Notes / Commercial Description:
This complex yet easily drinkable ale was brewed with 9 different types of malt and grain: pilsner, wheat, rye, oats, rauch (smoked), munich, Special B, caramunich, and aromatic. Along with those, Buckwheat honey, sorghum syrup, dark Belgian candi syrup, and molasses were added in the kettle along with Grains of Paradise, Long Pepper, and Rosea root powder, and a special unnamed variety of hops from the Pacific Northwest, which are yet to be put into production. It was then fermented with two types of yeast, including one from Belgiums most popular Saison brewery. The marriage of all of these various ingredients resulted in Bricolage, a delicately nuanced ale that leaves one discovering new flavors with each and every sip.

Had on tap at DFH in Rehoboth.

A: Served in a goblet, the beer is a clear, dark red/ruby color with a small tan head on top. Not much retention or lacing.

S: On the sweeter side, especially for a saison, probably from the honey and "Belgian candi syrup". A little bit of spice/pepper and faint fruits.

T: Slightly fruity with some earthy hops with a little bit of peppery spice. Some faint fruit flavors, hard to tell what they were exactly.

M: Medium bodied with moderate carbonation. Smooth, slightly dry.

O: A different take on a saison, especially being so dark, which doesn't surprise me based on the lengthy malt bill. That being said, not sure I would have pegged it for a saison if I drank it blind.

Appearance: dark amber in color with a nice 2" head. Some lace paints the glass during the session.

Smell: some spiciness is all that was detectable. Aroma is very mild at best.

Taste: grainy malt profile here. Caramel, some honey sweetness, spicy Belgian yeast, some cracked pepper, a mild fruitiness, and a moderate bitterness. This beer became more earthy as it warmed.

Mouthfeel: medium bodied. Lightly crisp throughout.

Overall: decent drinkability, not as refreshing as I would like in a saison. Interesting, but one glass was enough in the session.

Pours a dark amber color with a little bit of lace on the glass. The aroma has a sweetness to it like honey but also a slight spiciness as well. The taste has a caramel malt backbone, there is then the sweetness. The candied yeast comes first and then the honey dominates the sweetness. The backend has a slight spiciness and a very slight hop bitternss. The mouthfeel is moderately carbonated. Overall a decent beer, an easy drink as well.

On tap at the Rehoboth beach alehouse.

A-dark reddish brown with a thin light tan head

S-fresh and funky malts with a hint of cherry. very earthy. faint scent.

T-comes in with shops earthy and belgianesque funkiness. slightly smokey. ends with a decent matching after-taste that is also slightly peppery. its a good and unique beer.

M-medium carbonation with a dry finish

O-a unique and earthy saison. definitely different from other DFH beers i've had. its appreciated. it's something i wouldn't mind having a bottle of and sharing over a nice dinner. its a very belgian oriented saison.
