Large head eventually fades to a lumpy layer on top of apple cider colored beer. Aroma is zesty with lime citrus, barnyard funk, and apples. Flavor is tart and juicy. Hard to describe barrage of flavors... Leather, apple, hay, lemon rind...

Pours a slightly hazy copper color with a huge yellowed head that settles to a loose foamy ring and eventually fades to nothing. Aroma opens with fresh lime, coriander, herbs, and low-lying sweet bread notes. Flavors of applesauce, flowers, lemon/lime, restrained clove notes from the yeast, and faint mint. Some bready malt notes, but little sweetness. Medium bodied, smooth, pretty low carbonation but dry in the finish. Tasty - interesting as expected.

Excessive carbonation apparent after opening the bottle and the pour yields a massive 2+" white head. Aroma is typical Fantome, plenty of barnyard hay and grassiness to it. Definitely one of the cleaner aromas, there isn't a lot if any funk, its like some kid just aired and cleaned out all of the barnyard like he needed money for his chores.

Taste, its light bodied and dry, still kicking out those hay and grass notes. Still pretty clean too. Carbonation is all in 'never say die' mode. That keeps it almost too crispy and makes me wonder if it is whisping away that trademark funk here. Hides the alcohol very well, that's for sure.

Ultimately, at $20 a bottle, this one is nice to have on a summer day, but I don't know that it brings anything to the table worth straying from the original ghost.

Very still pour. Cap *and* cork and still there's no fizz, it's almost completely flat.

Smells fantastically complex. Skunk at first. Once I become accustom to it there's some more traditional nodes of horseblanket, grass, hay, and general funk. Very, very nice saison aroma.

Tastes... goddamn it, the flatness almost ruins the flavor. It's still pretty good, but nowhere near the wondrousness of the aroma. Up front you have all the aforementioned nodes of a rough, classic saison, all mingling together with impressively balanced intensity. But then the middle drops off into nothing, and while the finish strives valiantly to bring it back together it still doesn't work.

I dunno. It was pretty reasonably priced, so I might buy it again and re-review to see if I can get a properly carbonated bottle. As it stands, it's a frustrated mess that is brilliant in parts but does not come together well.

Lives up to the volatile nature Fantome has for pours, as it produces an near uncontrollable amount of head. I'd venture at least 75% of the glass is pure foam. It looks as you'd expect, but it's just over-the-top. Aroma has a distinct pizza dough quality - specifically, pizza hut - with notes of garlic, black pepper, oregano and baked bread. Odd, but I rather enjoyed it.

The spice is a bit less prevalent than on the nose, but possesses the same qualities - oregano & basil are upfront, pepper & peppercorn with dashes of Belgian yeast carrying the rest. Garlic, onion and some very mild phenol peaking in as well. Very distinct. I thought it came together nicely once you adjust to the huskiness of the spice. Feel is less carbonated than I like in my saisons, but still fine.

Hazy golden color with fluffy white head. Aroma has lots of herbs and spices like rosemary and thyme. Taste follows, herbal and sweet, like a sweetened herbal tea. It's quite rustic and tasty but I would prefer it to be more dry.

Pours a slightly hazy yellow golden color with white head and plenty of floaters sinking to the bottom. Light fruits, white wine notes, chardonnay and pinot grigio on the nose; follows onto the palate. Medium bodied. Finishes much like a white wine, just has that type of a flavor to it.

750 mL bottle into a wine glass.

Gusher when I pop the cork. I lose about half the bottle from gushing. Bummer.

Interesting copper color that's hazed out to high hell and has blonde hues. Foam like a root beer float, pale in color.

Smells a bit skunky and funky in a seductive and peculiar way. Herbal, floral, like a loaf of fresh bread. Floral honey too. I'm liking this in an odd way like that weird hipster gal that has something alluring to her.

So many flavors to take in here. Herbal tea-like, floral, honey and bread sweet, and some sort of spice like coriander or sage. A unique funk throughout.

Drinks lighter than the 8% but has a sweetness that suggests a Belgian Strong Pale. The funkiness and skunkiness being the elements that veer this into saison territory. I like the medley and the prickly herbal feel.

Pretty wild beer. Lots going on and it all works. Lots to savor. I have qualms about the price and the fact that I lost half the bottle but it tasted pretty damn good.
