This oak-aged gentle giant has been gaining popularity over the past few years and is now available year-round.

For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA.

After fementating the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month.

When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!

Served on draught at Dogfish head pub in Gaithersburg, MD. Beer is red, darkish, clear, tight head, white, two fingers, hops in aroma along with alcohol. Interesting flavor, high malt, lots of alcohol, bitterness not as much as I expected. Drinkability high, Low carbonation and lacing left on the glass. This was a pleasantly surprising beer. It smelled like and IPA and tasted like a strong ale. It was incredible. Find it.

12/01/05- Received via trade with Connecticutpoet.

Presentation- 12oz bottle with no freshness info to be found. Poured into my Duvel tulip.

Appearance- Off orange, approaching amber colored pour. Maybe a bit rust colored. Full inch head which subsides down to about 1/6 of an inch throughout the entire beer. Lacing is above average.

Smell- Hints of oaken brandy, so alcohol is in the nose. Orange-apricot scented hops and a mildly bready malt nose.

Taste- Huge oaken caramel malt flavored taste. Like chewing on kraft caramel squares. Hops have matured a bit I'm assuming because this beer is about a year old or so. Very mellow. Maybe a touch of pine sap in the hop flavor.

Mouthfeel- Very smooth and fairly creamy. A bit lower carbonation level. Fuller mouthfeel leaving mouth fairly bitter.

Drinkability- Digging the oak taste and texture on this beer. One of the few if not only oak IPA I've had. Seems fitted to have with a dessert. Quite tasty and different.

Bottle from Berts Growler Garage. Citrus lemony aroma, light amber body, small soapy head. Citrus follows into the flavor, sweet with minor sour elements, some tanginess. Malt profile comes forward, not hoppy at all. ABV hides in the background, becomes evident here and there. Interesting take on the IIPA style.

A: Poured amber brown in color with yellow highlights that had a thin bubbly head and left a little lacing sticking to the glass.

S: I did notice some piney hops in the aroma with grassy, caramel, and apricot notes but did have faint oak and a good malty presence.

T: the oak character was more apparent on the palate and had more boozy notes but stil had piney hops alongside grassy caramel accents.

M: the brew was medium in body with a moderate amount of carbonation which had a oaky, piney hoppy, sweet, and oily finish.

D: didn't really think and oaked aged IPA would work but it was tasy and drank quite well. Definitely have to seek out some more of these oak aged IPA's.

Pours a hazy, copper color. 1/4 inch head of an off-white color. Slight retention and slight lacing. Smells of sweet malt, alcohol, yeast, hint of pale malt, hint of roasted malt, and slight caramel malt. Fits the style of an American Double / Imperial IPA. Mouth feel is sharp and crisp, with an average carbonation level. Tastes of sweet malt, hops, slight alcohol, hint of pale malt, yeast, and a hint of roasted malt. Overall, decent appearance, good aroma, feel, body, and blend.

Poured in to duvel tulip.
Bottled on 3/1/10

A - Poured a deep amber colour; cloudy. One finger of thick cream coloured head.

S - Bitter grapefruit hops with sweet caramel malts; some vanilla in the background.

T - Bitter grapefruit hops with some pine that are very noticeable up front. A sweet caramel malt backbone. Bitter in the finish with some oak. Alcohol is present here, but not overwhelmingly so.

M - Medium body, lots of chew. Sort of silky. An odd but very welcome mouthfeel for a DIPA.

D - Remarkably drinkable for a 10% ABV beer.

I don't know about double IPA, by bottle reminded me a lot more of an American strong ale (which is blended into the beer with 90 min). There was a big, sweet malt presence, even a little syrupy and that's just too much for anything that's in the IPA family. Still, it was a pretty good beer, but like some of the dogfish beers i've tried, the flavor profile reminds me of a wine's flavor in that it's rich with very subtle flavors. I got random hints of wood (oak) out of this along with citrus hop notes. Worth a try, but a bit spendy.

Ok, this beer is dangerous. I'll start with drinkability b/c at %10 abv this is easy drinking, which could knock you for a loop easy. Alcohol is well hidden, a slight burn at the end. Slight.

Pours a rusty ruby, clean body topped with an off white, fluffy, stick head. Some chunk, but it leveled off to start sticking to the side.
Aroma is a blend of flowers, sappy hops, oak, caramel and young orange rind. What? I know, complicated.
I usually don't like oak aged IPAs all that well b/c the oak takes over. This one is an exception. The oak is there, but on the sides. More resin and smooth butteriness. Still clean, though. Nice English IPA hints, if not for the carbonation I would have assumed a live ale (maybe).
This is a very nice beer, drank at 52 (+/-) degrees F.

Appearance: pours a crystal clear orange / reddish color with a super big three finger head. For a high alcohol beer, I was quite surprised at the head retention.

Smell: easily detectable alcohol and strong piney hop bitterness.

Taste: this is one malty beer that has numerous strong flavor tones like grapefruit, alcohol, and pears. There are woody and peat tones lingering in the background. General sweetness is nicely balanced by strong piney bitterness.

Mouthfeel: smooth and mildly dry throughout. The aftertaste is loaded with alcohol, caramel sweetness, grapefruits and bitterness. Heavier in body.

Drinkability: down for me as this is a one beer per session brew. Very tasty but tends to overload tastebuds near the end. Very interesting beer.

The beer pours an amber color with a thick frothy offwhite head that slowly fades to lacing. The aroma is good. It has a nice, warm malty scent that boasts of pale and carapils malts along with an intensely bitter hop aroma. There is a slight oakey aroma that adds balance to this powerful brew. The taste is good as well. It has a smooth malty flavor that goes down slow and warm and finishes bitter and a bit sweet. It has a rich malt flavor as well as their traditional continually hopped taste. It's unique from anything I've ever tried. The oak aging provides a buffer from the high alcohol and adds a nice balance to the taste. The mouthfeel is fine. It is a full bodied beer with adequate carbonation. This is a tastey beer, but not the best Dogfish Head offers. I like the concept, but the 120 IPA is better. Still, this is a good drinking beer, at a slow pace.

My Hop Wallop was a dud bottle, so Burton Baton will be taking its place as my second review tonight. A big thanks to Stan at Lone Hill Liquor for pulling this from the back for me. On to the beer:

It sure looks like a DIPA; sturdy head, deep orange glow in the body. The aroma is pretty big on oak and fruity esters. Nope, no complaints so far. The taste....nothing explosive or amazing, but there's a smoothness to it that makes it a delight to drink. Must be the aged IPA doing that. First sip immediately brings oak-aged hop juice to the converation. Then the hop bitterenss takes it down. Bitter and sweet, but more like sweet as in sweet and sour gummi worms. Interesting blend of flavors in this brew.

It's not that's it's "better" than the usual DIPA, but different in the way it has oak flavor and an aged IPA blended with a new one.

Review from 4/2010 notes. Poured into a Gulden Draak tulip. Pours a beautiful dark orange color with a nice fine white head. Aroma of sweet malt and pine and citrus hops. Flavor is bready malt, dark fruit and pine hops right up front, a malty hoppy middle and pine and citrus hop finish. Resembles a hopped up American barley wine. Moderate to heavy body with good mouth feel. High ABV, but complex enough to be great as a single glass. Begs to be aged. I will comply.

The beer pours an amber color with a white head. The aroma is piney, orange, oak and resiny hops. The flavor is resiny and piney hops with some orange notes. There is also some caramel malt to balance things out. Medium mouthfeel and medium carbonation.

This bottle was dated 8/13/10, so it's roughly five months old. It says it ages with the best of them so let's see. It pours a muddied dark amber in color with a one finger off white head, and little sediment. The aromas have certainly faded. There is virtually no hoppyness at all. It wreaks of sweet malt and that's all I can really pick up. The flavor is good but not what it is when it's fresh. It's a nice blend of hops and sweet malt. The hops have faded and it's sweeter than normal but it doesn't really take away too much. It's still pretty good. It tastes more like the Squall right now. It drinks like it's from one of their 750s. It's exceptionally smooth with little carbonation. Because the beer is pretty subdued, this is perfect. This beer is a very drinkable Imperial IPA. I highly recommend it.

A - Pours a clear reddish/brown golden in color, some carbonation, basically no head or lacing afterwards.

S - Scents of slight hops, sweet malts, citrus, grapes, and some spices.

T - The taste is sweet and slightly bitter, can taste the grapes. The alcohol content is hidden very well.

M - Medium body.

D - Very drinkable. This is a totally different DIPA than any that I have ever had in the past, kinda tastes like a Beligian Strong Dark Ale. I've never had a oaked aged DIPA, that could be the difference. Not hoppy at all, but very tasty, highly recommended.

Poured from a brown 12 oz. bottle. Has a pretty deep copper color with a 1/2 inch head. Smell has plenty of hops, a bit of pine to it. Taste starts off dry and very bitter, get smoother as the glass goes down. Some tropical fruits, pine, very dry. Alcohol is present throughout. Feels medium bodied in the mouth and overall, a pretty good beer, but not as good as I expected.

2008 version- this bottle had more than 1/2 a year on it so it's time for a review

bottle poured into a dogfish pint glass.

A- coming out of the bottle, burton baton pours a reddish amber color with a 1 finger head that comes and goes. Not very cloudy as i could see through the glass but traces of sediment can be seen. the head retention is great and thin sheets of lace cover the glass after drinking. This beer looks thick.

s- yikes, sweet malts and piney smelling hops come through and i get a hint of the oak coming from the wood. BB smells very sweet with a bit of vanilla and maple. overall a nice floral smell comes from the glass. very nice!

T- BB is very SWEET! i get some vanilla, maple syrup and toffee while the hops take a backseat but are still pretty noticable. the oak comes through at the end and there is a slight bit of alcohol creeping through.

M- BB is a little thick and sticky and the taste stays with you for a bit after sipping, with that said this DIPA goes down with ease. a medium body and nice carbonation. a slight difference from regular 90 minute.

D- at 10% BB doesent mess around but it remains a very drinkable ale. could probably toss back a few of these in a night but i would pay for it in the morning. This is a very interesting take on a DIPA and not a hopbomb like many other's. i'll be coming back to this one from time to time.

Appearance: A murky/dirty copper colored beer poured into a Hommel snifter. Decent head forms and retains fairly well. Some lace is strewn about the glass.

Smell: Hops, tropical fruit, some earthy/woodsy notes as well. Impressive and strong aroma.

Taste: Intensely bitter, but in the best possible sense. A gauntlet of hop oil flavor, pineapple, grapefruit, pine. The wood aging adds a depth and complexity to the beer, with a cigar box quality. Malt sweetness is tame at first, but eventually arrives to balance the hops. Indeed, a bit of alcohol becomes evident. This is one bad mutha.

Mouthfeel: Medium bodied, a good bite and lingering alcohol warmth and hop residuals. Almost drying but not quite reaching it.

Drinkability: An impressive double IPA with good character. Imagine the 90 minute, amped up a bit and aged like the Palo Santo Marron. A fabulous wood aged beer.

Pours with a frothy, tan colored head that is a mix between largish bubbles and creamy froth. The beer is a brilliantly clear, reddish copper color. As I work my way through my glass of this beer it leaves a nice layered Belgian lace pattern. The aroma is sticky sweet with redolent hop notes like grapefruit, pine, and some sharp spicy notes. There is a bit of hot alcohol which adds to the spicy aromatics, plus a light caramel character is here as well. As the beer warms up a spicy oak note begins to be noticeable and it is joined by a woody aromatic note too.

There is a nice creamy thick mouthfeel in this beer. It is sweet up front with an intense fruity character that is a mix of citrus and berries. The oak character is nicely in balance with the huge hop character; which is to say that the oak is quite subtle and is most noticeable in the finish as a soft, woody, slightly tannic note that is also astringent in a spicy oak kind of way. This beer is really quite smooth and drinkable.

The hop character is probably a bit muted when compared to a fresh sample, but it is still quite evident and really strikes a nice balance with the oak and malt right at this moment in time. The malt has notes of raisins, currants and a bit of caramel. I really like how the spicy oak notes, along with the hint of woody astringency, combine with the spicy and herbal hop notes. The two accentuate each other and form a melodic whole. There are some really nice fruity notes here as well; it is a nice mix of grapefruit, raisins, currants, and even some general berry-type notes thrown into the mix. Quite and enjoyable beer, and I hope to sample this one again.

Poured a deep hazy copper hue with a half finger foamy white head. There was decent retention and good lacing.

The smell featured a strong barley sweetness with a mild floral hop.

The taste was upfront barley malt with a nice smooth sweetness. Touches of heavy oak are detectable as well. Mild flowery hop.

The mouthfeel was full with a warming alcohol.

Overall a heavy hitting malty DIPA. Much maltier than I imagined it would be. Suprisingly drinkable though.

The skin of pomegranate fruit underlined by flashes of golden brass. Dust-like particles of yeast speckle the appearance but don't tarnish complexion or clarity. The beer is quite lucent, it absorbs the light and subsequently emits bright, incandescent tones. An erratic, sketch like head brushes parts of the surface and splatters eccentric patterns of lace.

This smells more like an American barleywine than American DIPA. Either way, both styles share a lot in common - notably a stupendous amount of hops. This seeps of pine and tropical fruits. It is sweet, sappy, and succulent. A dab of caramel malt, bready crackers, and vanilla-laden oak make minor impressions too. Overall, this is about as rich as beer can get!

Toasted bread smeared in honey and notes of melon, mango, cantaloupe, and grapefruit lead way as the most forward flavours - it kind of sounds like a healthy breakfast, no? Pine drenched hop cones, crisp bread crusts, butterscotch pudding, toffee wafers, a shot of Madagascar vanilla as well as a whole cast of tropically citric fruits also find place in the taste.

The mouthfeel is unexpectedly smooth. I had a couple of these aging in the cellar but with a lack of alcohol presence and an already velvety smooth texture, I doubt letting them sit will do any good. For a beer of 10% this allows some pretty hefty sized sips, nay, gulps actually. Maybe it's the blending or the oak aging, or some combination of the two, but this is untypically smooth of a high-gravity, heavily hopped American ale.

Although listed on BA as a DIPA it's actually (in my opinion) much more similar to an English Strong Ale. Speaking of which, for those who don't know, this is a 50/50 blend of oak-aged English Strong Ale and the brewery's flagship 90 Minute IPA. The blend uses just Glacier and Warrior, so I suppose it's whatever is in the 90 Minute that imparts so much of the passionfruit, melon, and cantaloupe flavour.

When I first had this beer I thought it was something contemplative, elegant, and complex. Tasting it now, nearly two years later, I don't find it nearly as intricate but still every bit as good as I remember. I'll have to yank those other bottles from the cellar because I don't think a 10% beer is capable of being any more quaffable than this is now.

12 oz. bottle,

A: Pours a light amber with a full white head into a snifter, great retention, some lacing.

S: Strong smell of mixed citrus, pine trees and oak.

T: Strong upfront hop character, heavy pine, citrus is mild. Oak character is evident, reminds me a bit of Firestone. Malt is heavy and lends a nice balance of caramel and husky grain.

M: Moutfeel is strong and full-bodied, nice full resin character from the hops.

D: Another quality beer from Dogfish Head, is it possible they make a bad beer, I don't think so, outstanding stuff.

12 Oz bottle sampled through the efforts of dirtylou and The No BS BIF.

Pours a clear dark amber colored ale with a heroic if short lived off white head.

Smell is sweet fruity and malty with more than a little scent of fig Newton’s. After a bit the scent gets to be somewhat spicy and full of citrus scents.

Taste is malty and well not much in the first sip. Not much here fairly fruity but where are the hops? Fair flavor of figs and some caramel but not really bitter at all. Disappointing.

Mouthfeel is OK.

This an OK drinkable beer but I am confused, shouldn't this have hops in it? Disappointing is the only word that fits this beer.

Poured from 12oz bottle into a pint glass.

Appearance: deep orange hue with a touch of haze and almost 2 fingers of frothy tan foam. Nice.

Smell: deep, rich, caramelly malt with a little bit of funky, citrusy hops coming through. It's a little spicy as well, which is an interesting component. I like it well enough.

Taste: deep and dank; it's in the same close family as american strong ales and american barleywines, though it is milder than those two. Murky strong malt combines with funky, somewhat sharp hops and plenty of bitterness to create a pretty tasty outcome.

Mouthfeel: big body with a nice level of carbonation. This one treads the line between creamy and silky; it works for me.

Overall: this is a tasty strong IPA, but it's not really exceptional for me. It seems pretty middle-of-the-road in its class.

12 oz single bottle purchased at Beers of the World in Rochester, NY. Poured from the bottle to a tulip. Enjoyed while listening to Phish- specifically, the 11/14/95 monster version of Stash- made for quite an enjoyable night.

Pours a dark orange, almost brown. Looks more like a barleywine than an IPA. Not much head, a little bit of lacing. Hazy.

Smells very piney, with brown sugar and a bit of citrus, probably grapefruit.

Great mix of tastes here. It's apparently a mix of 90 minute IPA and an oak-aged old ale. Tastes like a hoppy barleywine, really. Hops hit first- of the aforementioned pine and grapefruit variety. Sweet, caramel flavored malt hits next, with tons of vanilla and oak all over the place from the aging. A bit nutty, too.

Mouthfeel is good- very sticky, well carbonated.

An interesting beer from DFH. Well executed.
