    Hahahaha love it. I also think I am naming my PseudoSue clone "Baby Citra" or something. If it's good, the bottles will be getting labels as well!!

    I haven't tried anything in the upper teens, but probably good to start with the same yeast you'd use for a different, lower gravity imperial stout, to get the right profile. Just make sure you pitch a considerable amount from a raging starter. If (ok, when) it conks out, repitch champagne yeast or something else with a very high alcohol tolerance that won't itself impart too much to the beer.

    Our hand corking machine from Switzerland broke and had been at a machinist shop for the past month or so. We plan on corking most special releases like barrel society but will be moving to caps for more of the regular lineup beers. Cheers!

    So The Hairy Chihuahua was created on Untappd for the bottle share. Since January, I've checked in 162 beers at The Hairy Chihuahua, my bar in the basement. Another 30 beers or so and I will equal in 6 months or so, what you alcoholics checked in in one night.
