Notes / Commercial Description:
A collaboration with our friends at Jester King Brewery from Austin, Texas. Olas Espaciales is a sour saison brewed with Lime Salt and Cherry Puree. A simple grain bill of Pilsner Malt and Raw Wheat. Brewed with Amarillo, Citra, Centennial, Hallertaur, and Simcoe hops, with lime salt added post boil in the whirlpool. Olas Espaciales was foeder aged for 6 ½ months and then transferred to another vessel that previously held our La Roja du Kriek. Cherry Puree was added and then aged for another 3 months in the wood. Notes of bubble gum, citrus, and kiwi with assertive salinity and lingering cherry.


This beer is retired; no longer brewed.

Appearance: Pours relatively clear and goldenstraw colored with a two finger head; decent retention with spotty lacing

Smell: Saison-like aromatics of bread, white pepper and herbal phenols tempered by a pithy hop aspect; the salt and lime element pervades

Taste: The lime tones emerge strongly, on the palate, with the bready, phenolic element building underneath; both the salt and the pith carry the flavor profile, through the middle, with the salt and the lime bringing up the rear

Mouthfeel: Medium body with low to moderate carbonation

Overall: This is a fascinating beer (hoppy Saison with a nod to the Gose style) but it doesn't come off as advertised as the cherry element doesn't come through either in the aroma or the flavor

another creative and delicious wild beer from these guys, this time in collaboration with jester king, two of the heavyweights getting together! funky saison at its core, wood aged, with lime salt and cherries, an interesting and summery flavor combination, but it works. the lime salt and the cherries work great together, summery and interesting, and just amazing with all the hop in here, citra heavy, nice with the limes, and the minerals of the salt are great with the wild funkiness this beer has. i think the cherry is pretty subtle, it adds a little sweetness and maybe a little tang, but i get the lime zest really a lot more vividly in here. notes of white and red wine with the oak, really funky mature brett, and some vegetal hop bitterness too. pineapple and citrus and medium acidity, complex but coming together really nicely, and very much alive and bubbly in terms of mouthfeel. hard to imagine a beer these two breweries get together to make not being amazing, and while the fruit combination is definitely unconventional here, the overall be is cohesive and delicious. i just love the jolly pumpkin wild culture, its perfect in a beer like this!

I thought Olas Especiales from Jolly Pumpkin Artisan Ales was quite good. A friend sent it to me.

Look: hazy light golden yellow hue with a two-inch thick white head.

Aroma: wheat, yeast, lime, maybe some white wine and funk

Taste: There's wheat, yeast, some funk, lime, salt, maybe cherries, pear, banana, white wine, oak, grapefruit, and brett funk, very flavorful and interesting.

Feel: light to medium body, flavorful and yet thirst quenching.

750 ml bottle into tulip glass, bottled on 3/21/2017. Pours slightly hazy pale straw/yellow color with a 1-2 finger dense and rocky white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big tart lemon, lime, grapefruit, cherry, berry, peach, orange, melon, pear, pineapple, white wine, citrus peel, peppercorn, salt, oak, hay, straw, grass, leathery/musty funk, wheat, cracker, slight white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, fruit juice/spices, citrus hops, oak, and light-moderate pale malt notes; with great strength. Taste of big tart lemon, lime, grapefruit, cherry, berry, peach, orange, melon, pear, pineapple, white wine, citrus peel, peppercorn, salt, oak, hay, straw, grass, leathery/musty funk, wheat, cracker, slight white vinegar, and yeast/oak earthiness. Light-moderate fruity/lactic tartness and yeast/oak spiciness on the finish. Lingering notes of tart lemon, lime, grapefruit, cherry, berry, peach, orange, melon, pear, pineapple, white wine, citrus peel, peppercorn, salt, oak, hay, straw, grass, leathery/musty funk, wheat, cracker, white vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/spicy yeast, fruit juice/spices, citrus hops, oak, and light-moderate pale malt flavors; with a great malt/tart/spiciness balance, and no puckering/astringent flavors after the finish. Moderate dryness from tart/spiciness, increasing through the glass, Medium carbonation and light-medium body; with a very smooth, moderately crisp, grainy/acidic/tannic/sticky, and slightly saline balanced mouthfeel that is awesome. Zero warming alcohol as expected of 5.8%. Overall this is a fantastic wild/sour saison! All around outstanding complexity, robustness, and balance of fruity/funky/spicy yeast, fruit juice/spices, citrus hops, oak, and light-moderate pale malt flavors; very smooth, crisp, and refreshing to drink with the balanced tart/spicy/drying finish. Great classic JP house funk and oak presence; but not overly lactic, with dominating saison yeast and Brett character. A highly enjoyable offering.

Clear straw colored pour with a snow white head. Really nice sour barnyard aroma. Taste follows the nose with the barnyard flavor upfront backed by some light sour fruit, yeast and a hint of pepper. Light bodied and drinks really easy.

Draft pour to snifter, light haze, golden with a pastel hue, minimal head and lacing. Nose bursting with fruit and funk. Candy-like flavor of fruit with definite salt, melon. Below average body and average carbonation.

Hazy orange body, no real head or lacing. The nose is full of acidity, some funk, wood as well. The taste shines with lime and a bit of horseblanket. Cherries may be present in the acidity, but are not at all part of the foreground. Overall, tasty but I missed the fruit note I'd hoped for, and It would have added depth if it had been more present.
