Appearance: Pours a ruby/burnt orange color with no head, no carbonation and no lace

Smell: Apple, pear and a touch of caramel

Taste: Tart fruit forward, with the apple and pear tones bringing along some underlying sweetness, as well; some oak and leathery character in the finish

Mouthfeel: Medium bodied and still

Overall: Not what I was expecting at all; closer to a Flanders than a Saison; not an unpleasant taste but I am not sure that the brewer would be pleased with how the beer has developed

Totally and utterly flat. Not a single bubble. It smelled delicious and the flavors were nice, but the mouthfeel was horrible as a result of the horrible undercarbonation.

A: Pours a dark reddish brown color with a fizzy light caramel colored head that recedes pretty quickly.

S: Light bread and caramel with a light underlying funk to it. Red apple and some toffee.

T: Bright and juicy with some red apple, green strawberry, apple cider spice and some lingering green apple tartness. Sort of a strange beer and nothing like I would expect from a Saison, but very good.

A: Dark amber, cider, opaque

S: Ripe apples/cider

T: Tart green apple, lychee, pear, a little funk from Brett?

M: lighter mouth feel than what I expected, smooth, very light carbonation

O: highly drinkable but very tart sour beer. Very cider like and not at all what I expected from a farmhouse/saison.

Exceeded expectations. Wonderfully fruity and lightly tart. Absurdly drinkable, no sign of abv. Not at all what the word "saison" brings to mind, but this is a style that's all over the board. Somewhat heavy with medium-low to medium carbonation (a plus in my book), flavors of green apples, pears, and peaches. A little bit of lychee nut flavor, which may be the brett. I've gotten similar flavors from homebrews with brett trois. Really just wonderful.

The historic patience that allow for true saison flavor to emerge might be the long-lost ingredient in the styles and why many modern versions fall into Belgian obscurity. Yet Fantome brewers still value those traditions and it shows in taste.

The seasonal ale pours with eruptive carbonation. Shy of gushing, its billowing stature impresses the eye and the nose as its high effervescence heightens the beer's acidic fruit character, earthen spice and seems to lighten its bready undercurrent.

With just enough grain sweetness and bread textures to aid in support, these act as a spingboard from which the fruit and spice medley bounce onto the tastebuds. Ravishing fruits of green apple, lemon and orange are all present, however the strong peach and nectarine flavors steal the show. Seeming soft with "cream sickle" character, even its hazy orange stained glow suggests much the same. Yeasty and spicy late, notions of shortbread and peppercorn rise to balance the fruit. A medium-light attack of hops pierces the fruit, cream and sweetness with dry hay and lemongrass.

Playfully acidic in finish, the ale shies away from souring, but greets the palate with the tang of cider, rose wine, and the peppery tannins of fruit pits. White pepper, black pepper and a pep of perfumy coriander all waft about the finish giving the ale a sense of finesse and earth in aftertaste.
