750ml c&c bottle dated best by 03/01/16 (so, almost 4 months ago) into an oversized Burgundy glass at fridge temp.
Look: pours a very pale yellow with a slightly ridiculous foamy white head and lots of carbonation. Very pleasant to look at.
Smell: wheat, citrus, white grape, hay, wet stones, fig, peach, confectioners sugar, pear, barnyard. A lot going on, but appealing.
Taste: holy sweet jeebus. Picture the sweetest piece of pecan pie you've ever had; this is 10% sweeter than that. Lots of wonderful fruit flavors—pear, honeydew, date, grape, coconut—along with herbal notes, biscuit, vanilla, tobacco... but you have to wade through a cumulonimbus of cotton-candy sweetness to find those other flavors.
Feel: very light and fluffy, and fairly dry. Cotton candy comes to mind again.
Overall: this is a really interesting and enjoyable beer, but you have to come prepared for just gobs of sweetness. I wouldn't call it cloying, because there are enough other flavors going on that it's never really a chore to drink, but I feel like it'd be easily a 4.5 with about 50% as much sweetness.

750ml bottle into a flute. Date on label says best before F02/11. I take that to mean before November 2022, so i have complied. Then again, I could be completely wrong.
Looks splendid in the appropriate glass. Hazy orange amber body with swarms of carbonation. The head is initially massive, and retains in very good form throughout with gobs of lacing.
Aroma is muted, but there are elements of stone fruit.
On tasting, well, it's simply delicious. Somewhat sweet. Tons of non citrus fruit. A slight spice note. Dryish, but this doesn't last. Strong tasting, but the abv is not apparent in the taste, only in the serious buzz I'm feeling.
Mouth full, finish warm, fruity, and strong.
Overall, had Deu5 recently, and was delighted with that. This is even better. Love the style, and certainly understand why they are 30-40 bucks a bottle. Lovely drink.

Medium to full body, dense texture, active carbonation. Sweet and dry finish.
Taste follows the aroma.
A beast. Better not talk about that stupid thing they called brut IPA.

Flavor with notes of pilsner malt sweetness, champagne yeast, apricot, lemon, spices, mild earth, floral and herbal hops, white grapes, roses and very discreet funky twist. Dry aftertaste with a robust bitterness.
Medium body with effervescent carbonation. Alcohol of 11% is better well disguised that true champagne.
Very complex Bière Brut that brings a marriage of champagne and traditional beer notes. Hops are sure a key ingredient here, it is not a champagne disguised of a beer.

Pours an almost clear, lightly amber, gold color with a finger of airy head that drops to nothing. The aroma is kind of like a triple, some hay, floral, light malt charcter and a little spice. Well-hidden booze and not tons else going on aroma-wise. The flavor was nothing like what I was expecting, though (same goes for everyone that has it with me). Waves upon waves of caramel, toffee, watered down mocha, crusty white bread, white chocolate and tobacco. There is a fluffy and creamy feel to pair with all the sweetness relatively dry with no detectable alcohol. It has a smooth finish and was an absolute delight it drink. Just an amazing beer! It made quite an impact and I'm glad that I sought it out. Not just a curiosity and a fascinating type of fermentation that I now think should be explored more. I would pick this one up in a second in the future if I saw it. I'd be especially curious to what it's like fresh. This one seemed like it gracefully mellowed since 2014 but for all I know it was a rancid husk of its past self. I'll keep an eye out and look forwards to being able to dedicate more time to a review of it.

Light yellow color, with orange reflections, slightly cloudy. Foam white, huge, tall and very durable. It is made up of small and a few larger bubbles.
Fruity aroma, orange, sweet peaches, light floral notes.
Taste like the flavor is pronounced fruity character, where lemon, orange, peach are the backbone. Seasoned is a delicate herbs.
Gentian acute, peppermint, short, but very clear. High saturation, appropriate. Despite the 11% that has the Malheur, alcohol is not noticeable.

Hazy dark amber body with varied size sediment floating about.
Looks past its prime and very likely is past its prime. Still the flavor, smell and feel are very good.
Loads of dark fruit; good complexity; very well hidden alcohol.
