Any ideas? Beer with raspberries.

    It's a peice of cake to do. Just don't use any hops before pitching Lacto Plantarum. I don't bother killing it off after pre souring by boiling, just pitch my yeast. You can also make a Gose this way.

    Plantarum is so hop intolerant that I personally wouldn't be that worried about infection of clean beers. I already have separate equipment for sours already tho.

    I'm with ya.. no-boils are fun and super easy to do. But, it's always been good assurance for me to just boil the soured wort for 10 min or so to get a few IBUs in there (I'll add a bit of german noble hops). Salt/coriander at flameout for a gose always seems to infuse better too when added to hot wort. Just my favored method though; not trying to talk him into any way in particular.

    One of my favorite beers I've made was a Raspberry and Chipotle Stout.

    The smokiness from the chipotle's tastes really good with the sweet tanginess of the raspberries rounded out by a chocolatey roastiness from the malt.

    It is really delicious.
