A - Light mahogany in color. About a half finger of head.
S - Malt, sugar, spices
T - A really sweet malty taste with a spicy finish
M - Kinda heavy with a lot of carbonation
D - Overall, not very drinkable. Decent to drink one, but I'm glad I don't have two.

Highland for my money is one of the most underrated breweries in the nation.I dont go out after this style to often but I like to drink as much local stuff as I can,and with this one I am glad I did.Poured into a goblit a rich amber/bronze with a sticky one finger head atop,a nice mix of roasted nuts,dark fruit,and yeasty funk in the nose,although not a big fan of the yeasty funk this was restrained.Flavors slightly medicinal with a fruit cake element to it,not overly phenolic but there is some noticeable notes in the finish.A well made beer,I liked it and would drink again.

Bottle pours a mostly clear golden amber body with a small white head. Some wispy lace is left on the goblet.

Aroma is juicy tropical fruits, floral hops, bready malts, and vague spices.

Medium body and carbonation

Taste is vague tropical fruits, possibly some banana and melon, countered by bitter floral hops, yeast, and a vague spiciness that seems like white pepper and coriander. A hint of vanilla adds some intrigue. Finishes dry and bitter.

Not a bad effort for the brewery's first Belgian style. Enjoyable.

On-tap at Taco Mac Metropolis in Atlanta.

Pours a crystal-clear copper color with a one-finger off-white head. It looks very much like an IPA and it took a sniff and a sip before I was convinced I'd been served the right beer. The head recedes into a wispy layer on top leaving light lacing.

Smells of syrupy light malts with good amounts of sugar-coated green apples, golden raisins, and dates. Good amounts of spices are also present - largely indistinct but if I had to guess I'd say cardamom with hints of brown sugar.

Tastes similar to how it smells. Sweet malt flavors kick things off and are joined quickly by solid amounts of spices. As with the smell they're hard to pin down but they have more a peppery character than they did in the nose. Fruit flavors join in shortly thereafter, dates and golden raisins with green apples lurking in the background. The fruit flavors carry through to a crisp ending.

Mouthfeel is good. It's got a nice thickness with grainy carbonation.

Drinkability is also good. I finished my glass without a problem and could have another.

Overall I was pleasantly surprised with this beer, a nice attempt at a Belgian by a brewery that to my knowledge has never brewed one before. Well worth a shot.

This one forms a solid whitish head with good retention and moderate lacing over a clear, deep coppery brew.
There may be slight notes of sugars and dark fruits, but they're masked by the hops presence. A biscuit malt with very light notes of cloves and banana are present. Most of the elements of a Dubbel are here, but not all.
The same goes for the flavor. This is hoppier than a typical Dubbel, with much less of the candied sugars/fruits presence. The hops form a solid backbone with a tasty malt backing. It's also slightly less alcoholic than I'd expect. I'm not expecting a Trippel here; this is a good beer, just not as much to style as I'd like.
The mouthfeel has a rich, creamy smoothness, a moderate carbonation, and a medium body.
This is a good beer. I question the adherence to style, though.

12oz bottle, split and served in mini Chimay goblets

A - very thin layer of offwhite foam quickly fades to a small floating island and ring. the beer is clear, dark golden/light amber colored.

S - some candied dark fruits and sugar...bit of orange rind and earthy hops...bit dull

T - some belgian yeast, candied sugar, typical belgian-ish malts. nothing surprising or even alluring.

M - very thin body, watery. lacking carbonation. flashes then gone once swallowed.

D - dubbel? not sure what to call this. drinkable? yes. enjoyable? up in the air.

A- Poured into a chalice. Pours a dark reddish brown color with an off-white head.

S- The aroma is sweet malts, dark fruits, some spices and Belgian yeast.

T- The taste like the aroma is dark fruits and some spices with some yeast in the finish. 

M- The mouthfeel is between light and medium bodied with a good amount of carbonation.

O- Overall, this is a decent Dubbel but there are plenty of better beers within this style to purchase again.

spring 2010 bottling

pours a burnt copper leaving a light amount of head. very light retention.

tons of banana and funk. hint of clove and spice.

very similar to the nose, this is very funky and full of banana. strong belgian yeast flavor. nice sweetness through out. a hint of candied dark fruit.

a bit light for a dubbel. mild to moderate carbonation.

not bad, but not something i would openly seek out often.

Pours a nice amber color bordering on garnet, with a two finger beige head, very attractive pour. The smell is also really nice, with a classic trappist yeast aroma upfront, followed by some toasted bread, fruity esters, candy sugar and spicy phenols. The taste is similar to the aroma, with some muted fruity flavors upfront, followed by a candy sugar sweetness, a bit of juicy malts, and a spicy finish that is just off-dry. The mouthfeel is full without being overbearing, with moderate carbonation that is maybe a tad much for the style. Drinkability is off the charts here, despite the ABV. This is a really nice offering from Highland, easily my favorite of their seasonals and maybe of their regular lineup as well. Buy a sixpack of this if you see it, you won't regret it.

12 oz bottle into a goblet.

Pours a clear effervescent copper, with a thin fizzy head of eggshell-white colored foam. This peters down pretty quickly; leaving just some light foaminess around the edges that leaves a touch of spotty lacing back. The aroma is honestly not giving up a whole lot to me here, as I'm mostly getting mostly just some notes of fruit and earth and some very light spice and bubblegum phenols coming out in the back. There is an also a bit of a flat grainy sweetness and a touch of warmth present but that's about it. This is a bit disappointing.

The taste fairs a bit better, being sweet with bread, light cocoa, and sugary candy notes. Fruity flavors of apple and orange add a little extra sweetness to this as well. Spice and low bittering earthy character give this some zip, as both linger with a steady dryness for a good bit. The mouthfeel is medium bodied, maybe a little fuller, with a sharp creaminess to it that fills up the mouth but still stays relatively smooth feeling. There is some light alcohol warmth presence but it seems more confined to the body, with any in the taste helping to add some sharpness to the overall profile.

The lack of a nose really hurt this one I think but things got a little more robust in the taste and feel. Not the worst Dubbel that I've put my lips to but I was expecting a little more out of this one, especially coming from Highland.

Poured from a 12oz bottle into a Chimay Goblet. Pours from the bottle a nice copper orange color, light to no white head formation. Aromas of fruit and slight hops. Flavors of sweet malt and caramel, with the malty flavor intensifying upon swallowing. No lacing at all throughout. Overall this was a nice beer that was not only easy to drink, but also had a pleasant flavor. It kind of reminded me of a Hefe in a weird way...

(12oz bottle courtesy of ewright. Thanks Eric!!). Pours a crystal clear deep copper with 2 finger off-white head. Lots of carbonation bubbles as I would have suspected from the pour. The beer looks nice, but as a dubbel, I would have expected ample yeast to be present in the pour. Aroma has dried apricot, some caramel, and papaya. Taste is sweet, but its malty moreso than the nose would indicate. The fruit does begin to reappear a bit on the finish. Thin to medium bodied with a slick texture. I seem to be able to detect some alcohol with a slight burn on the tongue. This is a decent enough beer, but not very good as a dubbel.

Notes from 10/15/2010:

12 oz. bottle at 42* into a chalice.

A: This pours an absolutely clear, light ruby color with no head, no lace, but a few carbonation bubbles.

S: It smells of bubble gum, biscuit, an authentic Belgian yeast character, some maltiness, and perhaps some figs.

T: Caramel, bubble gum, spicy yeast, some dark fruit flavors, and a touch of citrus tang come through.

M: This isn't very thick and the only lasting flavor is the yeast.

D: This is incredibly light for the style (like Terrapin Double Feature). It tastes like a light tripel + some dark fruits.

12 oz. A rather bright amber pour, minimal white head that quickly receded to a ring with whisps on the surface.

Some banana, clove, light malt in the aroma. Hint of leather and must.

Taste, upfront quite a bit of cardboard. Some malt, banana, light red fruit and caramel are hiding behind.

Mouthfeel is kind of blah, more carbonation would really help this one. Thin and muddling in the mouth. Drinkability is ok, but I wouldn't want to drink any more quite frankly.

Probably the most dissappointing brew I've had from them. I hate to say it but Highland is being surpassed by the other NC brewers, they just aren't getting better as the others do.

The new one from Highland . I was not expecting this one to be as good as it was and was thrilled to see a bottle show up. Eager to give it a sip I wasted no time at all in getting a glass filled up quickly. Very nice, light pour with a medium soft haze to it. Nice finger high head of off white comes up and over the top, settling down gently with soft bubbles around the edges and rich carbonation throughout. Nice aroma, light bready notes, hints of cloves and light grain all coming together nicely. Soft banana and a hit of spice. This carries over well into the flavor which has a nice peppery kick to it. Again mellow with everything being very well rounded and smooth. Great start Belgian here as it gives you a good sense of the complexity without being terribly overwhelming. Very nicely done. Smooth even flavor gives rise to a wonderful dry finish that really just begs to be session able.

Overall very solid. A nice light, moderately complex and well put together ale. Would have no issue with having this one again.

Dark amber in color with a small yet thick and long-living khaki head.
Interesting aroma that is both spicy and nutty with hints of banana. Kind of smells like a spicy bananna nut bread.
Lot's of flavor but still wonderfully balanced. Bread like malt backbone with lot's of candy sweetness and spices. Hints of brown sugar and fruits. Pears, apples and banannas. Kind of nutty in the finish with just enough hoppy bitterness.
The mouthfeel is a bit light for the style, but I think this adds to the drinkability. Naturally this is not in the same class as the Westy Dubble but I don't think it was intended to be. This is a good drinkable beer patterned after the Belgian style. Highland is a great brewery that I think all beer lovers should check out.

s: nice if simple aroma - mild caramelized belgian malts with a crisp hop aroma of dried citrus peel, lighter pale malts, glimpses of chalky yeast

Seven Sisters Abbey pours a clear orange tinged golden with a slightly off white head that crackles with a light pour. Aromas are fruity and spicy with a slight hop aromatic. The flavor is spiced figs, clove, and a slightly dry and bitter finish. A nuttiness pulls through mid-palate with warmth. The mouthfeel is on the lighter side of medium with good carbonation. The 6.5 abv is very well hidden.
I am not a big fan of the style, but Highland has shown they can brew pretty much any style and do a decent job with it.

Appears a transparent amber toned fold with a small white cap that quickly fades into a mild collar. Tiny speckles of lacing droop back down into the glass.
Smell is of mild grain ala Munich malt, brown sugar, and a touch of herbal hops.
Taste is of the aromas with light raisins found in the aftertaste. Grapes and biscuits find their way to the profile.
Mouthfeel is medium bodied, lightly sugary and juicy of ripe fruit.

Pours a hazy burnt orange color with smaller tan head that falls to a ring with some sparse lace.

Aroma is malty raisin bread, banana good dose of clove. Kind of dubbel meats a wheat brew.

Taste like aroma also half dubbel and half wheat. Malty bread like with fruits some raisins mingle with bananas and good dose of spice in the finish cloves and light peppery notes.

Mouthfeel is medium with lightly peppy carbonation.

Overall little confused not really a dubblel or a dunkel little bit of both.

A: Pours a medium orange/tan color with a thick layer of finely textured white head. The head quickly lowers and leaves a moderate amount of lacing

S: Aromas of tropical fruit and citrus dominate, with backgroud notes of honey and spices.

T: The flavor is complex and pretty much what I expected from a dubbel. There are notes of banana, orange, peppercorn, cinnamon, and apple. The flavor is initally fairly sweet, but the finish is dry.

M: Very smooth, with a medium body and light carbonation

D: Very enjoyable, the flavor profile is nice, and at 6.5% could be consumed very easily.
