    I have never used honey malt. Can someone describe what it adds please?

    Roger that . . . would a honey lobbyist explain the benefits over crystal?

    Also seeing a lot of love for flaked oats . . . what are the expectations here?

    I'm speaking only for myself. It fills a gap between crystal sweetness, toasty, and malty. I does contribute a nutty honey aroma (if used in large enough amounts, but can be overdone) and a deeper less sweet flavor but still malty. Comparing honey malt to C20 is like comparing C40 to Carastan 35. They are similar in L, but not in flavor. The kernels tend to be a little smaller in the bags I've purchased. When eating the raw grains, they are crunchier/harder than 2row and have a similar flavor to very slightly sweetened grape nuts cereal. I use them or golden naked oats in situations to bridge gaps in maltier beers and add color, aroma, and maltiness to IPAs without the plain sweetness low L crystal malts contribute.

    +1 for Honey Malt. I'm actually pretty surprised to see so much love for it, I use it in my NEIPA but I didn't know it was such a popular choice. I would also write in for flaked barley.

    I agree with this assessment, except I really do not get a honey aroma or taste.

    I've done a little research myself on what malts and hops some of my favorite new england IPA's use. Some brewers have posted their ingredients, here's what I collected:

    Hill Farmstead:
    Edward - pale and caramel malts with centennial, chinook, columbus, simcoe and warrior hops
    Abner - pale, caramel, and dextrose malts with centennial, chinook, columbus, simcoe, and warrior hops

    Maine Beer Co:
    Another One - American 2 row, red wheat, and carapils malts with cascade, citra, simcoe, and warrior hops
    MO - American 2 row, carapils, C40, and red wheat with falconers flight and simcoe hops.
    Lunch - American 2 row, carapils, C40, munich 10L, and red wheat malt with amarillo, centennial, simcoe, and warrior hops
    Dinner - 2 row, carapils, C40, and dextrose malts with citra, falconers flight, mosaic, and simcoe hops

    Bissell Bros:
    Substance - 2 row, flaked wheat, flaked oats, and flaked barely with falconers flight, centennial, apollo, summit, and chinook hops
    Swish - 2 row, golden promise, and flaked wheat with mosaic, citra, simcoe, and apollo hops

    Generic Two Row, Pale Ale Malt and/or Pilsner are in. The next poll will determine which one(s).

    Flaked Oats are in. With over 50%, there’s no need to take it to a combination poll. The same people who voted for it also clearly voted for a two-row base malt.

    Carapils and/or Other Crystal Malt(s) are potentially in. A combination poll will decide.

    Wheat Malt is potentially in. A combination poll will decide.

    I’m also going to advance Honey Malt to a combination poll. Based on the write-in votes, I believe it probably would have done better if it had been on the ballot. If I’m wrong, it will eliminate itself anyway.

    Would a biscuit malt have been totally inappropriate?
