I wasn't sure if to review this brew or not, but there is a mix of opinions around here. It seems as if most people that got the carbonated bottle got the true intention of the brewers while the ones that got the still ones were disappointed.

I was one of the ones that got no carbonation, so you know what I think about this brew. The bottle came with cap and cork which made me expect lots of carbonation but it was totally still.

Appearance was very weird. Pinkish pale with orange and totally flat. Never had seen a beer like this.

Smell was super funky and sour. I wasn't expecting it at all either, but it went with the appearance.

After all this I still went ahead and tasted it. Not good. Super vinegary and sour. Got some grain notes in there as well.

Mouthfeel inexistant. No carbonation at all. Just a whole mess.

Not a pleasant experience. Really was looking forward to trying this brew given the two great breweries that were involved. All I can say is that it reminded me of the people that tried WTF from Sam Adams

A collaboration beer from Fantome and Hill Farmstead. Poured from a bottle into a d'Achouffe tulip. It's got an interesting color - orange. I don't mean amber or mahogany, I mean this stuff is almost as orange as kool-aid. Unfortunately, even the most violent pour I could manage produced so little head that it hardly deserves to call itself a Saison. The nose is really nice. I get a fruity acidity that strikes a nice chord between the noses of a Saison and of an American IPA.

The flavor is well below average for the style and the complete lack of carbonation makes the mouthfeel rather squishy and disgusting. There is a fair amount of grainy sweetness and lactic acidity that makes up the flavor profile. It doesn't have much complexity at all - no peppery notes, no spice, no balancing flavors of bitterness or herbal notes. It's just a sweet and sour flavor reminiscent of stir-fry sauce that does not distinguish itself at all. It's very unappetizing and practically undrinkable.

I was really looking forward to trying this beer and it was an enormous disappointment. Moreover, I feel really stupid for being suckered into buying it because Hill Farmstead was involved (note to self - remember your 3rd rule of beer-drinking: no collaboration beers!). The less said the better. If you're reading this, avoid the temptation to try this stuff.

Batch 1

Pours a cloudy, bright golden orange color with apricot hues.  Completely still and even a very aggressive pour yields only the slightest bubbles that quickly fade into a vanishing thin ring.  No lace.  

Herbal, phenolic aroma with earthy flowers and a strong musty funky/wild yeast presence.  Slightly soily and earthy with damp, rotted wood, wild mushroom and decaying flower petals along with light and citrus fruit esters.  Subtle peppery spice as well.  Weird but I sort of find it oddly appealing.  

Light bodied and almost flat with faint carbonation and a very unpleasant dirty, phenolic flavor dominating the palate.  Rubber band and band aid notes are prominent along with subtle spice, dead/dirty flowers and bong water along with bread, green apple and banana.  Dry and somewhat chalky in the finish with a strong dirt/phenolic, rotten yeast presence killing off most of the flavor.   Very harsh and tough to drink.  A complete mess of a beer to be brutally honest.

750ml bottle into tulip.

A: No pop to the cork; bad sign. This beers pours a clear apricot color with no head. Well, there's a few soapy bubbles from my rough pour, but overall this doesn't sit well in the glass.
S: Smells of earthy and musty funk with a hints of sticky cheese, cooked vegetables, apple cider vinegar and horse shit. Band-aid pokes through as well.
T: Follows the nose. Flavors of vegetables, tart funky bugs and mild wheat. Band-aid, dirty mess of spices , sour mash, earth and wood. Aftertaste has a touch of fruit to it.
M: Flat as water. Medium body, light tartness.
O: A mess of a beer. I tried to power through a glass, but didn't even get half way. This is the second expensive Fantome drain-pour I've had recently.

reviewed from notes a few days ago. pretty sure this is the bad batch of this brew since this was...well, pretty bad. poured a murky orange with a big orange/pink head. nose is spicy saison. taste is a drinkableish smoky bandaide. fizzy carbonation...basically it is a mess. i could force it down, but why bother? i was the last one at the tasting to give up on it, but it did eventually slide down the drain. sorry sink.

Bottle I brought to share at Oneinchaway's tasting.

Pours a murky light reddish-orange that pours with no head. No lacing on the drink down. Smell is of malt, grain, hay, chalk, yeast, and lots of funky aromas. Taste is much the same with sour and smoke flavors on the finish. There is a mild amount of yeast bitterness on the palate with each sip. This beer has a low level of carbonation with an almost flat mouthfeel. Overall, this is a below average beer with some odd aromas and flavors that are pretty disappointing coming from both brewers.

The beer appears golden with a thic white head. Aromas of spice, malt, oddities, well water, funk, earth. The beer definitely seems more Fantôme than Hill Farmstead. Weord, earthy, herbal. Flavors do not cooperate well. A jumbled mess of odd spices. Cracked black pepper with some fruity notes. I am not a fan of this one.

A-Golden/Hay color, thin white head, quickly disappears.

S- Musty, barnyard, citrus fruits, funky sour.

T- Letdown? Does that have a taste? Slightly sour. Bitter, and it sits in the back of your mouth. Very pine tasting, like bad gin.

M- Bitterness that lingers, but mouthfeel and carbonation are pretty spot on otherwise, for the style.

Overall, ok. I was hoping for more since this is a HF colladb.

750 mL bottle poured into a snifter.

Appearance - Gushes instantly. Pours with an equal quantity of foam as beer. Great retention. Pretty orange body with a reddish hue.

Smell - And it's odd. Citrus. Caramel malts. Smokey aroma. Slight acidity.

Taste - And it's even more odd. Citrus tang. Flavor drops off in the middle and comes back with a smokey and kinda plasticky flavor.

Mouthfeel - Medium low body. High carbonation. Funny aftertaste.

Overall - A strange concoction. Not sure it deserves the hate it gets, but it is weird.

Presentation: Capped and corked 750 mL bottle. Chilled since purchase and poured into some Hill Farmstead stemware.

Appearance: Darker yellow to medium orange in color. Not much in the way of carbonation, but there are some light fizzy bubbles on the first pour.

Aroma: Huge musty character upfront. Lots of barnyard funk, definitely tastes a lot like Fantome yeast. Some savory character from the peppercorn. Some smokiness as well. Really odd combination.

Taste: The must and funk character really hits hard upfront. After the inital funk character, there is some light citrus and green apple. Slightly tart. The tartness is offset by a touch of peppercorn and a really strong smokiness. Colder, the flavors really don't come together at all but it gets nicer it warms.

Mouthfeel: Light bodied with some really light carbonation. Definitely undercarbonated for the style, but it doesn't hurt it much in my opinion.

Overall, this is not my favorite beer from either brewery. The musty character really is overpowering and the combination of that, the peppercorns, and the smoke creates an odd profile. Really improves as it warms, but still a dissappointment.

BOTTLE: Has a paper ribbon over the pry-off crown cap bearing the logos of both breweries involved. The crown cap covers an internally housed cork (in classic Fantome fashion, though breweries like Schneider Weiss and Cantillon also do similar things with packaging). Green glass (ugh...). 1 pint 9.4 fl oz format. Purchased at BierCaB's shop in Barcelona. Abundant yeast/lees are plainly visible at the bottom of the bottle.

Served cold into a tulip and allowed to come to temperature over the course of consumption. Reviewed live as saison per the label. Given the breweries involved, I couldn't be more excited to try this.

6.50% ABV. Brewed & bottled at Fantome. Imported by the Shelton Bastards.

Doesn't gush upon opening. Good sign.

HEAD: Off-white colour. ~3cm wide. Not the most robust or thick consistency I've seen, but even throughout. Leaves no lacing as it recedes, which takes only a disappointing ~1.5 minutes.

BODY: Murky and turbid, revealing its lack of filtration. Looks a bit like stale orange juice given its dull orange colour. Not a vibrant body by any stretch.

Appears aptly carbonated. Not a unique or special appearance for a saison - especially one from the best saison producer on the planet (i.e. Fantome).

AROMA: Funkiness is evident - brettanomyces is in charge of this beer. Faint acidic character is evident, but I don't detect any lactobacillus, pediobacter, or other bacteria. Has a bit more hop presence than most Fantome beers - plenty of subdued fruity notes. Tangerine, melon, maybe orange juice. The coupling of funkiness and acidic character almost indicates brettanomyces lambicus in addition to the requisite brettanomyces bruxellensis, but I'm not willing to make that leap given the lack of any sourness. Hints of cedar, dry fruit peel, white pepper, yeasty spiciness, Belgian ale yeast esters, and faint apple.

Aromatic intensity is moderate. Suggests a balanced acidic dry brew, but what I'm really missing is Fantome's signature complexity and intricate spice profile. It is adequately complex for the style, sure, but it isn't on the stratospheric level of Fantome's finest aromas. Let's hope the taste delivers...

TASTE: Fruit-forward instead of spice-forward, this flavour profile emphasizes apple, pear, dry fruit peel (tangerine and orange come to mind, minus any bitterness), zest, and melon. Cracked grain. Malt backbone is definitely on the paler side. Hints of white pepper and some yeasty spiciness hang in the background, staying subtle but never delving as deep as spices tend to in Fantome's best saisons. Cedar character is present throughout, lending the build a natural unity and cohesion. Hop character is fruity.

Funkheads might be a bit let down; there's some mild brettanomyces (bruxellensis) funkiness throughout, but aggressive descriptors like "gym sock" wouldn't be appropriate for it.

Barnyard notes abound, but they're all rather shallow. Hay/straw, rustic spice, cedar planks left to weather in a barn (if you'll excuse the pretension that description verges on). Somewhat grassy, though not in the classic Hallertauer hop sense of the descriptor.

I can see why some would venture to say "horse blanket," but - as always - I shy the fuck away from that.

A blip of mild lactic character finishes out this somewhat complex saison.

TEXTURE: Acidity is higher than in most good examples of the style. Medium-bodied yet nevertheless refreshing. Subtly prickly (probably from the peppercorn), but not coarse on the palate per se. Dry, absolutely, but never parching or dragging on the palate. Very approachable. A biteen overcarbonated, which is rare for Fantome (especially an aged Fantome) - but I've heard reports to the contrary from many drinkers online.

OVERALL: No, it's not as intricate as Fantome's (or Hill Farmstead)'s finest work, and it seems - as is often the case with collaboration beers - that putting two great cooks in the same kitchen hasn't yielded a better dish. Still, it's a worthy addition to Fantome's lineup (even if it tends towards the bottom of Fantome's range in terms of quality). I'm glad I tried it once, but at its price point (and it's import price point is all we can go on based on its lack of ubiquity in its country of origin) I wouldn't want another. Certainly drinkable, but it's best treated as a table beer for pairing with food, not a world-class saison you should savour every sip of.

I'm not sure exactly what Hill Farmstead contributed to this brew, but I got mostly Fantome in everything. I'm also curious as to the exact spice bill on this one.

Hazy coppery color, with a good-sized, foamy, white head that retained well and laced the glass. Grassy funk in the nose, pretty typical of a saison, toasted grains, peppery spice, and possibly juniper berries? The taste was largely herbal and spicy--not quite Saison Printemps spicy, but still pretty spicy. The wife suggested juniper, and I think that was a good call, and I also detected possible notes of rosemary, dandelion, and green tea. Leafy, grassy, some wet hay, dry earthy finish. Crisp mouthfeel, light-medium body. Not something I'd want a whole bottle of for myself, but it was definitely a good one for a sharing.

A - Pours a cloudy pinkish-red with a few clear bubbles that are gone instantly.

S - Oak, tart berries, earthy.

T - Subtle tart fruit, then oaky with a smoke finish.

D - Very low carbonation and a watery thin body.

O - Light, earthy and typical Fantome oddness. Shaun needed to help this one out some more.

mint...sage smell and taste. lots of sage on the palate and not much else...a tad disappointing honestly. not bad but just not what i expect from a world class brewer collab.

overall decent not really recommended though.

Split this bottle with a friend at Reservoir in Waterbury. From notes.

A - Poured a quite lovely dark orange and cloudy. One finger of white fizzy head left very little lace and a film of retention. Darker and fully cloudy with yeast. No carbonation visible.

S - Tart grapes, smoke, grape skin, must.

T - Smoke, tartness, nice grape skin, some sweetness. Subtle flavours. Not much to elaborate on. Fruitiness there too.

M - Strong carbonation, medium body, slightly tart and smokey finish.

O/D - Neat beer. Smokiness was something I could do without probably, but the flavours were subtle, yet interesting.

Founders Doom glass.

A: Pours hazy orange color. Can't see anything through the opaque color. Thin layer of tight bubbled bright white head. Forms a collar around the glass. Seems like good carbonation for the most part.

S: Very wet stable. Barnyard. Horse blanket. Musty. Some fruit maybe, possibly peach? Also, some strange floral and/or vegetal hints.

T: Some slight pepper up front. Some fluffy creaminess. Slight funk. Like some other Fantome's that I have had, I get this weird smokey character that I wasn't expecting in a Saison. Not the typical HF yeast element either. Finish isn't as dry as I was expecting.

M: Medium bodied. Seems creamy, which is strange.

750ml bottle purchased as a single from Winooski Beverage, VT. Corked and capped.

Poured into an THB tulip, formed a 1/2" bright white head over the cloudy orangey golden brew. Head recedes gradually, with average to good lacing. Aroma is earthy muted citrus.

Taste slightly tart to start, muddy fruit in the middle, and closes dry with the underlying tart coming on again at the close. Mouthfeel is prickly yet soft over the tongue, and drinkability is pretty easy. I expected a bit more adventure knowing the talent whereof this comes, but a likable brew all in all.

Poured from the bottle a cloudy apricot color with one finger of fizzy off-white head. Lots of floaties in the bottle. No lacing left behind with this one.

Aroma was a bit musty with Belgian yeast, tropical fruit and floral notes, honey and white pepper.

The taste pretty much matched the aroma except for an added green apple and spearmint-like note upfront. A light tartness and spice to the finish.

Medium bodied and dry with a bright carbonation.

Not a bad Saison at all. I enjoyed it.

Hazy orange, visible rising carb trails, about two fingers of foam on top. Minimal spotty lacing, some arcs eventually stick to the glass, surface has a creamy texture as the bubbles disperse.

Musty aroma, horse stall hay, mushrooms, orange peel, phenolic pepper. Bread dough. Odd but somehow appealing...

Grainy malts, tart dried citrus fruit, finishes dry and pretty clean. Not overly spicy. Pretty drinkable, a simple saison with some light pepper and dried orange peel happening. Rustic, slightly tart and a little funky. This is more like Fantome than the last bottle of Fantome Saison I've had.

Appearance: Hazy peach gold. Head is bright-white with a tight bubble structure. Drops to a tiny head and slightly larger collar. Moderate carbonation on the pour.

Smell: Typical Fantome yeasty floral funk thing. Floral with a ton of fruitiness. Peach, apple skin and flesh. Yeast, some hay, damp and musty. Nice powdery yeast. Some light smoky elements. A bit more soft complexity than Fantome alone. Not really seeing much HF influence here. Light spiciness.

Taste: Lemon zest, a hint of lemonade. Soft powdery yeast and spice. Loaded with fruit and esters. Passion fruit, vague melon, and some peach. A bit of skunk and some serious grass. Lemon flesh. Sulfur. A very faint kind of smoky thing. Really odd. Almost lager yeast. Slightly sweet pale malts. Warming pushes the lemon and floral elements way up. Maybe some wheat.

Mouthfeel: A mediumish carbonation (well above what I expected from the general opinion). Light to medium body. A touch dry.

Overall: Thomas Dolby approves.

A solid hybrid of breweries. Follows closer to the Fantome line of things, but given the bottling location, it makes sense. Could have used a bit more polishing from Hill Farmstead, but it's solid.

750ml corked green bottle served in a Tank 7 tulip. Pours a hazy gold with a thin white head. Lots of citrus in the aroma. Light bodied with a good amount of carbonation. More citrus in the flavor, also some noble hops. Very refreshing and drinkable. Lots of yeast in the bottom.

Split with rudzud. Batch 2

Decent creamy smaller head decent lacing, light hazy mostly clear straw honey orange color.

Nose is pretty good, light sour funk, tart lemony, mild sweet malt, straw, lemongrass, little lemon candy and cereal, little peach like sour fruit, and some lacto funk way underneath that gets stronger as it warms. Little floral like almost dandelion.

Taste is not as good, but decent, a mild sweet candy malt starts, sweet increases and almost toasty caramel syrupy candi sugar. Then grassy notes, floral with little elder flower and hint of chamomile, and dandelion like again, mild horsehair funk and yeast, mild phenols, dry with touch of apricot like sour fruit. Mild gassy bitterness too, floral grassy flavors, just a bit earthy. Finish is dry and a bit bitter, mild sticky with light grassy floral flavor lingering and hint of funk.

Mouth is med to lighter bod, nice carb, bit crisp.

Overall not bad, not worth the price, bit pretty enjoyable unlike batch one supposedly.

Split with JLindros. This is batch 2, supposedly drinkable.

A - Poured into a Kate the Great tulip a nice crystal clear golden honey hue with a thin one finger head that leaves light lacing and a thin blanket.

S - Aromas of light barnyard, soft funk, lemongrass, floral, dandelion greens not vegetative though. Quite appealing.

T - Taste is more lemongrass and floral almost elderflower. Light peppers, faint horseblanket, potpourri, light funk, grassy fields.

M - Mouthfeel is nicely carbonated, very drinkable, clean.

O - Overall this beer, or at least this batch, is much better than the rAvg suggests. Glad to try it.

a hazy light orange pour with 2 fingers of fluffy white head, great retention.. not much lacing. smells of spicy belgian yeast, pepper, honey, wheat. the flavor is on par with the aroma with the exception of coriander and orange peel being introduced. a nice refreshing crisp light ale with moderate carbonation. nothing too special, but a standard saison nailed to the T. seriously, perfectly executed for the style. not too sweet, not too spicy, perfect carbonation, perfect for hot weather. it's so basic that it's great.. sometimes the less complex a beer is, the better.

750ml bottle corked, capped and labeled, poured into 1000ml Erlenmeyer Flask.

Pours an interesting ruddy clay color with tons of fluffy white head.

The smell is pure Fantome yeast. Very distinct dirty, musty, mushroomy smell up front that gives way to layer and layers of aroma. A slight bit of smokiness that turns into ham. Some definite bright acidity like a fresh lemon in there too.

Taste is a nicely refreshing. Good malt body with a touch of acidity to even it out, nice dry grain flavors that make it no problem to work my way through this entire 750ml bottle.

Mouthfeel is light without being watery. Full flavored but refreshing enough to keep me coming back for more.

At first when it was cold this beer leaned a bit too heavily towards the dirty mushroom flavors but as it warmed those toned down and were cut better by the acidity leading to a wonderful drinking saison. If you like Fantome yeast, you will like this beer.
