Ice Cider

Sometimes referred to as dessert cider, Ice Cider has its origins in Quebec and is produced by either freezing apples before pressing or freezing juice and pulling off the concentrate as it thaws. Ranging in color from brilliant gold to dark amber, Ice Ciders are sweet, fragrant, and high in alcohol with a full body and just enough acidity or astringency to keep the sweetness in check. Artificial refrigeration can be used to make this style, but in the US, only ciders produced by natural freezing outdoors can be labeled as Ice Ciders.
