750ml bottle corked and caged poured into a matching Fantome glass. The brew appears a clear straw yellow color with a white cap that fades leaving full patchy lace sticking to the glass.

The aroma is herbal lemon grass somewhat citrusy with a hint of black pepper.

This is tart and lemony to herbal with a spice like oregano and almost a woody tannic aftertaste that is also peppery. There is a dusty grain element and brett'd dry funky aftertaste.

This is medium in body with modest carbonation. Quite a dry and unique experience. This bottle was such a bastard to track down...it haunted me for years. Glad to finally lay it to rest and experience it some 9 years after it was brewed/bottled. Would certainly drink again but somehow I doubt there are any left.

Santé 1-19 vertical. Thanks Stakem!

Clear, golden yellow body with a quarter inch of white head. The aroma brings assorted herbal and floral notes. Forest, earth, mushroom, oregano, cracked pepper, wood chips. The flavor is an odd combogulation of the aforementioned characteristics. Complex, weird, unique.

Bottle at Fantome-a-thon 2012

The beer is pale golden in color with a finger of white head. The flavorings of this beer are surprisingly intense. The coriander and oregano are easily detected and go surprisingly well with the sweet malt and light funk of the beer. The flavor is a bit less spicy and herbal, though significantly fruitier. Good malt flavor and sweetness to this as well.

Bottled shared at bu11zeye’s 10,000th rating tasting.

The beer pours a yellow color with a white head. The aroma is very nice. I get a lot of lemons and Belgian yeast notes, with some sugar, wheat and a little bit of Fantome funk thrown in. The flavor is very similar. There is a lot of wheat and lemon, as well as some lactic tartness, yeast and barnyard funk. There is also a little bit of sweetness that reminds me of snowcones (not sure why, but that is what I thought when I tasted it). Medium mouthfeel and medium carbonation.
