Wittekerke Wild is the Ultimate Sour Wit beer. It is a combination of our famous Wittekerke Wit beer and our Petrus Sours. To make a Wittekerke Wild, the first step is to harvest the microflora of the oak foeders. Once we have done that, we have to unleash those microflora in the first fermentation of the Wittekerke Wit.

A: The beer is hazy yellow in color. It poured with a quarter finger high white head that left a thin layer of bubbles covering the surface, a collar around the edge, and some lacing down the sides of the glass.
S: Moderate aromas of sour funk are present in the nose.
T: The taste follows the smell and is moderately sour with notes of lemony funk.
M: It feels a bit more than light-bodied and tart on the palate with a moderate amount of carbonation.
O: This is an interesting take on a Belgian wit. I found it to be rather drinkable because it wasn't overly sour or funky.

This is one of the few Wilds I've had recently that could be accurately described as another style other than a saison. There are more than a few out there with similar treatment that could be considered a saison. But this is the first I've had that could easily be considered a wit. It paired well with a light meal and a salad, just like a wit.
I suppose this great blend of styles was bound to come from De Brabandere. Because their tarts/Wilds are more common Stateside, I shied away from their wit. But this Wild is so wit-like, it seems like a well-crafted marriage... one that gets along!
A big full foam I pour, appropriately, into my St. Feullien's bulbous tulip that has held many of their fine wits. Wittekerke's Wild is pretty, but not distinguished. Smells introduce the tart, mostly as lemon. The Taste attack is sweeter, but it quickly takes on the tart and it stays for a semi-dry finish... along with a bit of barnyard. In the mouth, refreshing.
This was a good reminder to me that I need to pay more attention to De Brabandere... even if they don't specialize in the Belgian styles I prefer.

Sour beers have become the rage in recent times. It's not a style I care for even though I've made many attempts to "get it" including this one. I'll pass it as average even though this will be the first and only time I drink it.

This is a special beer for me- #300 and the beer that got me my mug. Straw color with a two finger head that left a little lacing. Nose fits the bill with a bit of funk and some lingering whit spices. Taste is strong funk upfront with a clean whit finish. Light body and medium-high carbonation.
I was looking for more fruit from the Petrus influence but it was still a good beer. And the spirit of the occasion almost bumped it to a 4 in overall.
