Favorite Colorado IPAs?

    I had a summit beer from DBC (of all places) that was good. No onions at all.

    I realize that this has never really been publicly discussed, but Nazareth has been a different beer every year.

    The first year we did use Summit as a later addition in the beer, including as a dry hop. From what I can remember without pulling brew logs, that's the only beer we've ever used Summit as a late addition. We've used it for it's high alpha content a lot over time, and I never saw any onion character from a bittering addition.

    That said, I wasn't totally happy with that hop overall, and after we ran through our contract of it, I moved to Magnum.

    For reference, year two of Nazareth was a different malt bill (i.e., less malt forward) with almost all New Zealand hops, while year three was a more west-coast style beer where we used hop extract in the boil and then dry hopped with Simcoe, Citra, and Amarillo. I'm still debating what direction I want to take this year's version...

    Cheers to the breweries (TRVE, Odd13, Cerebral, S26, Comrade, just to list a few) that are willing to give updates and discuss their beer on these forums. It has really opened a window into their world of brewing that I've never known about but always wondered. I find that (and their beer) to be so refreshing!

    Had this one the other day and was really pleased with it!
    I, too, am becoming very sensitive to the onion flavor- my brother thinks I'm imagining things when I tell him I'm tasting it...

    Do you guys think this phenomenon may kinda be like what they say about people's flavor perception with cilantro?

    Thanks for the response and clarification! Excited to see what this year's Nazareth has in store. If you're taking requests we'd all love a Treehouse or Trillium hop-bomb style IPA in Denver :wink:. Although last year's Nazareth reminded me a lot of one.

    Totally agree. With all the constructive conversation and brewery input, this thread gets my vote for best in the Mountain Forum (sorry Casey thread)

    What is different between 4.0 & 5.0 and what changes do you see in the future as you mention it's more or less final?

    We replaced even more of the Equinox with Citra. Any tweaks from here on out will be minor.

    It's getting a lot better. Now we just need a local brewery that will can and distribute them. I feel like if someone came in with a similar model as Modern Times they would absolutely kill it in this market. (They specialize in progressive IPAs and have a ton of variety and you can always find thier stuff really fresh in their so cal market - City of the Sun and Booming Rollers being their 2 best)

    While I'd love to be able to get cans of all of those beers, I don't mind driving to CC or Comrade or S26 to get growlers. The packaged beer market is very tough here, and going to the source I know I'm always getting fresh beer.

    Maybe other people are not as much of a freshness snob as I am, but I really don't buy hoppy beers older than maybe 6 weeks (and if it's not dated and I can't verify freshness I don't buy at all), there are too many other options. If I were a small brewery making hoppy beers I wouldn't want to package them and enter that tough market

    Having 2 kids under 2 and living in Broomfield doesn't help my cause. Maybe I just need to move next to Comrade, then my problem would be solved :-)

    If you want the dark side, check out the Cantillon threads that pop up each year. Then multiply the animosity times 5 for similar FB conversations.

    I was reading the thread about Stone Enjoy By Unfiltered when someone called it oniony cat piss. I really feel sorry for the guy who actually drank cat piss for a comparison hehe... (I happen to think Stone Enjoy By is a work of art). All of these beers are great products and with the exception of warm bud light, I've never really found a beer that is so bad I couldn't drink it.

    I just picked up some 5.0. I've got a little of 1 thru 4 in the basement. I'm just going to mix them all up in a big jug.
