    I'm just not familiar when the sour cherries hit. I don't want/like to use some canned shit puree, or something. Ideally.. pitted, and whole sour cherries would be perfect. I'm going to freeze and vac seal, and then hit them with the immersion for a couple seconds before adding to the barrel, or fermentor.

    Im sure I could find them online somewhere, just not sure WHEN to look and what I look for. The cherries would add the perfect layer to this stout.. it's already go the cherry pie flavor/aroma from the wild yeast/bacteria. The oak is gonna add the vanilla and toasty notes.

    I'll ask next time at Schramm's as well, know they use a ton of them for their meads. Not sure when they are in season either, but most the cherry festivals are in July.

    So July is likely.. which would be... PERFECT. I could have this on the oak for a while relatively.. and then have the cherries in July/Aug..

    We all could be drinking this early fall..

    EDIT: Thanks for looking into this.. Trying to find some high quality to go with this beer.

    Sour Sunday

    Not as sour as I was expecting but this is the definition of a perfectly balanced Brett beer.

    Your descriptions alone will prevent that. I think my homebrew is pretty decent and I couldn't describe it like you describe yours with a straight face.

    How hard is the BackAcre stuff to come by? I have been told that I need it in my life, and I believe that to be true.

    18th Street Brewery had a special event for all the "Local One Eight" members (helped fund them on Kickstarter) last night and it was basically a huge bottle share inside their 2nd building where they house all the barrel aged beers called "The Vault". Drew (owner/ brewer) let us know about their Barrel aged Pre-DLD event, future plans & such.

    Had an awesome time, got to shoot the shit with Drew a bit, and try a bunch of beers (including a new barrel aged brown ale with dates :grimacing:). Couple pics from the night:

    Table with some of the bottles for the share (Drew is the dude in the yellow);
