SWTFYW Hints and Hauls!!!

    Same here (other than the potential house). I used to brew a bunch but had to cut way back to almost nil once I had to move into a small apartment. Not so much room for brewing here. Last one I made was an experimental apple ale with a brown ale base. Used some home-made fresh-pressed apple cider as a replacement for some of the water in the boil and used roasted apples and cinnamon both in the boil and secondary fermentation. Turned out much better than I anticipated. Wish I had made a full batch instead of just a half batch due to space, but what can you do. Wish I had more time and space to go to all grain. Maybe someday when I have a house or something…

    Not much but I got it on the back end. In all honesty it was one of the smoothest I've ever had.

    I had the same original trade and @richardflyr absolutely killed it. Amazing guy.

    And @Houser your box is going out this week. All those pictures make me want to try the gratitude you sent, but I'm holding off for a tasting. Thankfully the single digits temps have just turned into single digit (6") snowfalls so I'm not worried about your beers becoming beersicles like this anymore. (Drink faster you fools!)

    I ran out of room in the box for extra lumber so hope your porch is sturdy (though judging from your hauls it should suffice)

    Not a bad day so far.
    I went to order the food for Christmas Eve, had 2 BCBS and a BCBBW while there (4 oz pours).
    Came back, went out to get a Christmas Tree, stopped on the way home and had KBS on tap.
    Time for a power nap before watching Army/Navy play in the snow.

    That sounds pretty damn good. If I could figure out the all grain version of the recipe, I'd give it a shot myself. If/when I do, I'll send you some.

    Which game is this from? I was in Chicago for the Cowboys horrendous performance against the Bears and saw plenty of beercicles in the upper stands.

    I made the recipe from scratch based off a conglomeration of other recipes I found online, so I can't even direct you where to look for it. But I'm pretty sure I wrote it down and filed it somewhere. If I can find it, I'll send you it as a reference to build an all-grain version. Stupid past me thought oh hey this will never work, let's just throw things together and see what happens. Present me thinks Dammit past me why are you such a dumbass and didn't write all the specifics down?

    Sounds as if you used a base brown ale and replaced half the water with homemade apple cider. Of that's the case, I'm sure I can figure it out. Wonder what it would taste like if I replaced the brown ale with a porter.

    In essence yes. I thought I for sure scanned it or wrote it down, but no dice :slight_frown: Of course I find pictures of myself brewing said beer, but not the actual recipe…

    In addition to the brown-ale base and replacing the water with fresh-made cider (we actually ground and pressed the apples ourselves - key since most "natural" "fresh" ciders you buy have a lot of preservatives) I peeled/chopped apples and added it to the boil along with some cinnamon sticks. And then when I racked it to the secondary fermenter, I took about 3# of apples and roasted them in the oven and then added them to the secondary with a couple more cinnamon sticks. Probably would've been better to make more of a mash than use the chunks like I did, you know for surface area and all (it's science!), but still turned out ok. First taste after a couple weeks in the bottle was really heavy cinnamon so I was really worried I ruined it, but I let it sit for a few more weeks and it mellowed out and was a lot more balanced. Almost like a mulled apple cider crossed with a rich malty ale. I surprised myself. And with a smart person taking charge, I can only imagine how much better it would be.

    The porter idea is interesting… It could be a very good complement with the deeper roasted notes as long as its not so strong to overwhelm the apple taste, which admittedly can be a little weak. Give it a shot!

    Just walked 3 blocks (each way) in the snow, uphill, to have 2 more KBS's--convinced my wife it would be a romantic walk in a winter wonderland:grinning:.

    Have you ever burped and have it be almost puke? I did that on the way home and it was KBS almost puke and it was really good.
