Who's Brewing This Weekend - 12/5-12/8 Edition

    Didn't see this thread started for the weekend yet, so I thought I would kick it off by saying I will not be brewing this weekend. I will be subjecting myself to drinking 12+ samples of Bud Lite dosed with specific off flavors that make it taste worse than it already does. BJCP off flavor study tomorrow afternoon, YAY! Outside of that, nothing much going on brew wise. Need to step up a couple vials of yeast cultures.

    You need one of these for this weekend: http://ontapbeer.com/ ! Kidding... I've never tried it before, but anything to hide the bud light flavor.

    I've got a big starter going now with some WLP001, gonna step it up once more tonight for the big brew on Sunday. I'm brewing an Old Rasputin clone, tweaked a bit. Substituted 1.5 lbs of Cherrywood smoked malt for some of the pale malt, and am debating adding some cold-pressed coffee at bottling. We'll see.. I'll let you know how it all goes though.

    I plan on brewing twice this weekend after not brewing for the last 2ish months. I want to brew a saison tonight, off the top of my head the grain bill is something like 75% Belgian Pils, 20% rye, 5% Carahell. 10ibus from Styrian Goldings. I will use a vial of ECY03 and toss in some Jester King Atrial Rubicite dregs to get some nice depth of sour and funk. OG about 1.045. Mash about 152*. I am hoping this will be ready to drink in the May/June timeframe with any luck.

    I would also like to try my hand at a Patersbier. I never do SMASH beers and if there is one that sounds intriguing enough to get me to do it, this is it. 100% Belgian Pils for an OG of about 1.045, Saaz to about 20 ibus, hoping to pick up a vial of ECY09 Belgian Abbaye. If not, I will grab a White Labs Belgian strain.

    Not brewing, but bottling my coffee vanilla stout tonight; while throwing back a few, of course.

    I will be brewing my second batch. I'm sticking with the kits until I get the hang of things. I will be making the brewers best Black IPA. I will check the SG of my first batch. If it is at the final gravity reading I will bottle it. I made the Amber kit last Saturday so it will be 8 days on Sunday. Busy day but it will be a lot of fun.

    Bottling a Citra-heavy DIPA. So far it tastes awesome. Hopefully it stays that way a month from now.

    Today:

    Brewed Mild Ale (2.9% ABV).
    Bottled Foreign Extra Stout (8.2% ABV).

    Tomorrow:

    Brewing Standard Ordinary Bitter (3.7% ABV)
    Bottling Southern English Brown Ale (3.5% ABV).

    Not brewing, but racking my oatmeal stout into the secondary. Removing the cinnamon sticks and dropping in 8 vanilla beans for another few days before kegging. I wanted to add rose petal water to the secondary but we shall see.

    My stir plate is whirring with 3787 . . . a Belgian IPA is in the works for Sunday. Just got my bulk hop order, will introduce Azacca hops to the magic of estery yeast. Finishing fermentation of a Saison and dropped some dry hops in a smoked Amber Ale. Just realized my keezer is full and the pipeline is still spitting out kegs . . . so many beers and so little time . . .

    Eight vanilla beans sounds like a lot. Just brewed a winter warmer with two vanilla beans for a week and a half, and it imparted tons of vanilla flavor I scored them long-ways. YMMV, though.

    I might get bored and brew up a sour or something. Pilsner, Pearl, Crystal 10 and some Oats.. I have some ECY20 Bug County sitting around, or perhaps some Farmhouse sour saison to use.

    If I want quicker turn around, thinking the farmhouse sour, maybe a really low OG, super dry and blend with my wine barrel sour wild ale to cut the booze a bit.. Working on some blending sours to use with my other bases at this point.

    Otherwise. Keg cleaning, which sucks.

    Brewing a schwarzbier tomorrow. Making the yeast starter tonight. Anyone have any input on how to achieve a darker color without adding too much toasted flavor to the brew?

    Midnight wheat works.. Carafa II or III will work fine as well.

    More specifically, dehusked Carafa II or dehusked Carafa III. aka Carafa Special (II or III).
