I chose to open this in my sink, and it turned out to be a wise decision because it was quite a gusher. It was a murky orange/brown color. My wife thought it looked like cider, and that was an apt description. There was a huge, fluffy, meringue-like head, and a lot of clingy lace.
Lots of spice in the nose, with a little bit of caramel and fruit.
Spice-forward taste: cinnamon, nutmeg, and cardamom. The spice lingered. Some caramel and some raisin.
Medium-bodied. A little too much spice for me.

Light hazy brown with a very modest tan head. A little reticent as far as aroma goes, faint unidentifiable spice with mild citrus, dried fruits. A touch sour upfront, very earthy, somewhat musty, some dark fruity esters, candied orange peel, subdued yet sweet doughy malts and a touch of soy. Plus an added spice component that i can't put a finger on. Alcoholic spice through the back end, finishes a little dry. Really unusual. Medium bodied with fairly low carbonation. Almost the sort of carbonation I look for in my stouts. Alcohol is present, but not a hindrance. Weird, but good.

Hiver in a Duchesse goblet. Burnt orange amber color with a bleach white head of thin dimension. Lingering does the foam.

White grape, light honey, lemony tartness, nectary malt, hint of allspice and cardamom, farmhouse yeast, and a touch of vanilla.

Bright acidity without exceeding "tart" into the land of sour. Less of the funk and more of a white wine and lemon zing. Not tangy, just really bright and semi-tart. Firmly bitter for a saison. There is a light Bretty note that is understated, but delicious. Great flavors and complexity.

Tart and light and airy. An easy drink with a semi-stinging finish. Refreshing.

Very distinct. Not too showy, but tasty. The yeast doesn't steal the show.

It's definitely a foamy boi, pouring a massive light brown-colored head that's very long-lasting (sadly...) and textured almost like cream. The body has a dark chestnut hue to it, unlike a traditional saison. Of course, the head also leaves behind large splotches of lacing on the glass.

The aroma invokes one part winter warmer, one part saison. It's very heavily spiced with notes of nutmeg, cinnamon, and clove running rampant. Beneath that lies notes of black pepper, grass, and cedar. I don't pick up much of the malt backbone, with the saison yeast likely eating up most of the sugar. That sugar (both candied and malt-derived) presence is missed here, and would have done a good job ballasting the hefty spice characteristics. Still, points for a creative beer that has an element of cohesion to it.

It takes a few sips to really know what's going on with the flavor profile. The very first sip reveals winter spice, winter spice, and more winter spice. There are touches of caramel and gingerbread to round out the back end, but the main event is a bombardment of cinnamon, ginger, clove, black pepper, star anise, and allspice. Caramel malt isn't particularly evident at any stage, and fruity esters seem to come and go intermittently. It also seems to finish slightly hoppy (actually appropriate for a winter warmer). While I personally find it overspiced, I also really enjoy how rustic and...ahem...festive it tastes.

Dry, dry, dry. Not even off-dry like Dupont, but properly dry and almost parching. This is superbly attenuated, and goes down far too easily for an 8% beast. Carbonation starts off high, but calms down greatly after a while - the natural dryness of the beer keeps it easygoing.

Too spicy? Perhaps. Lacking supreme balance? Yep. An interesting and unique drink? Double yep. Ask me to describe it, and I'd either call it an incredibly rustic winter warmer or a slightly overspiced dark saison, depending on my mood (and my level of inebriation that evening...) I wouldn't exactly recommend this to neophytes, as it's an expensive bottle of beer that - while well crafted - may not be to everyone's tastes. Rather, this is something for the beer nerd who's sick of all the samey IPAs and pastry stouts all over the shelves and wants something truly out there.

Nothing beats a true Belgian Saison. Such succulent sweetness, yet so dry and spicy with those palate challenging 'Belgian' character.

The beer pours a hazy golden with an eggshell head that billows in rocky fashion wiht loosely knit pockets of air.

Malt sweetness swirls with a lot of spice, woodsy, musty, and attic-y qualities. Sweetness upfront is all malts with a sugar cookie and biscuit note. Spicy pepper notes compliment the corriander, orange peel, and lemon zest very well for complexity and balance (in the absence of meaningful hop character). A cork-ish woodiness with a dusty, musty note shies away from any brett character but does hold an aura that boarders on funky notes.

Sweetness up front makes the initial sip very inviting and soothing, then the beer dries out beautifully as the light hop character delivers an earthy, spicy note to compliment the spices in the throat. A truely wonderful beer as should be expected from Fantome.

Bought from Belgian Beer and Food. Pours a dark orange-brown colour, huge head with long retention,good lace.
Aroma is spices and herbs.Not sure, but I'd say, among them, cardamom, pepper, fennel, cloves, coriander, anis. Caramel too and. of course the Bretts.
Medium body, creamy texture, good carbonation.Sweet and dry finish.
Sharp taste that matches the aroma.
Complex, rich. Another great one from Fantome.

a: cloudy orange hazel. two fingers worth of beige head, falls down to one fingers worth and stays for a bit. supreme lacing.

s: malt, spices, slight tartness.

t: toned down citrus, apples, spices, bitterness. malt is in the background holding up the stage. funk from the yeast is nice and adds some dryness.

m: nice dry saison, this is what some american saisons should strive for. you wouldn't even think this beer had alcohol in it.

o: Loved every Fantome I've been able to buy and Hiver is no disappointment!

I was a bit disappointed by this beer.

The beer was sealed by both a cap and cork. The beer had a huge head, 4.5 fingers in a tulip glass. The color was an attractive honey.

There was a mild lemon aroma from the head.

The mouth feel was fine- carbonated in accordance with the style.

The taste was a letdown. Lemon was present, but an off spice,which I couldn't identify, dominated the taste. The presence of the spice imbalanced the beer.

Overall: disappointing. Could have been more balanced. I prefer the American Saisons, and the Belgian Saison DuPont which is traditional.

This brew pours a hazy ruby color. It's a bit darker than other saisons I have tired, but attractive none the less. The head is mamouth in size and lasts forever. The aroma is of orange, plum, honey, yeast and earth. The taste is more earthy than the aroma with the fruit and honey lingering in the background. The finish is mildly, but noticably hot. The mouthfeel is very much too style: light bodied and dry with a high level of carbonation. Overall, this is a very good beer that I would love to drink again. However, I would still rather have regular Fantôme, or Fantôme Saison D’Erezée - Été as I think they both were a little more complex.

Presentation: 750 mL corked and capped bottle. Chilled before opening. The cork pops off with a pretty violent noise. Poured into my Bruery tulip glass.

Appearance: As evidenced by the force the cork popped off, there is some heavy carbonation. Pours a three finger, pillowy white head with really nice retention. Golden orange, a little on the darker end of the spectrum.

Aroma: Really nice Fantome funk notes with some green apple tartness and a touch of honey sweetness. Some bitter and floral type notes in there as well. Nicely balanced.

Taste: The funk note stands out and provides a really nice flavor profile. There is a really nice balance of sweet and bitterness from the hop profile. Restrained, balanced, and complex.

Mouthfeel: Really nice carbonation, but the body is a bit on the heavy side.

Overall, a really nice and refreshing saison. Probably more restrained on the funk and tart notes than the regular version, but still maintains a lot of the quality that makes that great. Very tasty.

Appearance was very nice poured into a tulip glass, ruby red in color with a 1 finger tan head that stayed for a good while before settling to a nice film on top, and nice lacing around the glass.
Smell had hints of caramel, vanilla, spices, and a faint touch of fruit which all blended very well.
Taste has the vanilla and spices still there, with bitter oranges and pepper dominating the back of my tongue more bread and funky yeast coming out as this warms.
Mouthfeel this beer has a strange silky feeling from the vanilla and yeast on the front of my tongue, but the bitterness from the spices and fruit in the back of my mouth keeps me wondering what I will experience next.
Drinkability since this is the second time was able to enjoy this beer once in January and now today, I think this beer was really done right. I will be looking for this again when it is released this year and hopefully I am lucky enough to do the same comparison again.

BAside: my son kept asking "When are you gonna drink the ghost beer?" :)

Uncorked with a POP that would wake the dead, or worse yet the aforementioned sleeping son....geeze.

Poured with energy, life, surging, some strength to it. Dull, slightly sour nose, wet rocks, grapes, summer fields, an old abandoned barn, stale ginger candy. With some air I'm getting honey and faint spices. A fat 2 fingers of mixed scrimshaw ivory foam settled slowly to a thin blanket with some edge lacing. Subsequent refills of the tulip restored the head to a very fat finger's worth with a slow fading back to a covering. The color is stunning - thick, clouded, hazy, the perfect burnt orange hue, its radiant.

Its light, creamy, even, a sour candied sweetness, not bittersweet but more "bittersour" with a sweet accent. Its odd that while tart its not puckerish at all. Semi-dry with a somewhat ciderlike feel and a back of the mouth crunchiness, the sweet quality is elusive & hard to pin down, but its there keeping everything in balance. This is not revealing itself in any hurry, which is cool. I am enjoying the casual, relaxed, end of day quality it evokes, not out of strength of the brew but rather the "mood" of the beer.

With a little more air & warmth it starts to get a little more bittersweet as the tartness fades. Its growing faintly spicier, a bit yeasty, but still very even & balanced in a peculiar bitter-sour-sweet menage a trois la taste, which means Dany is appealing to 3 of the 4 sensations the human tongue can taste/infer....clever lil' ghost.

With the bittersweetness comes some earthiness (I must admit any alcohol is completely hidden from taste, only revealing itself in a faint, cool glow wringing my teeth with a dull aura). It actually takes on faint vinegar-like aspects on the palate, nibbling not biting, spices like cinnamon and old ginger peek out, then it finishes a little syrupy, slightly silty, bittersweet, leaving a surprisingly clean aftertaste that is coating, numbing and echoing of yesterday's bread today in bready sweetness.

A beautifully crafted, very coy, seductive "burlesque beer". I really enjoy the slow pace it set, how it subtly evolved, and especially the gestalt of the bittersoursweet triumvirate. Aside from spicy fare I can't say I can't think of any food this wouldn't pair well with, with a special nod to simple fare involving meats & breads. I will make the "D'Erezée" beers of Fantôme part of my celebrations of the seasons. I highly recommend this.

Pours a strong, super thick two-finger head. Looks a bit like bread in color and consistancy. The retention is awesome. The deep, deep amber, rust color helps bring out the sno capped head, bread-dough head gain so much appeal to me. The bubbles are a little hard to see in the deep amber, but look very nice amidst the light yeast suspension. The aroms is lightly tart and mildly malty. Gives the presence of tart melons. The taste laclkks on the fruit so to speak. Can still detect some tart honeydew. But the main stay is some light red, grapes. Musty and eartthy malts and hops. Very natural taste to this beer. Was very nice to sip while watching Super Size Me.

Poured into a tulip.

Really, this beer is just on the wrong side of being great. Perhaps, since this is my first Fantome beer, this is some experimental bastard offspring of their more established parent, the saison. It's still a good beer, and you're proud of it, but it went to a large state school and you went to an ivy.

A: Pours a murky/hazy amber color. The body is a beautiful orange with a visible amount of haze that stays suspended and still. It has a good three finders of bubbly off-white head with some quickly dissolving lacing. Great, but no wow factor here.

S: What I hope the calling card of this beer is supposed to be, relative to the others, is its sweet fruitiness. It's overpowering to a fault, though still pleasurable. Crisp fruits like apple and pear with sweeter toffees and malts meld well together with a strong yeasty funk. The fruits, for me, are just too overpowering. Tone it down a bit, and I know other ingredients and auromas would come through.

T: This is perhaps where it comes closest to hitting its mark. There is nothing really knew to say here that I didn't say for the smell: fruits, toffee, yeast, sweet, funk is all still there, in fact the crisp fruit is even more overpowering, but that fruitiness is very good, and the other flavors act as accents. It's like apple cider really, and it gets you drunk so I guess this is the preferrable option.

M: My ideal mouthfeel is one that you don't even notice: it doesn't draw attention to itself and lets the taste speak for itself without trying to but in and say, "Ooo, feel how carbonated or thick-bodied I am." It's a good sign if I reach the feel category of a review and realize I need to pay close attention to the feel because I hadn't even thought about it yet. This is that. It's slightly carbonated and medium bodied and that key word, for me, for the feel: appropriate.

D: Good but not great. Recommended for those who like fruitier and cider-like beers.
