That's a hell of a box from a heck of a BA. Had some great trades with @JavaNoire

 

I pricelined a hotel in the Gaslamp so staying right down there but have a car so can get around and planning to do little day trips and excursions. Just have to be a little choosy with the wife being preggo so was trying to get a little more local perspective on where to focus my choices

Ok well then basing it off of time here's what Id say.

Within about 5-10 minutes of you depending on traffic:

Bars - Toronado, Hamiltons, Blind Lady, Tiger!Tiger!
Restaurants (so the wifey can eat while you drink) - Slaters 50/50 and Stone (both are in Liberty Station), maybe even pacific beach bar and grill.
Breweries - Modern Times, Societe, Council Brewing, Mission, Saint Archer
Bottle shop - Best Damn Beer Shop

If you can venture out about 20-30 minutes north (depending on traffic)

Bars/Restaurants - Urge Gastropub and Phileas Frogs
Breweries - Ballast Point, Alesmith, Mike Hess, Karl Strauss, Green Flash
Bottle Shop - Distillers Outlet

If you can venture about 40 minutes north (could be shorter depending on traffic) -

Breweries - Lost Abbey/Port Brewing, Hop Concept, Stone (this is the main one)
Bars - Churchills.

If you can venture about 30 minutes east (shorter depending on traffic) -

Breweries - Alpine

The wife's cousin lives in SD, so we visit at least once a year and as @Haywire mentioned, one of my fav spots is Blind Lady. good pizza, great tap lists for the most part and while usually busy, still kinda low key.
