Heritage Cider

Typically made from heirloom, cider-specific apple varieties with bittersweet or bittersharp character, Heritage Ciders are usually higher in tannins than Modern Ciders. Yellow to amber in color with a fairly wide range of possible clarity, these ciders offer complex aromatics along with perceptible bitterness and astringency. Heritage Ciders can be found in Northern France, Northern Spain, the West Country of England, Germany's Hesse state, and various parts of the United States.
