    OK, full disclosure. I've been known to add green onion, jalapenos, and Frito's on top of my chili all at the same time.

    Totally depends on my mood, a lot of times it's cheese, white onions & what ever crazy hot sauce I have around ( the family never lets me add any to the pot. Wimps! ) I tend to tone it down more as the weather heats up...

    Ok, so I added hot giardiniera and decided to chop up some of the sausage and throw it in the chili too with more Goldfish. In the end, the chili has become more powerful than before.

    I personally like using Sambal Oelek chili paste in chili and stews.

    I like adding sausage as a base meat or & venison. I was spoiled in Colorado I had a couple friends & neighbors give me elk sausage, as they would end up with so much meat from some of these Bulls they were harvesting, would've loved to get more steak, but I understand. I guess if really wanted more, I would've put in for a tag...
