US-05 and Peach Dilemma

    65 in a 7bbl fermenter should be fine. You could even keep a little head pressure (7-10psi) for the first few days to keep esters in check a bit.

    I'd do 64 with US-05. Any lower than that it seems to throw some weird flavors, specifically some slight phenolics according to some reports on the internet

    Now this, I've never heard or experienced.

    Hmmm. I've never heard of US-05 or any of the extended Chico clan being POF+.

    Yeah. Sounds to me more like contamination.

    I get peach from low, slight phenolics 68+. But I am hypersenstive to phenolics.
