Bruery 2014 RS/HS Allocations

    What is the tipping point ABV for it to not ne as much of a worry? Mash was 12.5 last year. Would that not be high enough? Maybe over 14%?

    I'm sad that there was a problem again but I consoled myself by buying another bottle of Grey Monday.

    White Chocolate clocks in pretty high on the abv scale and it still got toast. This be some super lactos strain. The outbreak monkey of strains.

    You can't hope to stop it, you can only hope to contain it.

    White Oak Sap was the problem child that took out White Chocolate and Cacaonut. They can claim it was the adjuncts but they admitted that WOS was more tart than years prior.

    Possibly, but that should've also infected Melange #3, which seems to have come out fine (although I haven't opened a bottle in a few months). There are a couple of potential scenarios here:

    1) White Oak Sap was the culprit, which would explain WC and Cacaonut. However, they ran through the infected barrels with those beers and moved on to an uninfected stock of WOS for Melange #3. Entirely possible since WOS seems to be one of the beers they brew throughout the year and keep around for blending projects.
    2) White Oak Sap was not the culprit. It could have fermented drier than prior batches, due entirely to the yeast rather than an infection, and WC and Cacaonut were then infected by adjuncts. Also entirely possible.

    I'm not sure I'd bet one way or another with the limited information we have.

    Occam's razor would point to a bad base beer rather than two infections due to separate incidents of tainted adjuncts. Melange #3 is made up of three different beers and two of those showed no signs of infection. #3's ABV is around 15.5% which is higher than WOS and anniversary ale and without knowing the percentage of the beer or the blending order it could be that the ABV killed all the lacto or the amount of the blend constituted by WOS is not enough to cause noticeable souring in a reasonable time frame. It would be interesting for them to test some bottles and see if they are stable though.

    They've been doing them on the first Monday of the month, so I would assume July 7th.

    That's a misapplication of Occam's razor. The idea of a shared base beer is no simpler an explanation than the idea that the Bruery is unable to properly sanitize cacao nibs. Additionally, the Bruery presumably has a whole host of lab information at their disposal, including tests before and after the addition of cacao nibs to identify the presence and strength of bacteria. While they have been unable to remedy the situation, they do have a whole lot of information to assess the situation that we do not, so we're making a LOT of assumptions and guesses.

    Granted, arguing with complete information is pretty much the whole point of internet forums, but that's another topic entirely.

    Cacaonut was 15.6%, so the idea of a 15.5% ABV blend killing the bacteria is probably not a viable scenario. This discussion has piqued my curiosity about the stability of '13 M#3. I have no reason to suspect it's infected, but I am sticking a bottle in the fridge to open in the next couple days.

    I opened a Melange 3 yesterday and it was noticibly tart. Not sure if its going bad or if was the original batch of white oak sap that made it that way

    Asepsis needs to be in effect to some degree. Gloves, coveralls, hairnet.

    Anyone get a Wanderer in the cellar sale? Just logged in and they weren't there. Was only able to get 1 Bottleworks and 1 SitR w/K.

    Did MW and Wanderer sell out instantly during the cellar sale? I logged in at 11:01 and they were not showing up.
