Attractive bright hazy orange color. Modest egg shell head and lace.
Smells of dried apricot, blood orange, lemon, sultana, coriander, cinnamon, honeysuckle, slight damp earthy funk and musty leaves. Ripe and inviting.
Plenty of acidity, crisp and refreshing, fairly dry. Fruit similar to the nose, with amplified juicy blood orange and apricot. A moderate dose of hop bitterness like bitter greens and citrus. Restrained funk in the background, and subtle coriander and cinnamon. Delicious.
Light but grippy mouthfeel. Very drinkable.
Excellent stuff.

'02 vintage poured into matching ghost tulip. The cork comes off with a resounding pop and the brew appears a clear light golden copper color with constantly streaming bubbles supporting the half finger off-white cap. A beautiful lacing effect leaves stringy to web-like patterns along the wall of the glass.
The aroma is slightly earthen, fruity like orange meets cork, citrus zest, minerals and classic fantome funkiness. More whiffs provide a fruity alcohol tingle.
The taste is dry and earthy with some sips, than others showcase more of a fruited quality like a blend of pear and apple. Some straw-like to grassy grain quality is present with more funky fantome aspects into the finish with a mild hint of cork. An herbal hop touch is felt as it warms but it offers up little to no bitterness. This beer is all about the dry grain character meets funk and fruity alcohol.
This is a vigorously carbonated beverage thats sits light and tingly on the tongue. It presents a very strange and enjoyable sipping experience. Its quite dry and earthy yet some caramelized malt flavors are present blending with fruity alcohol that suggests sweetness but it isnt. Not showing nearly the amount of oxidation you would expect in a 13 year old saison. Classic fantome juice.

Bottle (2004)
Acquired via trade
Thanks, FalconA!
(Aged for 9 years)
A cloudy amber with a moderately-thick, creamy, off-white head. Fairly sticky, and plenty of carbonation, even after nearly a decade in the bottle. Good amounts of floating, chunky sediment, though even more is left at the bottom of the bottle. Certainly appropriate, and almost pretty.
A nice, integrated, earthy aroma. Combinations of roasted apple sprinkled with cinnamon emerges, and is quite expressive. Good amounts of earth, grass, and dried, cracking, crumbling Fall leaves as well. This smells like a Winter or Fall saison, if I'd ever experienced one.
The earth and dried leaves present in the flavor as well. The earth and leaves present a funky bitterness. Along with this, there is also good amounts of the apple and cinnamon character found in the aroma. Very drinkable. Alcohol is well hidden. As with the aroma, this has a distinctly Fall or Winter feel about it.
Medium bodied. Moderate to high carbonation. Very appropriate. Time didn't hurt this aspect.
Delicious, interesting, complex, though still not one of my favorite Fantomes--granted, Fantome is, arguably, my favorite brewery around.

2004 bottle, enjoyed on 12/19/12. Served in a Hill Farmstead stem.
Pour: Murky burgundy, with a two fingers of light tan, soapy head. Leaves some solid lacing. Head hangs around for a while.
Smell: Up front, big lactic tones and some molasses. Gives way to figs and dates, and some lemon juice. Light caramel, and a light balsamic vinegar. Finishes on the nose with a lemony tartness.
Taste: Follows the nose with a big lactic tartness, and lots of lemon juice. Some pear skin. A big molasses comes through, with some nice caramel. A light oak (is this aged on oak for any period?). Finishes with red wine tannins and some lemon tartness.
Mouthfeel: Really light for the flavors it produces, which is really quite nice. Good carb, and the tartness is just right.
Overall: Time did another Fantome well. I'm very lucky to have stumbled across this bottle and have a chance to try it. Delicious!

Huge thanks to Umberto for opening this during our epic night of drinking at the Goblin Pub in Pavullo nel Frignano, Italy.
Pours a very cloudy, bright golden orange color with tangerine edges and a half finger off-white head that quickly settles into a thin ring that soon dissapears. Not much in the way of lacing.
This beer has a very complex aroma with lambic, farmhouse and wheat beer notes bouncing off of each other. Lots of earthy funk with hints of barrel, wet hay and cobweb along with zesty autumnal spice, bready yeast, citrus and light fruit notes. Slight herbal/vegetal presence with lemon peel, pepper, bread and apple. Really odd combination but the nose is pretty inviting.
Medium bodied and again, very complex with hints of lambic, saison, vegetable/spiced beer and wheat notes playing off of one another. Slightly tart and puckering with a decent amount of earthy funk followed by zesty spice, bread, sweet malt, light fruit and citrus. A decent amount of sourness but not harsh or acidic. More funk than anyhing else with grass, straw, hey and wood flavor. There's also peppery spice with coriander, cinnamon and clove followed by caramel malt, apple, pear and bread. A truly unique beer. I don't really know what to make of it because it's so weird but it's very complex and quite flavorful.

This bottle is a 2004 vintage from what I have been told. Big props to Rbald42 for hooking me up with a bottle of this.
Appearance: Pours a very clear, warm honey color that nears a copper tone. Pleasant amount of carbonation that I'm very happy to see. A huge white head forms that has extremely good retention and lacing. Very good looking beer.
Smell: Pretty nice bouquet on this beer. Some white grape and pear comes out initially, followed by some juicy melon notes, earthiness, and very light funk.
Taste: Melon notes and green apple, earthy funk, finish is dry with a touch of lemon.
Mouthfeel/Overall: Light to medium bodied, ample carbonation that is about right for the style. Overall, really enjoyed this beer. Very good vintage saison from Fantome. Really impressed with how well this held up.
