St Bernardus Abt 12 - from fridge to cellar?

    I'm hardly ever on this forum so sorry if this questions been asked before.. But a friend of mine brought over 2 big bottles of St Bernardus Abt 12 and my wife put them both in the fridge while I was gone. I was wanting to enjoy one now, and wait on the other for a few years. Can I still take one out of the fridge and cellar it in our basement? Don't know if having it go from room temp, to cold, then back to room temp would affect the flavor at all. TIA!

    No problem doing that, just want to avoid super heat swings....like say if you kept it in your car on a 90 degree day, then fridged it, then put it back in your car on a 90 degree day, then fridged it, etc.

    Personally, i will put cellared beers in my fridge thinking i will drink them that day...and then end up not....put them right back in the cellar and when i get back to them they are always fine.

    You'll be fine. Do you think it was held at a constant temperature on whatever ship it traveled from Belgium on? Probably not.

    Good point. Same goes for sitting on the shelves for however long.. I've just never gone from 'cold to warm' with a beer before. Just making sure I don't skunk up a precious liquid. Thanks!

    "skunking" will only come from light exposure, not temperature change. With aging beer, it's too much oxidation that is typically going to lead to off-flavors.
