Coeur de Saison - Heart of the Season! This is the second beer that Free State has produced using a blend of special Belgian yeast strains. There is just a hint of anise and a background pepperiness from the grains of paradise, but most of the flavor comes from the yeasts. Served unfiltered but fined, so expect a bit of a haze. (O.G. - 16.85P/1067. Hops - 25)

Tasted on tap at the pub March 2007.
Hazy golden color - looks like a saison. Head white and solid, not lacy.
Smell was estery and spicy from the yeast, cloves and banana, gets you ready for the taste.
No disappointment on taste, much like the smell with deep fruityness and yeast impact. Very smooth body and mouthfeel. No alchohol listing but for the style it must be around 7% is my guess.
Very drinkable and satisfying. I could drink this in place for higher priced belgians all day, but must be a local to get this:( . Well done.

This arrived with a light, off-white head and was easily the cloudiest of all of their beers. The color was a deep-yellow/gold color, like unfiltered honey. The nose had a yeasty mustiness to it. The mouthfeel was full, effervescent, and huge. Wow! The taste was dried fruit pear, apple, banana, slightly grape-y and full of yeast must. The finish was dry, vinous, and obviously yeast-driven. Just great!

Hazy pour, good headness, some lacing. Smell of musk, like an old attic, flowers and citrus; the nose is busy.
A rich flavor with soft fruits and biscuit. Hops fade in and out and finish weak, yet noticeable. A delicate brew, good probably with a meal.
I had one and needed something stronger.

Sampled 11/04. Clear dark golden. Ample, stiff, persistent head leaves frothy lace. Aroma of underripe banana and mellow clove, with hints of tart green apple and line zest. Bready yeast undertone. In flavor, honeyish sweetness upfront leads into hints of sourdough and lime peel. Gentle, musty yeast foundation. Trace phenol and ghostly banana hints. Sweetness augments as it warms, becoming akin to rock candy and thus displaces the initial dryness. Moderately dextrinous and well suited to the flavor profile. Finishes with a brief resurgence of mineral dryness with hints of anise and hop bitterness fading quickly. A well rounded and cleanly crafted saison. This could get dangerous.
