Scores upped to all 5's. Just a flawless, world-class beer. The standard bearer of the style. Possibly my number one desert island beer. Just untouchable stuff.

2003-dated 750ml bottle
Pours a slightly hazy pale gold with a massive, pure white, meringue-like head that explodes every time new liquid is introduced to the glass. Cobweb-like lacing. The aroma is grassy and earthy, with honey, peppery spiciness, phenolics, musty yeast, oranges and apricots, and flour-like malt. The flavor begins phenolic, with some white pepper spiciness. Midway, the other flavors foretold in the aroma appear: honey, musty and funky yeast, citrus (orange peel and lemon zest), and bready malt. All of these ride atop a rustic, earthy backbone. Hints of leather, iron, and hops towards the end. The finish is extremely dry and completely washes the palate clean. Crisp and clean in body, with a fairly light mouthfeel and huge acidic undercurrent. This fresh bottle is a bit young and rough compared to some of the older bottles of this Ive had. Still one of the best examples of the saison style a classic brew.

I was able to try this at a local liquor store and was hooked on this saison ever since. The saison pours well with a good size head, has the cloudy unfiltered look you expect to find. The color is a nice golden color, overall it's a great easy drinking beer.

Have been enjoying this one for years, in fact it was one of my first Belgian beers over 20 years ago. Finally got around to reviewing it.
Poured into a New Belgium globe.
Pours a hazy gold with a huge, three fingered, frothy head. The stark white is very slow to drop, not sure if it ever will. Head is mainly made up of tiny bubbles when viewed through the side of the glass, on top, it looks like a very rocky meringue. Big, chunky lacing.
Aromas of lemons, lemon zest, peppery yeast. Earthy, with a touch of barnyard funk.
Flavors of peppery, signature yeast, tobacco, lemons and zest. Barnyard funk. Now I can name the difference between great American versions of saison and this classic, it's that touch of tobacco in the flavor profile. Good bite from the carbonation. Finish is short, with the lemony funk leaving its mark in the fade.
Mouthfeel is dry, not quite bone dry, with a spot on level of carbonation.
Overall, this is the saison that all others are measured. Enough said.
