Notes / Commercial Description:
Constellation Funk is an all-Brett(anomyces) fermented American IPA brewed with Pale malts and a touch of Crystal malt and a bunch of delectable Pacific Northwest hops, and then dry-hopped in the fermenter with heaping amounts of Apollo hops.

Had on tap at the Rehoboth brewpub.

Nice, fluffy head with a slightly cloudy golden body. Served in one of DFHs proprietary IPA glasses.

Nose - lots of tropical fruit, grassy sour/sweet notes (green apple skin? Hmm...), some complexity that I can't put my finger on (a dryness that's really hard to explain), tiny bit of a malty thing in the background. No bretty funk at all.

Taste - Extremely balanced, very fruity and slightly sweet, no bretty flavors either, clean all the way through, enough of a malty chew to compliment the hoppiness - which is really powerful but not overly bitter.

Would love to see this hit shelves, but with the all-Brett fermentation, it seems unlikely
