Served from a cask at Bodega. While drinking a pint, I got to talkin' to Colin, the owner of Bodega. It turns out he got to travel to Clipper City with bar and shop owners from all over. He had a part in picking the ingredients for this cask.

Appearance
This stuff isn't very thick or heavy. I didn't even realize it was an Imperial Stout until after leaving the bar and looking up reviews of the normal Peg Leg. The stuff has plenty of brown and red. The head was lose and chunky.

Aroma
The smell is pretty darn good. Vanilla comes out in a big way, but being as how the vanilla is smoked, sweetness is very low. It allows the vanilla to come out as a sweet nutty aroma, rather than a full on sweetener aroma. Coffee is also there. I'm not sure if the birch has done a lot here, but it could be factoring into the woody and nutty aroma of the overall bouquet.

Taste
A gritty chocolate and vanilla bean driven flavor is accentuated by coffee and cream. The general earthy, woodiness is here, keeping any sweetness at bay. Some smoke comes around, but is very gentle and integrated.

Mouthfeel
The body isn't extreme, but its not thin. Carbonation is low and starts fluffy. The feel is pretty gritty and powdery dry.

Overall
This little cask worked out well. Colin should be proud of getting a decent little special cask created for his bar.
