Poured a murky, muddy orange brown body with minimal head and almost no lace. The aroma strikes me as boozy and apple brandy-ish with some sweet possibly dark fruits hanging around. The beer seems to mix an apple or pear dipped in honey sweetness with a grape and raisin vinous/dark fruit taste with a bit of sour crispness on the finish. Not a bad beer at all but I was expecting a classic saison from Fantome and this is not a typical or classic saison.

Review is for two different vintages. But rating is only for the first one -- a rare 2005-ish bottle. Drank 2016.
Pours like the haziest NE IPA you've ever seen. Like mango juice hazy, orange, glowing.
Aroma is Fascinating. Herbal, vanilla, sourness, citrus. Minty perhaps.
Taste is insane! Like someone melted a orange creamsicle into a gin & tonic. A LOT like that in fact. Tart, almost sour, and a bit funky but tastes incredibly fresh. Not the least bit tired despite its 10 years of age, and doesn't have a hint of alcohol burn despite its 8% abv. Amazing. Absolutely amazing.
Loved this. My 2nd Favorite Fantome I've had. I won't tell you my favorite because I don't want others to go after them. ;-)

Next is a ~2012 vintage (best by 2017). Aroma is sour, Gueuze-like, a bit acetic, and definitely some classic Fantome funk.
No head, very little carb. Couldn't get a head to form even pouring from 8 inches above the glass. Looks like unfiltered apple cider. Just like that, no other descriptors needed. Yep, an ugly beer!
Taste is pleasantly tart, but has a weird mouth-drying, flem-forming aftertaste. A bit of herbal tannin bitterness. Kind of sweet, a bit of overripe fruit. Strange - my throat gets quite flemmy after each swig. Not sure I like that. Would love the taste of it weren't for those factors.
Mouthfeel would be nice - it has substantial body - but in the end it is quite lacking due to low carb, tannins, and wierd flemminess.
Overall I didn't love this one. I feel like it had potential, but some odd flaws kept it from being very enjoyable. Too bad the pre-2010 iterations are white whales. Would love to revisit those but doubt I'll have the opportunity, but I am not sure I'll want to revisit the 2012 vintage.

750 ml capped and corked bottle, label says best before end 2017. Served in a Prairie Teku, the beer pours a hazy brown color with pretty much no head whatsoever. No lacing, either. Aroma is subtle at first but gets stronger as the beer warms, it smells like red apples, caramel and woodiness. Luckily the flavors are stronger in comparison to the aroma. It tastes like red apple, cherries, caramel, vinegar, stone fruit, earthiness, oak and some light spiciness. The tartness is subtle. Mouthfeel/body is light/medium, with very low carbonation. I thought this was OK overall, it's not my favorite Fantôme brew but still an interesting one. I'd like to try a different batch of this in the future.

750 mL bottle. Clear amber body without much of a head. Very thin collar. Smell is like spiced apple cider. Some vinegar. Taste is lightly tart. Vinegar tartness. Strong cherry and dark fruit sugars. Finish is a little apple-y. Very low carbonation. Medium heavy. Not what I expected at all. Pretty tasty beer, but heavier and sweeter than I thought.

This beer had to be infected. Absolutely no head, smell was very astringent, and the taste was vinegar. Because others have rated this so high, I have to assume infection. If not, I don't get this beer at all. Unfortunately, this is my second bad experience with these guys.

I just don't get it. Officially done with these guys. Gusher as usual. Dark brown pour, no head and very little bubbles going on. Smells like apples and lightly tart fruit, no yeast funk. Flavor is overly cloying sweet fruit with weird spices (not uncommon for these guys) and nothing else to speak of. Harsh spices and cloying sweet notes on the tongue make me want to pour this down the drain....aaaaaah, there it goes, that's better. Time to go drink a beer that isn't made by a joke of a brewery. Time to just close up shop for these clowns.

2014 750ml bottle poured into a tulip

A: Pours a hazy amber color with no head just a light fizzle of a head that quickly dissipates to nothing. A very murky beer, not very nice looking.

S: Aroma is tart and flanders red like. Hints of dry fruit, tart cherries, red wine, brett funk and some wood spiciness.

T: Lightly tart, cherries, some oak spice character that's most likely yeast character. I also get a very faint fantome character in the background but its very faint. Taste is dominated by dark tart fruit. But generally a tart amber beer with no distinct Fantome Ghost character to it... :(

M: This is a light tart beer that finished extremely dry and almost gives you a slight cotton mouth feel. The tartness works with the dryness and helps dry out the mouth. The beer finishes with a lingering cherry and fruity taste. Not bitterness.

O: Not going to lie, I was not a fan of this beer. I expect something stragne and special when drinking Fantome and to me this was simply tart and fruity. No weird Fantome yeast character that you get in their standard saison or in Hiver. However, this is a decent sour red.

The beer is a deep amber and clouded through. It has a small, reluctant head, beige and creamy. The beer looks thick, viscous. This heft is felt in the body, though it gives the beer a pleasant depth and goes down easily, avoiding any accusations of syrupy messiness. The beer smells of toasted malt fruit. Heavy plums, sherry, fresh tart cherries, wood. Vinous spice. It’s uniquely Fantome and wonderful. Light acidity. Fruit sweetness without any cloy in the finish. Apples, grapes, spice. Wood and tart stone fruit lingers on. Magical.

750ml bottle, 2014 vintage, poured into a Sante Adairius snifter glass. Enjoyed on 6.20.15, reviewed from tasting journal.

The beer pours an interesting caramel brown color, burgundy hues, tans and browns as the light strikes the beer, opaque and very hazy with a bone colored head that offers low retention and little lace. The aroma is interesting, nutmeg, spice, coriander, all spice, funky yeast, barnyard, horseblanket with dark, chewy grains and stone fruits. The flavors echo the nose, big spice bill, very Christmas like, stone fruits, yeasty, chewy dark grain, very unusual blend, loads of nutmeg and coriander, almost getting a pumpkin pie spice aspect, definitely not a summer vibe, but it does remain enjoyable. The mouthfeel is fantastic, a hallmark of Fantôme bottles, coating, gentle, soft, moderate carbonation, very smooth and gliding with a creamy finish that hits the spot.

Verdict: A very unusual saison from Fantôme, loads of spice and darker malts, quite earthy and reads more like a Holiday beer than a Summer saison. I didn't dislike this beer, but my expectations were for something quite different. This had a bit of a cult like following and I'm not sure I understand why, but I'd definitely enjoy one of these bottles in November or December.
