Notes / Commercial Description:
This is the third collaboration we’ve brewed with our friends at Monkish Brewing Company. We went far outside the box with this one! This saison was brewed with raw sugar, green lentils, sweet and bitter orange peel, and a funky homemade curry spice blend (cumin, ginger, mustard seed, peppercorns, coriander, and fenugreek), giving each and every sip its own unique complexities! Aromas of brown sugar, oak, and funk in the nose. Tastes of oak, maple syrup, and just a hint of spices pairs well with the subtle funk, and light tartness.

750 ml bottle into tulip glass, bottled on 12/19/2017. Pours slightly hazy deep golden amber color with a 1-2 finger dense and rocky off white head with great retention, that reduces to a small cap that lingers. Nice dense soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big lightly tart lemon, lime, orange, citrus peel/zest, peach, pear, red/green apple, melon, white grape, coriander, peppercorn, cumin, ginger, mustard seed, oak, hay, straw, herbal, floral, grass, maple syrup, brown sugar, cracker, white bread dough, light leather/musty funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/spicy/light funky yeast, spices, oak barrels, and pale malt/sugar notes; with great strength. Taste of big lightly tart lemon, lime, orange, citrus peel/zest, peach, pear, red/green apple, melon, white grape, coriander, peppercorn, cumin, ginger, mustard seed, oak, hay, straw, herbal, floral, grass, maple syrup, brown sugar, cracker, white bread dough, light leather/musty funk, and yeast/oak earthiness. Light-moderate peppery yeast spiciness; herbal, floral, grassy bitterness; and slight Brett tang/tartness on the finish. Lingering notes of lightly tart lemon, lime, orange, citrus peel/zest, peach, pear, red/green apple, melon, white grape, coriander, peppercorn, cumin, ginger, mustard seed, oak, hay, straw, herbal, floral, grass, maple syrup, brown sugar, cracker, white bread dough, light leather/musty funk, and yeast/oak earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/spicy/light funky yeast, spices, oak barrels, and pale malt/sugar flavors; with a great malt/bitter/spiciness balance, and no astringent flavors after the finish. Light-moderate increasing dryness from bitter/spiciness. Medium carbonation and body; with a very smooth, moderately creamy/bready/grainy, fairly sticky, lightly tannic, and slightly acidic/tangy balanced mouthfeel that is great. Zero warming alcohol for 7.6%. Overall this is an excellent spiced wild saison. All around great complexity, robustness, and balance of fruity/spicy/funky yeast, spices, oak barrels, and pale malt/sugar flavors; very smooth and easy to drink with the mellowly bitter/spicy/tannic/drying finish. One of the more unique spice lists I've seen in a saison yet. Extremely well balanced Brett/saison yeast complexity, spices, oak barrels, pale malt/adjuncts, and sugars. Not quite as tart/funky as most JP, but you still get a solid amount of their classic house character. A very enjoyable, unique, and well made style example as expected. Not overdone on any aspect.
