Infected 2013 White Chocolate was AMAZING

    An open letter to the Bruery:

    Dear Bruery,

    After some talk about 2013 White Chocolate not being infected and just being a little bit tart, the beer is now confirmed as infected and it is a whole lot of tart. And it was delicious. Please make a sour version or start selling old bottles at a cellar release. Age this beer at fermentation temperature and let those wild critters work their magic. How have you never made a vanilla chocolate sour aged in bourbon barrels? Its a match made in heaven. After all, even when this beer is infected, its still infected with your world class sour yeast culture. The beer had so much body that it dried out perfectly and the vanilla and chocolate came through just right. Yeah, I stored the beer warm but I'd do it again and again if it produces such a great sour.

    In conclusion, please sell infected 2013 White Chocolate bottles. Heck, even give us a discount. Because the best sour I have had from you this year was my infected 2013 White Chocolate and dam it I want another bottle.

    I felt the same about Abyss 09. Damn good beer and I wish I had one left to see how the infection played out. I can remember in '12 I got a lot of cherries from the 09, just as you might have with CR I imagine.

    I'll search out a bottle of 09 Abyss and check it out. Accidental sours should be a new beer style

    I've never tried that vintage of White Chocolate, but I've heard it's terrible.

    It is atrocious. Or was at least, I haven't touched a bottle in about a year. I have a hard time believing it turned into a delicious sour - especially the best sour the Bruery has produced - but I don't think I disposed of my bottles so I guess I'll have to try one.

    I could see it developing into something cool, but over time. A few months in it was not pleasant, so I poured it then got a refund. I would have liked to have held it and seen the results if I did't open in hopes it was still good.

    yeah. For the first year, maybe two in the bottle those wild yeasts start to work on the sugars and turn them into straight sourness and the brett will start to break down some of those strange phenols and turn them into more mellow fruity sour flavors. The beer is definitely at its prime now through probably the next year, then who knows. But I would bet it was way too harsh to drink in the beginning. I'm glad I waited to let those sour bugs mellow out

    @cultclassic89 @allies_dad @Jvrdz24 and I cracked one of the 2013s at a share recently. I don't think any of us thought it was bad. I agree that it was almost tastes like they were going for a sour wheat wine. Our palates may have been off since we had just had an Upland lambic, but I wouldn't mind trying it again.

    @BrotherDylan that's cool man. I was gifted a 2013 WC after the Bruery put it back on the shelves as a little tart. Knowing it was "infected," I thanked my brother and told him I'd age it for a few years and open it with him the next Christmas he could come back down to TX. He won't be here this year. I hope more chime in like @EA728 on whether its now worth drinking.

    @EA728 An Upland Lambic will absolutely destroy a palate with sourness. Its a dam good beer but I hear what you're saying about your pallet being wrecked. The WC is a little more subtle.

    @tx_beer_man I think you'll dig it. its ready to drink now but let me know how it tastes next Christmas when you open it. It looks like 2013 WC is turning into some mad beer science experiment.

    i thought infected White Chocolate was delicious. I too sent them an email urging them to make a sour version.:grinning:

    It wasn't bad, but it wasn't awesome.

    I drank most of the bottle alone, shared some of it, but others didn't care for it. Would have loved to taste it as it was intended though, that would have been delicious.

    Its pretty spectacular as it was intended also. Truly a beer so good even when spoiled its good. Luckily they produce it every year but it sucks for those who had to go to great lengths to get a bottle and it showed up sour. I'm a spoiled Californian but the fact that you were able to drink most of a beer gone bad speaks volumes about the beer. Most of those are one sips and down the drain as trumpets play "Taps" in the background.

    I traded for it, so I wasn't about to drain it.

    That said, I love sours, and while not a world class, or even average sour, it wasn't terrible enough to warrant giving it to the sink.
