750 ml, corked and capped. Slightly hazed, golden body pours into the Duvel goblet. Tall almond head retains well and sheds some spiderweb and sheet lace.
Pastoral aroma has white grapes, lemon Pez, spice shop ginger, spiderwebs, black pepper, and rain washed sheep.
Body has a silky carbonation and medium texture with some dusty chalkiness.
Taste is intriguing. A white pepper dryness and lemon Pez fruitiness is present throughout. Floral and herbal hops add a greenhouse effect of blooming wildflowers. Lime zest, newly shorn wool, and a pinch of nutmeg add complexity. Finishes clean and herbal.
Helluva bargain for sixteen dollars. A good Fantome like this transports me to springtime pastures, replete with gamboling cloven beasts, blooming clover, and juvenal thoughts. Hurrah!

My god, the carb on this one! Even after the tiniest pour, it hurriedly spills out all over the glass, then retains a tall meringue foam for far too long, making it damn near impossible to pour yourself another quarter ounce for at least 10 minutes, which is difficult to do if you only have one glass ready. As far as the liquid itself, once you are able to get a visual on it, it's a relatively clear, classic amber.
Smell is intensely old school: musty aged hops with white wine and mild belgian phenols.
This translates as a little more boozy and punchy in taste, exhaling some of that gassy, petrol hoppage. I wish I knew more about this one. Its booze combines with the phenols and hops to a fairly sharp bitterness. The body is moderately light, and the foam doesn’t expand to fill the mouth, but is more of a minimally fine carbonation in feel before coming to a semi-dry finish.
It's not just old school in the world of age and lambic, but the hops being a little skunky sometimes give the base ale a sort of tangy ghost of Heineken too, while also exhibiting floral notes here or there.

Poured into a Gulden Draak tulip. Pours a moderately hazy, medium golden amber with about 7/8th of the glass foam, from an easy pour. The massive head has great retention, making it necessary to pour frequently to get some drinkable saison. Nice lacing! Aroma is classic farmhouse grainy malt, a bit of funk and herbal spicing; smells nice. Flavor follows with grainy, husky malt, saison yeast, a little funk, lemon and summer herbs, with an herbal bitterness to the finish. Active carbonation, but still a nice moderate creaminess. Although this bottle states "Shelton Brothers", that company's demise means that this came through a different distributor and already it appears that we West Coasters are getting a somewhat fresher selection from Europe. As with the Été I had years ago, this is a classic rustic saison with great graininess and interesting herb flavors from the yeast. Great mouthfeel. My last Fantôme gushered so much I only got a half glass from the whole bottle. I'm glad I'll be able to savor this one, if slowly.

On tap at Lupulo in Santa Cruz.
More funk on the nose than I was expecting. Flavor comes in with a lot of white pepper. A few more sips and apricot cones through on the nose along with some guava and herbs in the flavor.
I love me some Fantome even though they can be hit or miss. This is a hit for me.

750 ml capped and corked green bottle, as Fantôme Printemps Saison (Belgian ale brewed with spices), Cardinal Pub & Bar, Stavanger. ABV is 8%. Orange colour, large head, slightly off-white. Interesting and unusual aroma of exotic spices, fruit and saison yeast. Quite sweet flavour, again distinct notes of exotic spices (can’t identify which ones), some fruit, a peppery bite in the finish.

Got out the corkscrew for this one. Pours out a pile of suds, leading me to believe "Fantôme" means "Wholly foam" in English. But it settles just enough to a clear yellow brew with whipped cream on top.
Tremendous sudsy, creamy mouthfeel that enlivens a Saison and lifts it from the yeasty dregs. Sweet malt with just the right amount of drying finish. Aroma of wheat and straw with flavors of sweet bread and pear. But I absolutely don't taste the alcohol, which is high for the style.
Otherwise this is the textbook example of a Belgian Saison, somehow more clean and lush than any other I've had this year. From the 750 ml bottle, corked and capped. Another Shelton Brothers import purchased from the local beer store.

Mostly clear amber golden body with a ton of white foam and lacing. Smell is magnificent, like woods after a rainstorm: mushroom, leaves, soft wood, mossy botanicals, earth, black pepper, biscuit made of beligan yeast, big basement funk with esters of lemon and pear. Taste starts with a sharp bitterness and the yeast before exploding with pear, lemon, orange, and melon juicy esters, while white pepper, funk, leaves, and grass linger. Body is yeasty, funky, sharp and light but not bright at all. This one is a hit fantome!

I saved this for Good Friday. A wise choice. Because today really was the last day of winter weather (in Chicago) and now I am ready for Spring having had this light, ebullient saison. A new beginning, or at least a vision for post-lockdown.
Printemps is a very good-Looker: golden, huge fluffy head settling to lace and tight bubbles. Smells seem a trade-off: either you get mostly fruit in a saison or you mostly get spice. Printemps is an interesting combination of spices, but I prefer fruit. Tastes driven by Fantome's spice-yeast interaction are unique and wonderfully dry. Printemps sits in my mouth nicely. I had this with an average batch of my soup and Printemps made my soup better. In my book, this is high praise for a saison.
I am a big fan of Fantome. I will visit them when I get to Belgium.

Pours semi hazy yellow orangeish with a huge meringue head. It dissipates eventually but always slightly lingers.
Smell is lemon and some funk. Flavor follows with citrus lead and some yeasty esters that create some sort of banana notes. Let’s you k ow this thing is Belgian. Finishes super dry to bring you back for more.
Pretty good beer.

Voluminous inflation of cottony off-white foam on the pour, only half the glass was filled; foam building in the bottle; liquid was a cloudy, pale amber... on the nose: honeyed wheat, hint of dried golden fruit, subtle floral spice, little booze... on the palate: honey-lemon pancake-batter yeasty grain foundation; dry, grassy back end bitterness; earthy, mildly musky aftertaste... despite the ample carbonation, not a thin, spritzy feel - more nectar-like in its body, with a soft effervescence... overall, its 'rustic' appearance falls in line with their other brands I've tried, while its taste is relatively simple and straightforward compared to their standard saison, et al; I'd prefer to try some of their other ones before going back to this one (1433)

Large head eventually fades to a lumpy layer on top of apple cider colored beer. Aroma is zesty with lime citrus, barnyard funk, and apples. Flavor is tart and juicy. Hard to describe barrage of flavors... Leather, apple, hay, lemon rind...

Pours a slightly hazy copper color with a huge yellowed head that settles to a loose foamy ring and eventually fades to nothing. Aroma opens with fresh lime, coriander, herbs, and low-lying sweet bread notes. Flavors of applesauce, flowers, lemon/lime, restrained clove notes from the yeast, and faint mint. Some bready malt notes, but little sweetness. Medium bodied, smooth, pretty low carbonation but dry in the finish. Tasty - interesting as expected.
