Bottle acquired in trade with MartinT (thanks!).

Poured a medium mahogany color with a small sized off white head. Aromas of toffee, dark fruits, nuts, and light alcohol. Tastes of caramel, dark fruits, and had a brown sugary sweetness. Light alcohol in the finish (but not near the 12.5%).

FInal of three Bieropholie beers that i'm reviewing before this brewery is marked as closed.

First off, i have to thank Glouglouburp for my first bottle. I was about to have it last month when in a freak accident, it just fell out of my hands and crashed on the floor! Man it smelled so good! I thought that that was it but then i remembered z (a local ''bierophoux'' via the message board on bieropholie.com) had hooked me up with another retired Bieropholie and sure enough, he traded me his last S. Thanks z!

Shared with my wife last night while watching Changling.

Poured from a 341ml. bottle.

Appearance: Pours a very opaque brown body with some distinct ruby overtones. A thin 1 finger foam that disappears fairly quickly.

Smell: Very boozy with some wood, dark cherries and a strong sweetness. Quite the nice aroma.

Taste: Very complex flavors swirling around. Berries, caramel, wood, brown sugar and an overall sweetness that permeates the taste. It has a port or sherry feel to it. In the finish, i taste some cinnamon also laced with some whiskey(?).

Mouthfeel: Mouthcoating goodness but the body is a bit heavy. Full-bodied to the max for sure but it is a LITTLE bit much. Quite low carbonation (as evident from the almost absent head).

Drinkability: Suffers a little bit because of the alcohol heat. If you view it less as a beer and more as a digestive, then it makes it easier. Still, i'm glad i shared it and i think that's what this beer is for.

Overall: A very complex and flavorful beer that drinks almost like a barleywine more than a strong ale. A bit heavy but well worth it. I hope he brews this one again with his new brewery.

A: Reddish-brown, very little light tan head, no retention, some leg.

S: Toffee, cotton candy, dark caramel, alcohol, cola.

T: Assertive alcohol, wine, brown sugar, dark fruit, light spicing.

M: Moderate body, lower than moderate carbonation, well attenuated.

D: It's big, and after some time in the cellar it's still a little rough.

Bottle: Poured a deep ruby color ale with a small bubbly head tat disappeared quite quickly. Aroma of figs raisins with some sweet cookie dough. Taste is warming with some sweet figs, hints of cookie dough and brown sugar notes that are clearly detectable. Body is above average but could have been even more full. Carbonation is low and I believe this is the way it should be for this beer. Price is a little bit steep but considering I am able to get this type of quality around here, I don’t have an issue.

A seasonal from Biéropholie that is grossly overpriced, but that seems to be the trend these days when it comes to holiday offerings.

It pours rich and warm with a beautiful chestnut/burgundy luminescence and sports a timid cream coloured head that cannot boast record tenacity or volume but is correct for such a powerful brew.

Aromas are bold and sweet, mainly of rhum soaked fruit and a touch of sesame seeds. Sherried notes buttress the tail end of the olfactory profile and lend another dimension to the otherwise sweetish smelling brew.

Flavours are just as powerful and rather cloying with only a bitterness derived from the alcohol to balance. The same notes of sesame seeds peek through the full and chewy notes of malt and spice leaving only the slimmest of margins for a touch of dark chocolate to surface. This is a very heady and full bodied brew that would be best served as a digestif, as is suggested on the label. But, even then, I find this too cloying for my tastes.

At $6.99 per 341 ml, I will not be purchasing this again. Too cloying, lacking the complexity I would expect from such a heady brew and to be honest reminds me too much of the Eggenberger Samichlaus which is, to me, a malt train wreck.

Well first, the label says "Le Chaudron" but it was a mitake, the S is for the Bieropholie's line.

A very dark burgundy color beer with no head, minimal carbonation. The residual of the head stays and stick on the glass. Some golden hues are striking throught the beer.

Her smell is quite an experience, fruity reminding me of sweet wine like "muscat", smell of grapes, malt and alcohol. Also some sherry like flavors.

The taste is sweet, grappy, malty, alcohol warm and rich, buttery, scotch like with an end reminding us of an ice cidre.

Hell of a beer there!
