Airlock started bubbling again after 11 days....infection?

    Your head is in the right place but I have a minor correction:

    If it has changed, fermentation was not finished.

    It could be done in 3 days if it wasn't already done. To check though, you'd have to repeat this process from step 1.

    The closet i was talking about stayed at around 73 degrees so i racked the beer to secondary. the OG was 1.072 and the FG that i took when transferring was 1.013. There was no krausen at the top and the beer tasted pretty damn good flat, just a bit yeasty. I racked 3.5 gallons to a carboy and 1 gallon to a jug along with a cup of cherry brandy i made. i put a 2 tblsp of the brandy in a sample i had taken for the fg and it brought out some awesome vanilla notes. i didnt do this for this batch but a guy at the brew store (i had to go due to a bung malfunction) told me to put a camden tablen in with the secondary and that it wouldnt affect the carbonation when i bottled. didnt really sound right to me.

    I'm sure it's been said, but some times opening the ferment container can release built up Co2 and it can take a while for that Co2 to build up again, making it seem like it's stalled out and restarted. Don't worry about this, just relax and have a beer and bottle when you originally planned on it.

    I'm not going to argue semantics. But you need to give it 2-3 days to make a comparison.

    I'm going to leave it in secondary for a while. there was a little sharpness to the flavor the worried me. it's been 3 years since ive tasted green beer though so idk. it was almost a bit sour/tangy/tart.

    IMHO I think you have the right idea. It needs some time to sit up. Either in a secondary or an extended primary, + bottle time. just my $0.02
