For this ambitious liquid time capsule, we used ingredients and traditions plucked from Egyptian hieroglyphics.
Ta Henket is brewed with an ancient form of wheat and loaves of hearth-baked bread, and it's flavored with chamomile, dom-palm fruit and Middle Eastern herbs. To ferment this earthy ancient ale, Sam and friends traveled to Cairo, set out baited petri dishes and captured a native Egyptian saccharomyces yeast strain.

After about 11 years of age I found this beer in the cellar and decided to give her a try! It looked and smelled amazing, pouring a cloudy straw golden color with a dirty white head that I was surprised to see was heavy and foamy, not thin. It reeked of a boozy honey wine. Much like a fruited mead it made me think of how much this would be enjoyed by a fire on a chilly October night at a Renaissance fair. I cant imagine this beer getting better with more age, but I certainly think putting time on it improved it, the first bottle was too sweet in my notes. I think I killed too much of the sweetness with the prolonged aging, it a little flat on the tongue. It has good flavor, amazing flavor maybe, if I didn't kill so much of it in aging. It's hard to pick out flavors. It's super mild grape and honey on bread. It's scary how super easy it drinks. The mild flavors of grapes (and maybe cherry, possibly blackberry, And even a bit of plum and apple) give it a balance to the old honey taste which is almost savory. The lightness of it is surprisingly refreshing, and I'm a little depressed I didn't drink it outside next to a hot fire. I truly hope they re release this, ill be buying by cases next time

Had this on draft.
A: pours deep amber color with slightly off white head with nice retention and lacing
S: beery, almost cornmeal smell; chamomile and subtle alcohol notes are evident
T: rich, burnt toffee taste; can taste the husks of the beer; interesting sweet aftertaste with subtle chamomile notes
M: light and fairly crisp; pretty good
D: nice feel and taste combo; nice drinking beer; overall, not too bad

DATE: August 8, 2016... OCCASION: Birthday number 40, finally and forever in the books--a beer this ancient might be required!... GLASSWARE: Victory Nonick... first, the bottle erupted in pent-up effervescence immediately upon opening... a flourishing cascade--a storm!--of bubbles envelops the glass, spiriting a body that is honey gold in complexion and hazily opaque in its vision... the head is off-white, slightly creamy and hastily forming into an uneven, almost beachlike froth... first scents include apple, pear, chamomile, suntan lotion, and ginger... sandalwood is also appreciable... palate is soft, dry and unengaging, almost flat, with a little carbonation... the hopping process doesn't yield much strength or depth... gingerbread, light cinnamon, honey, chamomile, and apple are soft, whispering hints that invite next sips with a sweetness unlike an ale I can recall... the honey, ginger and chamomile make this a nice dessertif... like a cold tea, this beer catches one off-guard, but its uniqueness is both a blessing and a curse: sweet and bitter in varying degrees, syrupy and arid in equal turns... something like my first forty years of life? Overall, an apologetic yet flavorful offering, though not one I would pay the $13.99 price tag for (though I received 20% off on this...)

Appearance: A darker golden hue, decent head.
Smell: Crazy earthiness, a little dark fruit, herbs come through as well as chamomile.
Taste: Chamomile is strong, middle-eastern herbs and fruit make this taste like I'm actually in that part of the world.
Mouthfeel: Medium with a good amount of carb
Overall: I really enjoy this brew, very unique. Not everyone will dig it but I do!
