Fantome's winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can't so for sure what this year's beer will be like, but it is sure to please lovers of Dany's beers.

Shared this bottle at the recent Fantome mega-tasting. Served in a Fantome tulip. Reviewed from notes.

Pours a hazy yellow-golden color with a good white head and some light lacing on the way down. The nose brings earth, lemon, floral notes, and some rustic Fantome elements. The flavor is a good mix of lemon and light funk with a touch of malt. Light body with good carbonation and a dry finish. Another solid offering from Dany.

750 Ml bottle, into a tulip. Have a few of these in the cellar, decided to pop one open for a day of football.

Murky and cloudy brown color, a bit dirty looking, with a small cap of white colored head. Retention is there as is some lacing.

Smells an odd mix of tartness and floral, boasting considerably more hop presence than the original Fantome does. The barnyard funk is there, but isn't as pronounced. Hints of light fruit (apple?) and some winter spice as well (clove, nutmeg, cinnamon?) Who knows, Danny will never tell.

I can definitely tell that this is the winter varietal, as with the nose, there is a larger emphasis on spice and hops, resulting in a heavier feeling beer overall. The tartness and funk are there, but a bit overwhelmed in my opinion which is a shame since its what really sets Fantome apart from other Saisons.

Medium bodied, but fuller than the original, which is to be expected I suppose. Properly carbonated as well.

The original Fantome remains my favorite, but I'm not going to penalize this for being different. It's certainly enjoyable, but I can't but feel a bit disappointed.

Sampled alongside twenty other Fantôme beers.

The beer appears hazy and yellow with a small white head. The aroma consists primarily of citrus and floral hops. Additional notes of floral hops, funk, yeast. Lingering floral hops in the finish, along with a pleasant funk. Well balanced and flavorful. Medium bodied with spot on carbonation. One of the better Fantôme beers of the evening. I would definitely have this again.

Poured a beautiful hazy golden color into a tulip. Head is thick and creamy.

Smell had notes of wheat and light fruits. A little bit of unexpected funk. Some spice, maybe some clove?

Tastes much better than it smells - has tart notes along with a mild sweetness. Citrus or tropical fruits at the forefront and wheat at the end.

Pleasant mouthfeel due to perfect carbonation and fluffy, foamy head. Lighter body. Crisp, clean finish.

Overall, this is an excellent example of a saison, a style which is hard to define but easy to enjoy. Smells funkier than it tastes - a bit of a mystery there. But the taste and mouthfeel are where it's at with this beer, and if you like saisons, I don't think you'll be disappointed by the Fantome's winter offering.

And for that matter, this isn't strictly a "winter" beer - could easily be enjoyed any season due to light, easy & whimsical flavors.

Beware as my bottle almost exploded when opened - quick reflexes captured some beer in a tulip which was bubbling out.

S- Bottle

A- Looks delicious. Pale golden yellow. Just a beautiful looking saison.

T-I find that pretty much every time I've tried one of his beers, my first sip was my least favorite. It starts too sweet. But it's as if with each and every sip new flavors emerge. This follows the format of most of his others: lot of apple, some sweet some sour, this one has banana bread, lemons on the long lasting tart mineral rich finish.

M- Very nice saison. Maybe a TINY bit more carbonation would bring perfection?

O- It is a different beer at the end of the bottle. I think you almost have to drink the whole bottle to appreciate this.

Bottle. Pours a cloudy yellow gold color with some floaties. Nice white fluffy head. Skunky aroma wafting from the glass. Wheaty. Slighlty sweet, spice, banana, and clove. Slight medicinal notes as well. Some lace. Light/medium mouthfeel. Pretty easy drinking. It decent but nothing that stands out.

750ml bottle poured into a Duvel tulip. Label has a place for a date code, but no month or year is notched on this particular label.

A - Pours with a mild haze into a solid juice like amber color, a bit darker than a neutral amber and is capped by a light tan finger of fluffy head. Good staying power that eventually falls leaving behind some webs of lacing on the glass.

S - Fruity, apples - a bit cidery, yeasty, a bit of bubblegum, sweet malt, grassy, earthy, minuscule funkiness, mild alcohol. Quite different from most of the saisons I've had in my fridge lately.

T - Yeasty, tart, a bit sour, lemons, limes, apples, lactic acid, alcohol, a low medicinal bitterness, wood/oak (not aware of any barrel time on this one), oranges, earthy, sugar. Quite complex and flavorful.

M - Lightish body with a firm and assertive carbonation that is frothy, foamy and tingly at the same time. Sweet, tart and sour all at once also. Fairly crisp from the tartness - quite refreshing, despite being a winter seasonal this would be great in warm weather especially with food. Only negative...halfway thru the bottle I'm feeling a bit bloated by the strong carbonation - sharing might be in order next time I have this (and I will have it again). Alcohol is mildly noticeable but unobtrusive.

O - I have to say that I went into this one expecting to be letdown - why? I don't know - maybe expecting the Fantome reputation to be a bit overdone...not sure. All this being said - I really like this saison...haven't had one that resembles this in a long time. Perhaps a slightly different take on the style (although I've admittedly had mostly American takes on the style lately) but absolutely works for me. The combination of fruit, sweet, sour, tart all works really well. Absolutely will be looking for this one again.

amber hue, two finger head that reduces to lacing cap. scent is dark fruits and dull earthiness. taste is similar with more emphasis on the fruit. mouth is typical Belgian light. slightly sweet, alcohol rears it's warming self. mmmm... gonna seek this again.

2009 vintage, almost 2 years old, shared with peoples.

Poured a hazy bright orange, white head, decent retention, a little lacing.

Out of the Fantomes I have had this was definitely the most tart, a somewhat gueuze-like barnyard tartness, lemon and orange, yeast, spice, apple. Light vinegar. Solid mouthfeel, good carbonation, no sign of 8% abv.

Not as mind bendingly awesome as the other Fantomes I've tried, but good. I'll pick up another bottle.

Poured gently into a tall flute-like glass. Thick fluffy white head that fizzes into about a 1/4 inch layer of foam. Pale yellow, somewhat hazy.

Aroma is typical for a saison; funky, peppery, and citrusy. Should be noted that this one is heavy on the lemon/citrus notes. Flavor follows with a tart, lemon/lime soda like presence, finishes dry and funky. Rather sour, but still in-line for the style. Bubbly on the tongue with a light effervescent body.

Not as good as Fantome's other offerings, but still pretty solid.

Poured from a bottle into a snifter.

A- Really light yellow color, well carbonated, two finger frothy white head, nice lacing sticks to the side.
S- Grassy lemon flavor, floral hops, earthy notes, little funky, slight grapefruit.
T- The taste is similar to many of the other Fantomes we had tonight, the lemon lime flavor sticks out a little more in this beer, citrus, slight malt, some spice, pretty tasty.
M- Light/medium mouth feel, well carbonated, smooth drinking, clean finish.
O- Nothing to unique or different than the other Fantomes of the night, enjoyable and easy drinking.

A: Golden yellow and orange with some haze and a thick frothy billowing snow white head. Nice lacing too! Stunning 4.5

S: Spicy aroma, some pepper, mild acidity, and I’m picking up a bit of dry unripened green apples 4.5

T&M: Oh man this is good and what I love about Fantome. Mildly fruity, with a lingering tartness and tang all the way through. Some mild earthy tones and floral pepperiness, but what I love is the mild, yet noticeable tart apple tang that goes along with this incredible mouthfeel. It’s creamy, yet crisp, and carbonated perfectly. There is very slight alcohol on the palate, but barely noticeable. This is amazing. 5 / 5

O: Not much else to say but this is incredible. I love it. In every single way possible. It’s slightly different from the black/white label (regular) Fantome Saison, but very, very much as enjoyable. I still prefer the regular but this is superb. 4.5

The HIV!!! Part 7 of the Fantome tasting

Pours 1 and a half finger of white head. Great retention leaving some thick lacing. Color is a slightly hazed straw yellow.

Aroma: Reminds me of sprite, lemon-lime citrus again. Such a great flavor in these beers. Some straw flavors but no huge barnyard funk. Slight grapefruit. Very nice.

Taste: Lemon-lime citrus with a bit of grapefruit. This one has a bit of lemon zest to it. Coriander and a bit of spice. Yeast with a touch of bready malts. Very citrusy.

Mouthfeel: Crisp and bubbly. Lighter bodied with a bit higher amount of carbonation. Ends a bit dry.

Overall, this had that awesome Fantome citrus flavor to it that I have enjoyed all night. Very nice flavors and pretty easy to drink.

A- pours an apricot colored amber with half a dinger of off white head. Retention is pretty pour as it recedes into a halo of bubbles.

S- lots of floral aromas up front with a note coriander lots of musty earthy smells in the middle. Slight leafy hops towards the end. Finishes with some white pepper and a bit of green pepper.

T- Tart earthy flavors up front with a yeasty fruity ester that remind me of candied peach and pineapple. Nice acidity. Slightly white pepper on the finish with the return of the green pepper note. Finishes dry with a touch leafy hop and slick malt flavor. Tartness lasts long into the aftertaste.

MF- slick round mouthfeel with a full body and fine soft carbonation.

D- filling and savory. Great drinkability.

Overall a saison with personality and characteristics all it's own. Fantome beers are major thinkers with great complexity. Delicious.

Pours a hazy, golden straw color with a GIGANTIC white, frothy head. No wonder the cork made such a loud pop. Scent has plenty of barnyard funk with just a hint of horse blanket. A lot of grass and pepper notes hit the nostrils as well. Upon my lips reaching the glass, I just knew I was about to partake in a great saison. Amazing barnyard flavors with lemon, pepper, and grass. Some subtle hop presence with green apples and Belgian yeast. Finishes somewhat like movie popcorn...oh so buttery. Mouthfeel is extremely dry and crisp, but the buttery finish seems to bring it to a smooth and full-bodied ending. Drinkability is very high. Overall, Fantome makes another amazing saison! This and the original Fantome saison are what all saison brewers should push for.

Pours a hazy orange with plenty of white head that laces nicely.

Smell unfortunately fairly skunky (why do green bottles continue to exist?), can't get much else besides pepper through it.

Taste a lot of lemon, pepper there at the finish, yeasty tang.

Well-carbonated, light body, refreshing on a lazy summer day.

Overall a good saison, sad about the skunky odor and feel like I'd otherwise have rated this one more highly.
