    PancakeMcWaffles posted in a past thread: “Waldhaus is a regional brewery in the Schwarzwald area (not far from the Rothaus brewery if I remember correctly) and the brewpub in and around Karlsruhe is Vogelbräu (also mentioned as an inspiration). Their Pilsner is at 50 odd IBUs.”

    Also, Jim confirmed in direct reply to you, below, that Prima is still >50. Not sure why you repeatedly choose to ignore these facts.

    Jack we are only as good as the beer we can buy. If we had beers to compare in the style that weren't laden with hops to accommodate a trendy palate then we should have pilsners like the wright pils, and like sly fox pikeland pils. Talking to the brewer doesn't seem real to someone like me and I love that some of them actually spend time here.

    A german pils should be dry and crisp with a lingering bitter. Hallertauer, tettenang and saaz hops. No fruity esters, malty and grainy. Noble in bearing. Yes?

    cave trolls are BIGGER, meaner. have a cool dry place to store our beer.:grinning:
    we tend to eat those that disagree with us....:grimacing:

    I always like these unfounded assumptions that you can't like hopped-up beers if you understand and enjoy a great, malty lager. If it makes me fickle, so be it. At least I've never drain-poured a Bigfoot! :stuck_out_tongue:

    Are you goddamned kidding me? Where is this? Why does such a lovely, bubbly, sunshiney thing like beer seem so right in a dark, dank cave? Shit.

    Believe it or not, you can buy your own personal beer cave in Franconia. Then the local brewers will fill your kegs for you right from the lagering tanks, and you just transport the beer down there for storage (and drinking). Stays a steady 8 degrees C down there. Cost per liter: about $1.

    Jim Busch posted in a past thread: “FWIW a long time ago I know Prima had been tested at 52 IBUs, so back then it was just north of the BJCP limit of 50. Not sure what the latest specs are.”

I have had many BA conversations with Jim Busch (BA Starkbier) on a variety of topics. Needless to say but a number of those topics were Victory Pilsner related (Prima Pils and the Braumeister series of beers). Jim is a true gentleman and he has always responded to my numerous queries. If there is something on your mind you should feel free to start a conversation with Jim. He has always been forthright and open in his communications with me.

    To me a ‘good’ German Pilsner style beer is a combination of noble hops (noble hop flavor/aromas) and Pilsner malt flavors (which I sometimes describe as grainy).     OK, yes. One more time.... Just so I'm 100% clear on this. Where you say on July 31, 2013, that "Victory does not publish the IBUs of Prima Pils" and Jim (Starkbier) Busch replies directly to you: ">50" -- you DO NOT interpret that as him saying what the latest specs are, correct? How often to you check the specs? Weekly? Just trying not to lose my mind completely here....

    RE: Prima Pils, check out the episode of Brew Dogs (ep. 3) when they visited Victory and Bill said something to the effect of they got a lot of flak about Prima Pils because it was considered to be too hoppy for the style.

    Yeah, the lab checks IBUs all the time and we do make adjustments since the AAs of the bales varies. In fact when you get a bale of Tettnanger that says 5.2% or something, thats a sample from like every 50 bales, so its an estimate to begin with. Im quite certain Prima is still north of 50BUs but frankly I have not asked the lab lately. Makes sense if you think about it, HopDevil is around 65BUs but has a large Vienna and caramunich malt base to balance while Prima showcases Bamberger Pils malt.

    Looking forward to the new beers, including dry hopped Pils and a Sticke Alt! Oh yeah, those will be fun and I doubt they will suck at all. ;-)

    And I never meant to imply that any of your beers "suck." On the contrary, I have immensely enjoyed most every offering I've had from Victory (favorites being the Braumeister Sladek Pils, Victory Lager, and Headwaters).

    My only argument is with those who claim Prima resembles typical Northern German pils or German pils from the 80s and 90s. I have drunk literally 100s of such beers at the source -- during a time period spanning 4 decades -- and believe I am well-qualified to judge in such matters. And FWIW, I fully trust that Prima may closely resemble a beer like Vogelbrau Pils; but that beer is brewed expressly to be an anomaly and as such is hardly representative of the German pils style -- from any geographic region or time period.

    Cheers to you -- and to your new beers! (EDIT: I have no doubt, in fact, that I will be buying at least one 6-pack of your Sticke Alt -- the German style with the highest IBUs of all!)
