2016 vintage, drank in 2022. Complex flavors w/ lots of raisin and dried fruits. Yummy!

A - Deep copper hue with a slight bit of haze and thin white lacing. Carbonation is very minimal.

S - Dark fruit, white wine, and toffee malt.

T - Oak, light caramel and toffee, white grape, a little bit of dark fruit, and alcohol booziness. There's some tart acidity on the very back end which gives the impression of grapes.

M - Thick, silky, and pillowy soft. Carbonation is pretty much non-existent and finishes dry on the back of the tongue.

O - For a 10% beer the ABV is totally hidden which is impressive.

750 ml bottle. Pours hazy amber with fluffy white head and nice lacing. Aroma is of spices, caramel and bananas. Body is full, creamy and slightly crisp. Taste is of caramel, brown sugar, spices, alcohol and cherries. Finish is long and spicy. Great brew.

From the bottle, it pours a brownish amber with virtually no head, possibly due to the extreme cold it was refrigerated to. Sweetish scent and taste. Somewhat boozy in scent and taste. A sipping bier!

Bottle from HomeBrewStuff. Muddy amber, plum colored. Small, silky ring of head. Sweet, boozy aroma, plums and pit fruit. Taste is also sweet, fruit, alcohol, plums. Slick, chewy mouthfeel. Perfect Sunday afternoon sipper.

A 750ml bottle with a best before date of 15th January 2018. Poured into a Riedel weizen glass.

Appearance: A clear copper amber colour with a one finger light beige head that dissipated fairly quickly while leaving some lacing.

Aroma: Freshly crushed apple juice, red grapes, plum and brown sugar with light caramel in the background.

Taste: Sweet fruitiness, plum, prune, raisin, grape and apple. Honey and caramel sweetness and a touch of peppery spice come through on the finish along with a hint of boozy alcohol.

Mouthfeel: Medium to full bodied with light carbonation.

Overall: I’m a big fan of Schneider, but this one just didn’t work out for me. Too much sweetness, the spice and the booziness just clashed and made it hard for me to finish.

Notes via stream of consciousness: Here in Germany during September it's not the time of the year for bockbiers, and even if it was, doppelbocks are harder to find, and not even necessarily as malty as this beauty of a weizendoppelbock I have before me. It's been sitting cold for a while and the yeast has settled and compacted, and it's poured a very hazy but not quite cloudy copper colored body beneath a short head of white that unfortunately faded away just as quickly as it was formed. What lacing is left is mainly spotty, and I'm guessing I can chalk that up to the 10.0% ABV. It's richly malty and sweetly caramelish in the nose with apples and a light waft of alcohol. The flavor follows bringing in a slight edge of acidity that lets the apple-like fruitiness take on a more cider-like side, and some light spiciness. There's some dark fruit to it as well, and although it's sweet it's not sugary sweet but more fruity sweet. There's just enough bitterness to it to keep it from going too far into sweetness while still allowing it to remain nicely malty, and the alcohol helps to dry it in the finish as well. Wow, this was too small of a bottle, I've almost finished it. I should have bought more, although I can already feel the alcohol taking effect - maybe one is enough. I'm not sure how it would compare to Aventinus without having one in front of me but this seems more delicate, less malty, certainly less carbonated, and much smoother and fruitier. Would I call it more refined? I don't know, but in a way, and maybe the name is suggesting this, it seems more "lady-like". Really quite wonderful and very enjoyable.

This weizenbock pours a medium brown color with a slight red tint and a medium foamy white head. The smell is complex and very fruit forward. It is a little sweet, a little sour, and quite boozy as well. Some of the elements that I can recognize are apple, grape, plum, pineapple, and sweet bread. The taste, if anything, is even more complex. A pronounced wheat flavor takes the forefront. All of the aforementioned elements are present, with clove, banana, and caramel also making appearances. The overall flavor is permeated by alcohol, somewhat fruity, and fairly sweet. This of course has to be compared to Aventinus the more famous weizenbock from the same brewery. This is higher alcohol at 10%, more complex, lighter bodied, more crisp, less creamy, and has a completely different flavor profile. This is a wonderful weizenbock, but if I had to choose I would pick the more traditional and heartier Aventinus. This is definitely a must try for weizenbock lovers though.

Bottle: Poured a cloudy brown color ale with an off-white foamy head with good retention and some lacing. Aroma of caramelized malt with some dried fruity notes with light candy ester is very interesting. Taste is a mix of light candy ester with some dried fruits with some caramelized malt and light residual sugar notes. Body is full with good carbonation and no real apparent alcohol. Solid weizen-bock though not sure extreme take on the style is the best way to enjoy.

Pours bright hazy copper, a bit like fresh apple cider. Almost no head as it is poured, but fine bubbles slowly bring a thin creamy head to the top. Nose is sweet, barleywine-like, with a bit of fruity malt including plum and apple skins. Taste is quite sweet but manages to avoid being cloying. Richer malt fruits like dried fig and plum along with those apple skins. Super fine mouthfeel. Overall, a very good and somewhat unique beer.
