Fermentation and convection have stopped after 48 hours

    Brewed a session IPA on Sunday. Monday morning, fermentation was going strong. Tuesday morning bubbler was kicking hard, almost 2 times per second. Tuesday night, nothing. Done. Checked to see if there was still some convection going on, and no movement whatsoever.

    I want to dry hop this guy, but I like to do that before convection stops to move those hops around a little. Do I have reason to worry that after 48 hours there is no movement? When does convection typically stop?

    Since people usually like to know, it is a partial extract brew with steeped grains. Yeast is US-05, 3 packets rehydrated. OG was 1.052 (lower than the 1.054 estimated). Fermentation temp has been at 71 to 72 degrees. I have not checked final gravity yet. Last time I brewed this, FG came in at 1.008, lower than the 1.016 expected.

    Not really.

    It varies. And just because you don't see wort moving doesn't mean attenuation isn't still happening.

    I'd wait a few more days and do that. Then again after 2-3 more days.

    That seems like an awful lot of US-05 for a 1.052 OG beer...and 71-72*F could really be 75-77*F depending how you are measuring...no wonder it is finishing fast.

    One packet of US-05 is plenty for five gallon batch of 1.052 OG. That said, three shouldn't cause problems.
