Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee, St. John's Wort and licorice root. We use whole-leaf Cascade and Fuggle hops, as well as pale, roasted and oatmeal grains.

A - Black and thick. A tan head that is thick and rocky. It leaves some good lace as it goes.
S - Chicory, coffee and roasted malt dominate. There is a hint of dark chocolate and a malty sweetness.
T/M - Medium bodied and well carbonated. The flavor is similar to the aroma with the dark chocolate having a stronger presence. Overall the flavor is good but nothing outstanding for a coffee stout.
D - This is a good session stout. There are no areas where I can knock it but it could be more memorable. Just a little bit above average.

The appearance was always a ruddy orange to brown color with a decent one finger white foamy head that dies within about a minute and left some nice foamy sticky lacing. The way it clings and how it seemed like an eternity before it actually started to even want to start to slide was beyond me - if anything I love the stubbornness of the lacing to stay where it is. The aroma - wow what didn’t thing have in it. There was a nice okay licorice showcasing a nice roasty coffee - like smell that seemed to be increasing in strength as it warms. The taste took all that I previously mentioned and smoothed things out eloquently with a nice touch of vanilla. On the palate, this one sits about a medium to heavy on the body when it’s fresh. I’ve noticed with some age with this, it does end up thinning out a bit. Overall, what an absolutely awesome American Stout
