Notes: “Barbe Ruby” is one of the four “Barbe” beers. The name of the series of “Barbe” beers refers to the Liege brewery “Barbe d’Or”. Brewery Barbe d’Or was a medieval brewery in the old town of Liege (Belgium) and belonged to the family “de Romsée”, an ancient Liege family whose coat of arms adorns the logo of the “Barbe” beers.

“Barbe Ruby” is a top-fermented beer. The “Barbe Ruby” is the fruity beer in the series of “Barbe” beers. Its taste has aromas of fruit with hints of almonds and light sour cherries. The taste is initially sweet and fruity and keeps nicely the balance with a refreshing aftertaste.

This beer surprised me on many levels. The color was deep red, like a black cherry. The head--the slightest hint of pink. The mouthfeel was impressive--smooth, ample, silky. Delicious cherry flavor--more sweet than sour, balanced with almond flavors. Seriously tasty. Like Ben & Jerry's Cherry Garcia in beer form!

Pours a dark copper/ruby with normal carbonation. Aroma is of tart cherry's, candy. Taste is much the same. A bit sweeter than I'd prefer but once you get started it's hard to stop! Nice kriek despite the sweetness, the sourness balances a good bit.

Poured from a 11.2 oz bottle into a chalice glass.

Pours a deep mahogany color with 2 fingers of fluffy peach colored head. The head has fantastic retention, leaving a beautiful crown of lacing as it ultimately settles into a thick blanket of foam.

The aroma brings notes of fresh black cherries and cherry candy with underlying notes of caramel, toffee, and almonds.

The flavor starts off with cherry candy and almonds before a wave of caramel sneaks through. Finishes with some apple cider vinegar.

The feel is medium-full bodied with good carbonation. Creamy and syrupy.

Overall, I quite enjoyed this one. It's very acidic and absolutely exploding with cherry flavors and aromas, but despite the syrupy mouthfeel, it never really enters medicinal territory.

Dark brown with a ruby tint, compact layer of tan foam, minimal lace.
Aroma is black cherry forward, natural and pleasant, not at all artificial.
Tart with an underlying sweetness that doesn’t overwhelm.
Black cherry, balsamic, woody traces, dark malt structure.
Medium to light bodied, easily drinkable. Not lacking depth or intensity.
Falls somewhere between Flanders Red & Oud Bruin, heavy on the cherry.

On tap. Poured out a clear, red color with a pinkish head of foam. Sweet caramel aroma with some tart cherry. Sweet caramel with a tart cherry bite and a touch of toffee.

“BEST BEFORE 2019-08-24” stamped on back label. On shelf in store. Stored at 42 degrees and served at 48 degrees in a hand-washed and dried Jester King snifter.
Appearance – 3.
First pour – Brownish red, clear.
Body – Deep purple, almost black, like an eggplant. Constant effervescence. When held to the light, a murky red.
Head – Large (Maximum 4.3 cm, aggressive center pour), pink, medium density, fizzy, short duration, diminishing to a one to three mm crown and a thin partial cap.
Lacing – None.
Aroma – 4 – Strong almonds, weak cherries.
Flavor – 3.5 - Begins very sweet and fizzy, ends slightly sour. Almonds dominate the cherries. Gastric warming begins immediately. No alcohol (7.7% ABV) flavor or aroma, no dimethylsulfide, no diacetyl.
Palate – 3 – Medium, just short of syrupy, lively carbonation.
Final impression and summation - 3 - If this were just a bit thicker, it would be a tasty cough syrup. As it is, it seems too sweet and sticky for a fruit and field beer. Overall, disappointing. I was expecting a kriek.

Red fruit forward, the sweet definitely comes through as a almond extract flavor. This beer has the perfect amount of tart mixed in and the texture is robust. Summer in a glass!

Poured from 11.2oz bottle into glass. Bottling date is stamped on label as '2018-06-08'.
Dark ruby red colored body. Slight pinkish head settles back to a few islands and a thick ring fed by uprising bubbles. Leaves behind strings and spots of lacing.
Aroma is full of cherry - skins and fruit. Certainly has a medicinal cough syrup aroma, but quite a bit more dense.
Taste is all cherry, sweet and slightly tart. Again this is akin to medicinal cough syrup but much more layered.
Mouth feel is thick, almost like syrup. Decent carbonation for style. Has a bit of bite, mostly in the throat, at the back end.
This is going to be really a love it or hate it beer, based on whether the drinker is prepared for a thick, sweet cherry tasting beer. Could also be classified as a 'Belgian fruit lambic', although the sweetness here is dominant and any sourness is really in the background.

I liked this and I hated it and it left me confused...

Right from the get-go this beer had me intrigued and not -so-happy with it all at once. It poured this disturbing blood-red color that I did not find appealing in the least, but then dropped good foam and incredible lacing down the glass. The smell was good - in fact, I loved it - sweet and tangy notes of cherries to go with a background of malt to tie it all together. The mouthfeel was light- to medium-bodied with an astringent feel on the tongue at the back end. Then I get to the taste - it reminded on the one hand of cough syrup, but the more I drank the more I started to think of it as what "good" tasting cough syrup might be...I just couldn't get into this. Anyway, I'm sure there are those who will find this fascinating and desirable, but this is one I will be on the lookout to avoid moving forward.

Laces nicely. Most of the head disappears within a couple minutes. More carbonation than a lot of beers, but for this style carbonation is good, in my opinion anyway. Smell of sour cherries and the flavor follows right in line. Heavy cherry flavor and oh so good! I for one think this is world class!!!!!

This is just a super fun beer. It pours dark red with a small pink hued head. The aroma is of huge cherry and cherry candy. The flavor is nicely balanced between sour and sweet even though the latter lingers for a bit longer. Lots of cherry again. Some mild funkiness and oakiness toward the end. Medium body.

Barbe Ruby pours a dark reddish color, with a small lacing head. Big sweet aroma with noticeable notes of dry cherries. Flavor, is very balanced, nice dry natural cherry flavor. Very good feel, nice body of flavors. Overall, a very good fruit beer, natural flavors that is not too sweet.

Look: 1-finger head. Deep almost blood red in color. Head fades fast (expected to be lighter on carbo). Quite hazy.
Smell: Very aromatic. Strong tart cherry and other dark fruits (grape, plum, etc.). Nice red wine scent. Slight hints of cider vinegar.
Taste: Quite tart and spicy at first. Gets very sweet and syrupy. A little savory/earthy in flavor next. Sweetness only backs off slightly. Cherries are pretty intense. Very good.
Feel: Full, but lower end. Nice and syrupy. Stays effervescent with a decent foam ring.
Overall: Very good. Dessert-like. Didn't taste like cough syrup like some cherry beers. Would make a nice glaze or mix into frosting.
