Im not a "huge" fan of Chimay Blue, but Costco is selling it for $8-750ml so I had to buy. I plan on cellaring them for awhile. Have any other people that weren't too impressed by Chimay been changed by trying a cellared Chimay and how long was it aged?

Also gonna age Adriaen Brouwer, kinda feel the same way bout this beer

I think they're both very good, they just dont have the complexity I was looking for

After multiple vintages, I'd say that I prefer the counterparts when it comes to cellaring. The body on Chimay seems to be a little lighter than with the others. As of last year, vintages from the late 90's were still good, so it isn't like the beer will be terrible. I would personally buy a couple cases at $8/bottle and open them periodically with friends or wine drinkers over the next decade.

Do the corked 750mL's age differently than the stubbies?

Bottom line is that for some time now Chimay recommends about 4 years aging before the Blue begins to deteriorate. Not like the olden days.

How so?.....will the stubbies hold up better?

Apparently yes. The smaller crowned bottle will virtually guarantee that the beer will last for sometime without deterioration but the bigger bottle preserves the beer in a gentler, softer and fresher manner. Problems is the cork isn't as reliable as a closure compared to the smaller crowned cap bottle.

Cool. Because my cellar fridge has a little shelf across the back that only those stubby bottles fit on.
