that all looks good in a wine glass. Aromatics are saison as is the taste: hoppy, but initially not as dry a profile as I'd expect from Dupont. Bons Voeux finishes slightly sweet and fruity, appropriate to the winter. As masters of the yeast, Dupont knows how the ale lingers and the hops come back for a final imprint. For me, they can sit on my tongue until eternity (not quite, but that would be nice.) For that reason, I find this ale a great pairing for a traditional New Years meal and a wide variety of appetizers and sharing. Even spicy foods go well with Avec, as recommended by "The Brewmaster's Table."

Best, Avec Les Bons Voeux offers a refreshing perspective during a season in which my Belgians are usually quads, dubbels and strong darks. Welcome in the New Year !

MJ's "Great Beers of Belgium" considerably reviews Dupont for almost 3 pages, but briefly introduces Avec as "lemony."
Also reviewed in Roger Protz' "300 More Beers To Try Before You Die," over half his page describes the Dupont family's dedication; but also offers one of the better descriptions of Avec.
Avec is reviewed in the "1001" and deserves to be listed there. What started as a nice "best wishes" to local customers is fast-becoming a global classic of refreshment in the Season of Light. We are talking about one of the great saisons of life.

3/15/19 I mark that I had Avec at least 4 times this "season" and view it as my three season go-to for dinner parties.
3/19/19 I go to The Beer Temple. I see a dozen Avec on the Shelves. They tell me it is no longer a seasonal. Spring is here!

I got this beer after asking for a recomendation to my local bartender. I had a horrible day a t work and he told me about this beer. It was a great choice. The flavor is really clean. The bottle is suposed to be shared but I was alone hehehe. Must keep it cold so you can enjoy it to the fullest

750ml bottle. 8/12/14 bottle date. Appearance: Light copper and slightly hazy, with a thick white head that lingers with nice lacing. Aroma: Earthy, grassy, peppery, citrus rind, and a white vinous character. Prototypical saison yeast characteristics with some bready malt undertones. Taste: High malt sweetness with clove and pear. Just a hint of spice and a moderate bitterness. Taste profile is very much like a tripel. Mouthfeel: Light/medium body with high carbonation and some alcohol warmth. Finish: Frutiness (pear) remains with some light breadiness. Overall: Feels like I’m drinking two different beers. The aroma is very much a saison, with spicy, peppery, earthy notes. When you taste the beer a lot of those characteristics disappear and a tripel emerges, with pear and clove prominent. Doesn’t have the typical pepper and dryness of a saison. Overall a very good beer.....whatever it is

A: Cloudy gold. Poured with a lot of foam, with medium long retention.
S: Banana, lemon, and clove. A little grainy.
T: Lemon. Hints of pineapple, pear, and fig. Very fruity. Moderate sourness. Little coriander. Medium low bitterness. Dry. Finish is long and bitter.
M: Medium body. Creamy.
O: Got the trademark saison dupont (regular and hoppy version) before, and they were not quite impressive and I think they are a bit overrated. However, this beer is far better than I expected. It's super fruity, flavorful, and dry. Excellent brew, too expensive though.

Bottle:
Beer pours cloudy yellow-white-gold, almost like a just starting to brown banana flesh. The cloudy impression extend above the body into the head where a fluffy whiteness billows and holds decently. Frothy lacing is created.

Nose is similar to many Belgian beers I've had, saisons to tripels, that aren't heavy on banana esters. Apple and pear fruity notes, maybe a little grape wine, and yes, some banana. There is a little barnhouse funk in there as well, but it's subtle to me.

Feel is prickly light, with quite a dry ending. The opening notes are fruity in nature, lightly sweet and fleeting. Fleshy fruits like pear and maybe a hint of strawberry (?). The typical woody to dry grass (hay) tastes follow up the opening notes, and the middle is dominated by feel: woody bitterness growing. The end is wood dry, but also strangely very lightly fruity - as if the opening tastes try to grab you one last time before the taste fades. With some warmth, the fruit sweetness lingers on the tongue lightly through the whole sip. Late in the taste a little filmy somewhat herbal (toward grassy) in nature started to build up that wasn't in the best interests of my palate.

Dry saisons like this are hit and miss for me. It's possible my mood affects me more on these beers than others, but this one wasn't working for me initially. Analysis allowed me to appreciate the beer, and even enjoy it a tad more. In the end, it wasn't a beer I would grab too often (if I could), but would give another chance - I'd like to try it on a warm summer day, for instance.

Drank from a 1 pint, 9.4 fl.oz./750ml/25.4 fl. oz. corked and caged bottle purchased at Stew Leonard's, Newington, CT
Served in a tulip

Phenomenal appearance. The hazy, straw yellow body was capped by a billowing, four-finger tall mass of rocky, off white foam. Outstanding retention. The head dropped ever so slowly, leaving thick large clumps of lacing in its wake. Definitely some of the most intense lacing I have ever seen.

The aroma was outstanding and super intense. Uber spicy. Clove and coriander dominated. This was a total spice bomb. Really citrusy. Orange peel was noticeable. Quite fruity. Moderately sweet. Touch of bubblegum. Yeasty and phenolic. Crisp, fresh, powdery and dry. Slightly musty. This displayed some Hefeweizen-like qualities but was still distinctly Belgian. All in all, really interesting and complex.

The flavor profile was very similar to the aroma but perhaps a bit more tart and dry. Super citrusy. Loads of bitter orange peel and lemon rind. Wheaty. There was a fresh, clean and dry Belgian yeastiness. Super spicy. Again, clove and coriander were most apparent. Perfect amount of bready malt sweetness. Speaking of sweetness, I would not be surprised if this contained a bit of candi sugar. The finish was super crisp and dry. Fairly lemony. Lemon pith was noticeable. Moderately sour. Touch of bitterness. Really clean and refreshing. Nicely balanced overall. The spice notes lingered after the swallow.

The mouthfeel was exceptional. Really light and frothy on the palate. Crisp and highly effervescent. The liquid contained a super fine yet sprightly, Champagne-like carbonation. Spot-on for the style.

Avec Les Bon Voeux is a hyper spiced, uber fruity, intensely yeasty and overall complex Belgian saison that, in my opinion, sets the benchmark for the style. Unlike the original Saison Dupont, which I find a bit too hoppy and dry, this one is really punchy and complex, yet amazingly well balanced. At around $11 a bottle, this might be one of the best valued beers on the market.
