What's the best style to pair with buffalo wings?

I like ambers/reds and not-too-hoppy pale ales. Sometimes a cold porter hits the spot. Not a fan of hoppy IPAs with Buffalo wings. The bitterness of the IPA with the spicy wings is not good IMO.

I'm also a fan of using amber ales with wings. While hoppy beers can cut the heat, the bitterness doesn't always blend well with the spices and sauces of wings.

I usually tend to go for stronger lagers - Maibocks have just enough clean hoppy notes to cleanse the palate but have a nice inherent sweetness. A well-done Vienna lager or even a more sturdy pilsner balances nicely too. I lean toward more balanced beers that can cut through some of the heat without being too overwhelming.

Something light and bubbly that burns the tongue. A middle of the road amber would help get the heat down, if you're into that sort of thing.

anything that is not too hoppy and bitter. Lighter beers, wheats, etc is what I would pair to go with it.

Just had some hot wings with a stout. Not the best combo. Next time i'll try a wheat brew.

I use Ayinger Ur-Weisse or likewise beers. The banana/yeasty flavors seem to help sooth the heat from the buffalo sauce.

It seems like IPAs and spicy food are a combo that most people love or hate. Stone IPA and wings is one of my favorite pairings. I suspect a Maibock (as has been suggested) or a Maerzen would work well-I'll have to try those soon.

I'm a fan of Fuller's London Porter with my hot wings. It kind of gives a chile-chocolate flavor that I enjoy. However, a nice Sierra Nevada Pale Ale works as well.

I think it's more a reflection of the popularity of IPAs. If you look through this forum, you will see that at least one person suggests an IPA for nearly every pairing request. No other beer style is consistently suggested as a great pairing for food.

Maybe, but I think for a lot of people it's not just a matter of IPAs being the best beer for spicy food, but more a matter of spicy food being the ideal pairing for an IPA. The particular intensity of a hop bomb ans the intensity of spicy food play off each other in a way that is enjoyable to some and over the top for others.

For my part, I'm pretty burnt out on IPAs, and even when I was really into them would rarely pair them with food, as they tend to overpower whatever you're eating. Wings are the main exception to that rule for me.

For BWW mango habinero I go to Bass pale ale. Smooth, cleansing, not too malty/hoppy

Lighter flavored lagers and wheat beers. Nothing too hoppy.

Since milk is supposed to cool the taste buds after spicy foods, how about a milk stout?

The hoppier the better. The hops help add to the sting from the heat.
