Notes / Commercial Description:
For this beer, we use maple syrup from Red Brook Farm -- Sam's family farm in Western Massachusetts, peat-smoked barley, juniper berries and vanilla.

Immort is fermented with a blend of English and Belgian yeasts, then aged in the big oak tanks at the brewery.

The sweet and earthy flavors meld magnificently in the Immort Ale. But be warned, the ABV is 11%, so after one or two you may start feeling immortal (even though we promise you won't be).

Malty kinda sweet it's not boozy at all and very little carbonation. Kinda like a Barleywine but for some reason not quite there. Dogfish did a great job on describing and classifying this beer.

Hazy dark amber color with beige head. Aroma has lots of dried fruits like figs, dates, raisins, plums but also dark sugar and light booze. Taste is sugary, bittersweet and fruity. The bitterness is woody, herbal. Medium body and carbonation. It's a quite nice strong ale / barleywine, slightly boozy but not difficult to drink.

A: Dark brown, opaque with a beige head that disappeared as I drank the beer. Many particles in the beer as I emptied the entire bottle which had a lot of matter settled at the bottom after sitting in my basement for two years.


S: Raisin, cherry, vanilla and faint notes of peat, faint islay single malt (think Ardberg not Lagavulin), sweet sugary/maple syrup, vegetal, earthy, umami note I'd describe as overcooked collared greens that is actually quite off putting. I did not get in this aroma in the beer fresh. And often get this type of aroma with beers using maple, so I assume it is from that.

T: This beer actually does not have a ton of flavor. There is some maple syrup sweetness, and nutty and woody oak flavors, some sweet dried fruit notes like date as it warms up. A touch of bitterness on the finish.

M: Medium level of carbonation. Smooth and full bodied.

O: I did not love the aroma on this one, but the flavor profile has some redeeming qualities. This is my first time experimenting with cellaring this beer, and the experiment did not live up my expectations unfortunately.

Muddy opaque amber brown with a minimal khaki blanket dying to a fuzzy ring.

Smell is stale biscuit, toffee and caramel with some earthy, peaty wood, a hint of old cheese, and Band-Aids.

Taste is toffee, caramel, vanilla, biscuit, sweet honey and cherry-spiked prune. I also get the occasional faint hint of Band-Aids, as well as Cheez-Its, oddly enough. Thankfully, this is not a constant theme, and overall, Immort Ale is a marked improvement on the abomination that was Higher Math. A nice faint hint of roasty elements emerge as it warms.

The medium-full body with a thick but nice carbonation and chewy dry, almost sticky finish is the best part of this odd beer. Here's Dogfish Head doing more weird shit on a large scale just for the sake of being weird...while wasting way too many resources.

Pours dark brown with thick head and sticky lacing. Smells of sweet molasses and barley with some minor smoke and vanilla. The taste follows the nose with deep smokey sweet malt flavors and hints of bourbon and a vanilla undertone. Drinking this one at room temp, very smooth and clean, zero bite just a clean rich mouthful. Outstanding.

This was poured into a snifter. The appearance was a ruddy/burnt brown color with a thin white to off white foamy head that dissipated at a nice pace. Spider web lacing weaves around the glass nice and thin. The smell takes in some smoke, light peat, sweet vanilla bean, light licorice, sweet juniperberry, and a light spruce. Light caramel and toffee comes in as it warms. The taste was mainly malty sweet with the smokiness delicately backing it up. Peat comes back to punch the flavor into full effect. Malty sweet in the aftertaste leading to a wet smokey/peaty finish. On the palate, this one sat about a medium in body with a fair sessionable to sipping quality to it. Carbonation seems to run fairly light. Overall, pretty nice English strong ale.
